Using cold, leftover rice is supposed to help keep the grains separated, though this presupposes that you cook the rice well to begin with (I.e. not too much water). You can do properly cooked, fresh rice that has been cooled to at least room temp in a pinch if you really want fried rice and don't have leftover rice lolz. (Maybe spread it on a sheet pan to help it cool faster, which should also help keep the grains separated so they don't cool clumped.) I *think* cooking with a generous amount of oil and high heat help, but oil becomes a matter of taste and high heat you just want to make sure you're using cookware that can take high heat, like a wok. Keeping the rice in motion while cooking ought to help too, so long as you're not stabbing any rice clumps and breaking the rice grains into smaller pieces. But I'm sure you can Google or watch other videos for more reliable advice!

Just watched this and all I can say is WOW! Even in the local restaurants that make fried rice in front of you while you wait, the chefs don't separate the egg yolks from the whites. I will be doing that in the future! Also I love that this recipe is so versatile, just add whatever veggies and meat I have available in the refrigerator and add my own spice blends. This recipe is definitely going into the weekly rotation.

Really great recipe, now I finally understood the purpose of adding the yolks onto the rice before cooking to achieve that golden color. I would love to recommend this to anyone in my family to try this recipe for size and taste the big difference.

@@87911 That also works too if in case you would cheat a bit using margarine or a bit of saffron for the yellow color of the rice.
