I made this using green cabbage and a white onion instead. Replaced the coconut oil with butter and it turned out phenomenal. I didn't even take the extra step of baking it but that likely would have elevated it. This is the first cauliflower mash that I really enjoyed. Thanks for the recipe.

Potatoes aren't unhealthy on their own. Its all the salt and oil added to them. Its the sugar bath processed fries go through for fast food and convenience foods.
I tried this recipe for my dinner with curry chicken and regular steak tomatoes 🍅 and it was wonderful!! I was worried my friends may not enjoy it but my surprise they all had seconds! They commented that the garlic and onions brought out the flavour and thought for a moment they were having potatoes. I used red and regular cabbage 🥬 in mine and it came out beautifully! I cannot thank you enough for this carb alternative meal option!
I have a plant based cook book with a recipe of cauliflower with a mushroom gravy. I was thinking the gravy would be awesome with this recipe. Talk about nutrient dense!!!
This was absolutely delicious!!! I struggle to eat more vegetables in the winter because I don't want cold food, this recipe did the trick. I try to eat low carb so I am not 100% keto. So I added some macadamia nuts to the coliflower while boiling it to make it creamier, I also added rice broccoli and mushrooms to the cabbage to give the mash a little but more bite. I added a TBSP of nutritional yeast and 1 tsp of miso. This is staying on my weekly rotation.
This looks so delicious. I usually make the cauliflower mash with coconut cream and garlic,and never thought of trying other vegetables. I'm low carb and have a vegan night once a week. Can't wait to try it!
I have heard of Cauliflower used this way but found the idea offputting. Having seen this I will now give it a go. Its almost a keto bubble and squeak and would be great as part of a heavy duty breakfast with maybe grilled mushrooms & tomatoes
Mushrooms ... A lovely addition! As for tomato, might I suggest the sun dried variety, since we already have a tomato salad. Lol. For out next bake, how about a bit of a Thai twist with some whole mustered seeds and cumin seed added to the oil. And for the adventurous, Thai tea made with coconut milk.
Looks good and I agree simple cooking is enjoyable and heathy except hydrogenate coconut fat, 'cause that has trans fat in it. I use organic coconut oil, the pure liquid one. (and lots of organic extra virgin olive oil of course) I would also recommend to try sometimes broccoli instead of cauliflower because cauliflower is very high in purine.
Best style I've ever seen. Close to Nigella Lawson style without flirting. I'm a seventy year old life long vegan and definitely gonna do this dish. Please do more.

I just made this and holy cannoli it is sooo good! My husband even loved it! We are not vegan but I do love to try new recipes and incorporate different types of foods. This is definitely a keeper. My husband did put cheese and sour cream on his (tasted like a loaded baked potato) and ate several helpings. An old coworker of mine used to blend cauliflower with spaghetti squash and I used to think it was so weird like “why blend the spaghetti squash and ruin the chance to eat a pasta like food?” WELL. I tried it and it is actually so so good. It gives a bit of sweetness to the mash and of course you add garlic, salt pepper etc and it’s super tasty. Your combo is one I’ve not tried but it also looks so so good! Will be trying this!
A lot of rule books have to be broken when it comes to vegan cooking, even more so with keto vegan. It all boils down to texture and flavours. For me, the conventional culinary boundaries don't exist as long as it works. You raised a great example.

Upon coming home from work, I was thinking what to make, what to make for din-din!!!??! Anxious, wondering how to do Keto with no meat.... 2) this recipe has changed my life and given me hope! Sounds so delicious that I will try this the very next day! 3) The video was well made, I like the style of just getting to the point w/out all the fluff, BUT, it does not detract from the essence of the video and is most encouraging at the same time! I was completely enthralled AND totally dug the end of the video with those scrumptious looking delectable cookies! Ohhh. and the coffee, "icing on the cake" so to speak... 4) I shall now peruse this fabulous video library and see what other amazements await me me.... I'm inspired and feel elated at the same time...FABULOUS...!!!
I thought the basis of keto was fat intake and protein along with veggies, so I need someone to explain how that works as a keto vegan. How do u get the right amount of fat...eating avocados isn't going to be enough

Really delicious. I'm usually the only one in my family who likes cauliflower but this won them over.. I added the outer leaves of the cauliflower and some leek to the onions and garlic. Then I boosted the mash with some vegan cream, nutritional yeast and turmeric powder for colour.

