  • This marmite lotus root is inspired by a famous dish that my family loves to order at Fan Cai Xiang - a vegetarian restaurant in Kuala Lumpur, Malaysia. My version is vegan and allium-free. :) Hope you like it.

    Ingredients
    1½ lbs lotus root
    Batter
    90 g rice flour
    90 g all-purpose flour
    1 cup plant milk + 1-2 tablespoons water
    Sauce (see notes)
    ½ tablespoon marmite
    ½ cup hot water
    ½ tablespoon light soy sauce
    ½ tablespoon vegan oyster sauce
    1 tablespoon maple syrup
    1 tablespoon sugar
    Garnish
    toasted sesame seeds
    Notes
    If you haven't tried marmite before, please start with the lower amount. The sauce is thick and please add more water and adjust the taste for a more saucy dish.

    I tried and this is great!! I adjusted the sugar to be more as I am afraid my family may not like marmite bcos marmite by itself taste abit strange in our opinion. Hence more sugar added and it taste great like the Korean sweet sauce!! Thanks woonheng!

      Oh and as I do not have rice flour, I replaced the rice flour with corn flour and it sticks to the lotus too!

    Locus roots I love them but I don’t deep fry them they great in salad. But I may have to try your style now.

      You can check how you can air fry them, you can also pan fry.

    If no rice flour, can replace with other corn flour? I only have mpflour and corn flour:) or any starches ?

    What is marmite made up of?

      I haven't heard of this either, and had to check it in Wikipedia, the answer to your question is complicated.
      I wonder if there's something I can use to substitute it, bc i can't find it where I live.

      Marmite is a yeast extract, it has a very strong and distinct flavour. Very salty and a lot of umami. Using miso would not be the same, but I'm sure that would be delicious as well. :) Preferably a darker and more pungent kind of miso in that case I would say.

      It's basically the stuff left over from the beer making process. It's a very popular spread for sandwiches in New Zealand. You could substitute with Vegemite, the Australian version, but I think that tastes really weird and quite different from marmite.
