For this recipe, do we need to cook the beets first? Can beets be eaten raw? I purchased some ready to eat cooked organic beets from Costco, is it ok to use those?

No, the beets do not have to be cooked, the beets used in this recipe are raw as well. The Costco beets you have should be okay as well:)
