I'm glad you like it! Make your dough and filling as usual and cut into slices. Then, store them in the refrigerator for up to 24 hours. The filling will keep in the refrigerator for a bit longer. You would need to find a fruit that is similar in moisture content and fiber. The only one I can think of that might come close is fresh peaches, simmered, with some of the excess moisture reduced before substituting.
You can try other fruits, like apple or pear. You will need to cook them and make into something similar like applesauce when using it to replace the mashed bananas. Hope this helps.

Yes, that will work as well. If you don’t have a sharp serrated-edge knife, you can use unflavored dental floss to cut your rolls. Simply wrap the log with the floss and pull tight. Using dull knives will cause the rolls to flatten and not keep up their roll shape.

I was thinking of pumpkin puree. I've made a loaf of cinnamon and raisin bread with pumpkin puree and heavy cream in the dough - absolutely delicious!

I don't recommend it, as oil will not yield the same result. The sugar melts and caramelizes in water as it cooks, oil will not behave the same way.
