They met and married and moved back to Charlotte together. Amazing, how one of your subbies is at the same college that my Dad attended, and you and I are neighbors in SC. 💕 Loved all of these recipes.

Love your channel. This one is all winners I'd like to try. Like others probably, I have my own tweaks I would do with each though. I have wanted to try making Pad Thai and other Asian dishes but the ingredients are often a problem for me too and some recipes have so many I can't find. I finally do have fish sauce but do not have rice vinegar, I'll have to find some. I would like to try this recipe but wish it had regular directions as I do not have an Insta Pot. I should be able to adapt it and figure it out though, it is just making the sauce and then noodles on the stove. I also like that the recipe does not call for tofu. Pad thai often has tofu. I think I'd also add chopped peanuts along with green onion on top. The sausage and peppers look great but I'd probably serve it over rice. I might do the spicy kind of sausage though. And I love the baked potato idea and it is meatless and all veg and dairy (cheese and butter). I probably wouldn't have it with rice as good as it sounds as a bit of a carb overload for me in one meal with the potato but both sound wonderful individually. Thanks Mandy and Roshae!

I make the sausage and peppers with a large can of Cento San Marzano whole peeled tomatoes. It has a bit of a sauce in the can too. Then we serve the sausage and peppers over rice on our plates. The sausage and peppers with the rice seem to make a great flavor match. I was drooling watching you make the sausage and peppers! It’s one of my favorites.

Rice and baked potatoes in one meal is a bit carby for me but looked delicious! I have everything on hand to try that subbie supper!
