Ms Gemma you saved me once again last night as you have many times. I needed sweetened condensed milk but had none and the stores were closed because it was late. I knew exactly where to go to make my own. It turned out perfect just like all of your other recipes ive made. Sour cream, cream cheese, and the pie crust is always on point. It's best to leave to let them proof in the fridge as the cold slows down the process, thus preventing it from getting overproofed. You can leave them at room temperature for when you let it rise further before baking.

Awesome 😋 what would you recommend foe people who can't have regular flour? can you use Spelt flour or any other alternative please?
You can use other flours for the pancake, but not for yeast based recipes like the cinnamon rolls in this video. You can however make a yeast free cinnamon roll using alternative flours. Flours do not absorb liquids the same way, so you may need to adjust the amount, add more or less than the amount in the recipe, whichever is applicable. Gradually add the liquids when combining wet and dry ingredients and stop when the dough or the batter reaches the same consistency as shown in the video. Hope this helps.
Hi gemma. What do you mean by ‘make ahead’ when it comes to the cinnamon rolls?
I didn’t really understand. I was under the impression that i could freeze it and bring it back to life when needed but i dont think thata what you meant

If I do the banana upside down one don’t the caramel with walnuts sets up hard, how do you bring the caramel to a drip consistan so it can drip all over when you turn it right side up ?
You can quickly heat up the bottom of the pan, right before removing it from the pan. The caramel will melt and drip when you turn it upside down.
Can I use a quick rise yeast if I want to speed up the process?
You can use any kind of yeast, but you will need to knead your dough to speed up the process of developing the gluten and flavor in it. Time does it for you if you opt for the no knead method. Hope this helps.
If you wanted to use sugar instead of honey for the cinnamon rolls, how much sugar would you use?

How far in advance can I do each recipe
For the cinnamon rolls, you can keep the dough in the fridge for up to two to three days, the pancakes dry ingredients can be stored for 2 weeks, while the casserole can be made a day in advance or up to three days after it's baked.
We call that bread pudding or is it that no raises means its not bread pudding
