GREAT PRESENTATION and one of the best spinach casserole recipes I have seen. Love the little individual casserole dishes. Great tip on sniping spinach before broiling. Best of all no drawn out dragging on yammering about nothing. Quick and to the point with your explanation. You are very pretty as well. Certainly doesn't hurt your lovely presentation.
This is in part how I make my spinach side but I add mushrooms. Never thought of additional cheese and putting it in the oven. In a hurry to pig out I guess hahaha. Thanks and love your videos

Nutmeg goes so well w/ spinach. It's a very elusive ingredient -- if you taste it, then you've put in too much; w/out it, the dish is missing some crucial rounded flavor. I just learnt that Chinese put it in classic braised pork dishes too, like some Italians put it judiciously in their Bolognese sauce. I love it. I'm so glad to find a fan of it in you!

Just did this RECEIPE in my New Gotham Big Pot 😎! I used Goulda? Italian 🧀 with dry dry parmesan & Mozzarella cheese on top yikes! Looks 👍 hope it tastes yum 😋?

Hi Pai..could you make dipping sauces? There's a thai steamboat place that serves this tangy sweet sour sauce with coriander and sesame seeds but i couldn't make it because i have no idea what the ingredient is..

I wonder if you can get a win by grating the spinach beforehand... Say put it in a blender, which is fast, then strain the juices, so you don't have to cook it down that long and for the grand finale - if you strain the juices into a cup or bowl you have a batch of natural spinach green for your pasta dough or muffin or whatever... What say you?
Fried salty onions is probably your best bet for subbing bacon. Gives you the salt, umami, and crunchy texture that would otherwise be lost if bacon was removed.

It's fixed now, hot-thai-kitchen.com/cheesy-spinach-bake, and it turns out that somehow the recipe didn't get transferred over when we moved the site. Really weird as the copy I found was on the "staging site" which should be identical. Am going to go look to see if there are any more of these, and again thanks for the help! Adam & Pai
You can find Western food in Thailand. So many steak places on the side of roads in Bangkok and big towns. Hamburgers with buns, french fries, barbecue on bamboo sticks are everywhere. Cake, ice cream and bakery items are available everywhere. None of those are Thai food.

Is there a culinary advantage to adding the milk and flour together instead of making a more traditional roux and then adding milk?
Advantage is that is is much easier, quicker, and uses less butter :)
Bit late to the party, but yeah no point in making a roux, it's more like garlic/onion cream rather than a Béchamel sauce.
