Just made this and it turned out awesome! Thank you so much. To save time, I used three 4oz jars (12oz total) of pure pureed carrot BABY FOOD (I use it for non-healthy carrot cake too). It's cheap, and as long as the only ingredient is pure carrots (+ maybe some water), it works just the same as fresh grated carrots. Hope that helps some folks

Christmassy, but I love the taste with coffee or tea. I do not know if you need to half the spices but if you care to give it a try. 16 g cinnamon, mild ceylon 10 g ground cloves 6 g ground ginger 6 g ground cardamom zest from an orange (possibly the juice too and less liquid)
I have mobility issues with my wrist and grating is really difficult and painful, so just chopped up my carrots and tossed them into my food processor and ground them up fine, and just used a little less milk. I made this whole food plant based using flax instead of eggs, oat milk, and omitted the butter and used ground walnuts for the healthy omegas and fat instead. I also skipped the protein powder and used chickpea flour since that was what I had... and it was still yummy! Thanks!

I made this last night at 10:30 PM because I forgot to prep it earlier for today's breakfast at work. I'm glad I did because this is by far my favorite of all the ones I've tried so far (blueberry & apple). I'll need to cook it a little longer but man was this amazing!
I've made quite a lot of different variations of these baked oatmeal and this is by far my favourite one. It is so good. It's a proper high-level tasting cake. The carrot maintains so much moisture through the cake and really helps with the texture that can be the draw-back to the other variations. I'm from the UK and used some slightly different ingredients that I'd recommend that makes this even more healthy. I used skinny food co maple syrup - can change this for any low cal or normal maple syrup if you don't care. The butter is also completely pointless from my POV - you're just adding 100 calories for no taste difference. You're better off just using whole eggs instead of egg whites since the egg yolks will do far more for the cakes moisture than the butter and are just a bit better for you in general. Possibly the most major change is the brown sugar. That amount of brown sugar is 190 calories. The Purevia range of sweeteners are so good and they've recently come out with a brown sugar variant as well as icing sugar. I highly recommend them. So eliminating the maple syrup, butter and sugar from the recipe removes 400 calories and I promise there is no compromise on taste. As for the icing / frosting I recommend doing this instead. It's a little more effort but definitely worth it. This was arguably a little too much but adjust the ratios if you want: Family tub of Philadelphia - 280g. I used light because it was on offer. Would normally use lightest. 100g of yoghurt - your choice. Needs to be a nice one with thick consistency. It will influence the flavour a lot. I used lindhals kvarg white chocolate. I think I'd use a vanilla protein pudding that lidl sells next time but I went to tescos. 2 tsp vanilla extract 2 tbsp maple syrup - skinny food co or real or another low cal brand 100g of Purevia powdered sugar-like sweetener 1/4 tsp salt Whip it up with either stand mixer or hand mixer to get a bit of air into it. Or just mix it with a whisk but it wont look as nice.
after the strawberry cream cheese oat bars were such a success this week, i’m gonna go ahead and make this, and i’m thinking of adding some shredded coconut and raisins 👌
Not sure if you think this sounds good or not but my wife makes me a coconut rum cake for my birthday every year, and after watching your videos of the baked oatmeal’s I think I’m going to try to make a version of that. I’d assume a similar amount of coconut as there are carrot shreds in this recipe would be a good start and use coconut milk instead of regular just for the flavor? Maybe even run instead of maple syrup as well ? Is this too far out of reach or do you think it’s a good idea?
Made this today with a few minor alterations and it was great! Very similar to pumpkin pie oats I make occasionally. I used quick oats, subbed syrup with sugar free syrup, milk with cashew milk, and nutmeg with apple pie spice. Cut it into 4 large servings at 545kcal each. I also used 1/4cup less milk, and 20g extra carrot because I'm lazy and didn't want to squeeze the liquid out of the carrots. Next time I will add ~1/2tsp salt, I think that will elevate the flavor a bit especially since I'm using some low-cal ingredient options.
Mine turned out like porridge in the middle only the top had a crust 😆 I’m trying to figure out where I’ve gone wrong as I left it in for an extra 15 minutes 🤔 I used ready oats which is like 40% oat flour and the rest whole oats 🤷🏼♂️ you would think flour would thicken though? I’m lost…
I honestly wouldn't see why not. If you wanted to prep a bunch for the month then freezing would be a great option and then defrost slow in the microwave (or oven, preferably) to warm them up.
@TheMealPrepManual do you bale with egg white powder? The macros seem good but not sure how best to utilise it. I know it's hard to dissolve as it can be clumpy
You can add chia seeds and raisins for fiber and some protein but the powder would help more so with flavor and protein. Up to your personal tastes though, I tried a vegan version of carrot cake oatmeal and it had no flavor or sugar so never again.
