It's from Brittany, a small town called Douarnenez in Finistère to be exact. Brittany is the Celtic part of France where the butter is salted 😋 It's eaten lukewarm.

Before this video, I felt like it was just too difficult. The way you explained and demonstrated forming the butter block was SUPER HELPFUL! I was frozen with fear! Now, I feel I can do it!!! And since I LOVE puff pastry, how cool to be able to do it myself!!!!

I make this pastry as a pie crust and filled it with shaved candied sweet potatoes. Let me tell you it was so amazingly delicious my family demands it every Thanksgiving.

I absolutely love your videos. Everything is explained, which makes it so easy, and now, with the measurements as you go, it's even better.
This looks so delicious! I got a bit confused when Gemma was talking about which way the seams go. Did she mean that each time you fold and roll, you rotate 45 degrees? Or did she mean that the seams would be on the outside and the folds would be towards you? I hope that made sense. Thank you! ❤
No, you would rotate the dough 90 degrees.

Hi. I used a Wolf High Performance Gourmet Stand Mixer in this video. It's really good. Hope this helps.
What kind of butter do you use for these pastries? Salted or unsalted? European style or American?
I use salted butter in most of my recipes. I'm partial to Irish butter, but others should still be good. Hope this helps.