I'm not vegan yet but I could eat this every day! I never knew about keto vegan food! I gain weight with all the high carb rices and beans and other stuff I find on regular vegan diets with my metabolism.. I am so happy to know this!! Wow, going to make this and just subscribed!! I think you would be surprised at what you actually gain weight from. I recently went vegan two months ago and have lost 14 lbs without trying. Cheese, butter, dairy, meat, and other high fat non vegan ingredients add a lot of calories. And I eat pasta twice a week. I feel better than ever.
@@MyLifeInTheDesert Thank you. I ve always done really well on low carb as my metabolism can't handle a lot of carbs. I never eat pasta ever because I don't like any noodles or anything like that. My family thinks I'm weird! Lol. I very rarely eat sweets either. I crave snacks and potatoes. I am getting away from lots of meat...crave more salads and veggies with fish or chicken. Not sure I can be full out vegan. But I'm exploring it! Blessings! Tired of feeling bad and Type ll Diabetic so have to watch it.

I did it tonight, it was WON-DER-FUL. The tiny hint of coconut when you eat it was soooo good! I also added two tablespoons of heavy cream in the mash, and sprinkled some parmesan and gruyère on top of it to give a extra crunchy layer (though it's not vegan). I'm certain I'm going to do it a lot more in the future, thanks a lot!
I have to try this! I bet the coconut oil gives it a nice flavor! It browned up beautifully. I usually sprinkle some good Spanish paprika on top of my casserole to ensure a golden brown color but it looks like you didn't need it.

Just made this mash! Oh my goodness, you all need to try it! So creamy and satisfying, yum. And for those not into cauliflower no worries it does not taste like cauliflower. I'm not vegan yet but I could eat this every day! I never knew about keto vegan food! I gain weight with all the high carb rices and beans and other stuff I find on regular vegan diets with my metabolism.. I am so happy to know this!! Wow, going to make this and just subscribed!! Who knew? Obviously not me!🙆🤔😀
I think you would be surprised at what you actually gain weight from. I recently went vegan two months ago and have lost 14 lbs without trying. Cheese, butter, dairy, meat, and other high fat non vegan ingredients add a lot of calories. And I eat pasta twice a week. I feel better than ever.
@@MyLifeInTheDesert Thank you. I ve always done really well on low carb as my metabolism can't handle a lot of carbs. I never eat pasta ever because I don't like any noodles or anything like that. My family thinks I'm weird! Lol. I very rarely eat sweets either. I crave snacks and potatoes. I am getting away from lots of meat...crave more salads and veggies with fish or chicken. Not sure I can be full out vegan. But I'm exploring it! Blessings! Tired of feeling bad and Type ll Diabetic so have to watch it.

Mashed potatoes are one of my favorites and here in the USA it is so unhealthy with white overcooked potatoes, lots of butter and hot milk then cream cheese and more shredded cheese.

I did it tonight, it was WON-DER-FUL. The tiny hint of coconut when you eat it was soooo good!
I also added two tablespoons of heavy cream in the mash, and sprinkled some parmesan and gruyère on top of it to give a extra crunchy layer (though it's not vegan). I'm certain I'm going to do it a lot more in the future, thanks a lot!

add diced onions to cook with the cauliflower. Onions & cauliflower is a classic & incredibly delicious macrobiotic combination.
I have to try this! I bet the coconut oil gives it a nice flavor! It browned up beautifully. I usually sprinkle some good Spanish paprika on top of my casserole to ensure a golden brown color but it looks like you didn't need it.

I'm new to keto, and as I watched you making this, I kept wincing at the amount of oil you kept using, because years of studying nutrition have told me to cut it down to minimum. I'm working hard at getting more fats in my diet now and this looks great for it.
If you put silken tofo through whilst mashing adds protein and nutritional yeast extra yum 😋

This looks delicious. I will be making this for sure. Update… I’ve made this twice using Napa cabbage and red onions. It came out fantastic. It tasted like garlic mash potatoes.. except better. The cabbage adds a depth of flavor that makes this an amazing dish. One of the best recipes discoveries in recent memory. Thanks.
