I made this soup yesterday! I found the jujube at my local H-mart. It was amazing. Perfect enough for 3 people. It was gone last night. This morning for breakfast I made it with fresh broccoli instead of watercress. I added garlic to and made the soup as directed. It's 10:44 here in PA and it's gone already.
This was "delicious" and nutritious, I used dates & figs cut small, and for the broth, I used Hondashi ( much needed) and 1/2 lb, cut thin shitake mushrooms..... will definately always be making this new favorite, and throw in some prawn wontons for extra deliciousness 🥰❤

I have blended watercress with a little bit of water (blend until watery)drain it and add orange juice (no pulp)and drink at room temperature. Been vegan for 4.75 years. This is the only non vegan cooking channel I watch. More vegan recipes and full meals please (: . I like seeing old vegan recipes from other cultures before people started eating so much meat and dairy. I'm mexican on my moms side and most of the food/dishes that my grandma and mom would eat before they came to America were completely vegan. Such as mexican rice, Bean tacos, guacamole, many salsas, potato enchiladas, bean enchiladas, nopale salad, lentil soup, mexican style potatoes w/ potato and onion, chayotes, Calabacitas, tropical fruits such as Cherimoyas, bananas, mangos, guavas, avocados and Papayas. Many of the desserts were vegan too like penole, chocolate covered bananas, and buttery pastries that used margarine. Before western insurance dairy at all and there was almost no red meat in mexico. Things have changed since then and a lot more since my mom was a child in the 60s and 70s there.

Hmm…I made this soup without the optional jujubes and it didn’t taste out with much taste at all. Next time I may try it in a light pork broth instead to balance out the bland taste of the veggies.
I've tried jujubes and haven't liked them but that's ok, I like other 300 veggies and fruits. Carrots could be an alternative like you said. Good luck finding seafood mushrooms and watercress at the American grocery stores.... what a joke!
Basically salted water soup...I think vegatable stock or chicken stock is more fortifying for the body, there needs to be more nutrients for this boiled water soup...

I know it’s hard to make veggie soup tasty. Maybe adding mushroom seasoning would help.
