INGREDIENTS

Pretty much all veggies work for this dish. But today I used:
1 Aubergine (eggplant)
1 courgette (zucchini)
A few florets of broccoli
1 carrot
1 tin of coconut cream ( or 1 tin of tomatoes)
2 avocados (for the top layer)
Walnuts and pumpkin seeds (optional)
DIRECTIONS
------------------
1. Chop all veggies in similar size cubes. And finely cut (or mash) avocados so it’s spreadable.
2. Saute chopped veggie in a frying pan with oil till they are softened. Season with salt and pepper. Add in the coconut cream (or tinned tomatoes) and cook on medium heat till all ingredients are nice and tender and the sauce is thickened. Check the seasoning.
3. Transfer the veggies in a pie tray, top it with the finely chopped avocado and spread evenly. Drizzle some olive oil. (free to add whatever toppings you like. Cherry tomatoes, vegan cheese or tofu cubes)
4. Bake in a preheated 220C/425F for 10-15 minutes (or till it’s pipping hot). Option to sprinkle your favorite nuts and seeds. And enjoy x

Made this today with mixed veg and jackfruit (net carbs 0.2g per 100g.) Threw in some pine nuts for extra luxury!! Decided to use your flatbread recipe, which have tweaked by adding Nooch &chives and less salt, as a pie topper. It was really good. Think I'll not bother with Jackfruit next time and replace with mushrooms but glad I experimented. Thanks again for helping me on my vegan keto journey. 💚😋💚

I am so used to seasoning. FLAVOR! so I would add some chili peppers garlic onions. Because you used eggplant I would maybe use a little Italian seasonings. Perhaps some rosemary or basil.
A great option for vegan keto is ackee. Its a fatty fruit from jamaica and its delicious with onions and pepper its usually sold in a can 😊. It has a pretty neutral flavor so u can add seasonings and it will taste good

So glad I found your comment & this channel. I've been plant based/vegan since 2012 and just began vegan keto. I'm missing vegan cooking and vegan meals. I seemed to not be able to find actual vegan keto meals until I found this channel. Your comment helped me realize I'm not crazy feeling like I don't have real meals to eat and Heavenly Fan gave me the actual vegan keto meals. Now I can get back to cooking and eating!
the non veg keto os very dangerous, and long term messes with evrything and youre worse off than before, if you live long enough.

Hi Fan, brand new subscriber here and am so pleased I found you! I am trying keto and some fasting for the first time and struggling with finding easy, tasty vegan recipes. This veggie bake is amazing though I had some different veggies (mushrooms, cauliflower, broccoli, spinach, zucchini). Had to try it straight up and am struggling getting through the bowl as it is so rich and filling. So tasty too... can't wait to try more of your amazing looking recipes.

Looks scrumptious! I have never tried baked veg with coconut cream and/or avocado, but will for dinner tonight. The avocado doesnt darken overnight for leftovers? Do you reheat or eat cold?
Yes the avocado will go a bit darker overnight due to oxidation but it still taste good so it doesn't bother me. I either reheat it in the oven or on a frying pan and make it more like a stew.

Hi, i really love your video's. But i am a little 😢. I followd a keto diet. I hear all sort of theories .that you should eat soms carbs ones a time or a vrgan keto lead to bad health. But i am feeling so good when i am in keto. But tyhe problem is i have to follow a fodmap diet. So i cant eat almonds or avocado. I have to tried it and see what it does. Also dadels i may not use.

You can eat 10 almonds and still remain in the low fodmap count. Monash has an app that specifies servings per gram. And avocado -- 1/8 of an avocado is low fodmap. Given this looks like a meal with multiple servings you can just break the avocado up. Or use avocado oil instead -- FODMAPS are not oil-soluble. Also, keto flu lasts a while when you start keto. So you gotta ride that out and really stick to low carb for it to work. Take care.
I made this recipe and calculated my carb as I went along. I only had 1/3 of the dish and it was above 20g carb ... Could someone explain what I'm missing because this meal did not feel keto and is not meeting calorie needs for the amount of carb.

One issue with plant proteins; we don't absorb & utilize nearly as high a percentage as of animal proteins.
It is not apples to apples unfortunately.
Actually same issue with iron from plants vs from animal sources as well.
But I agree plants are super important for the trace nutrients we don't even know about that travel together & the fibers for our gut biome.
I believe we need our veggies!!

I like some of these vegan dishes and used them as a snack but I would never use them as a nutritious snack, tried this kind of eating years ago and paid the price and now 98% Carnivore and have these types of snacks for old time flavor. Do really enjoy the taste, but not as good as a good porter house med rare, and my body recomposition is amazing and energy endless. Cheers
