How to Make Apple Butter: Noreen's Kitchen

  • Greetings! I spend the day making apple butter. I started it on Friday evening and threw all of the apple and pears into my Nesco 18 quart roaster oven. I do it this way because it is easy, it is large and I get at least 36 half pints when I do it this way.
    My recipe is 75% apples and 25% pears, peeled and sliced. Add a bit of water to prevent scorching and allow the fruit to cook down for a couple hours. When you check it and the fruit is starting to break down, add your sugar and spices.
    I added 5 pounds of sugar to this batch as well as 1 cup of apple pie spice. If you purchase your spices in large containers like at Sam's or Costco, you will find them to be very affordable.
    Let the apple, sugar and spice mixture cook at least 8 hours until the fruit becomes very soft. I always blend my apple butter with an immersion blender. It makes quick work of the job and you can do it in the roaster without transferring hot fruit to a blender. After the fruit is blended and smooth, allow to cook for another 2 to 3 hours. Then it is ready to can and process.
    I canned mine in half pint jars and got 36 jars. I usually only make this about every two years. I plan on putting several jars on my Etsy shop so I was happy to get such a high yield.
    I processed the jars in a water bath canner for 15 minutes and then allowed them to cool.
    Now we are all set in the apple butter department for a couple years!

    Noreen Honey...Thank you for sharing an old art that our mothers taught us. My mom canned her heart out, sometimes 100 jars when fruit was in season. She made Apple butter when she made applesauce. Daddy always like cinnamon red hot candies put in the Apple butter. We had good ole biscuits slathered with homemade butter and Apple butter. The best!     Last night I was looking for inspiration where and how to use excess apples and pumpkin. I saw your pumpkin butter recipe and decided to use the pumpkin and apple together with a splash of lemon juice and some cinnamon to try and make my own pumpkin/apple butter. It came out so lovely that I think I will be making this on a regular basis. I thought that seeing that pumpkin and apple both like cinnamon perhaps they would marry well together. For one who was not brought up on pumpkin and apple butters I am now hooked and will certainly make this again and again. Thanks for the inspiration.

    Last year I canned pectin from my peels when I made Apple sauce, Apple butter and pie filling. It works! I will make my own pectin every year from now on thanks to Bev! She is a wonderful woman and has taught me so much! Btw your Apple butter looks delicious.

    I have a big ole pear tree loaded down and this is just the recipe I've been looking for to make some homemade pear butter, and thank you so much for posting this, and don't you worry about your girl thinking you're letting canning take over your life, there will come a day soon she is going to wanna know all there is to know about it. No matter how busy we get when we are trying to grow up, we always or most of the time come back and realize that stuff...them roots they came from, are REAL IMPORTANT, plus your here for those of us who do not have our parents or grandparents or an aunt or uncle close enough to go to anymore!!!     So glad this is working out for you! I know that I only make this about every two years because we love it and I try to make big batches all at one time. Last year I think I put up close to 4 dozen jars all at one time. My youngest said I was not to make it this year because we have a glut. I will give it a holiday gifts this year! Along with peach and pumpkin butter and maybe even some pear butter because I have a lot of canned pears in my pantry that need to be rotated out.

    This looks good. Had a friend who gave me summer Apple Butter as a gift and it was Fall in a jar. It was so good I wanted to cry. So now I am in the mood to make this. Surprisingly enough, I actually have this roaster. So awesome. Thanks for posting so I could learn how to do this.

    I made this, and my apples were real sweet so I used half the sugar and it turned out perfect. I made 2 roasters full and canned over 50 jars. everyone loved it. tks

    I could just smell that apple butter. It looked so dark and rich. My mouth was watering. You have inspired me. I made applesauce out of all of my apples from my trees this year. I will have to buy more now.

    i love the puppy shots! I have an 18 qt. Nesco Roaster and bought a 6qt. roaster of another brand for use with smaller tasks. However, I soon found that the smaller roaster does heat from the bottom, so beware, I guess they are not all made the same. Thanks for showing another use for the roaster. God Bless..

    Yes! She showed how to make honey from red clover! No bees necessary. I love her to death! She inspired me to do so many things. Sourdough starter, French milled soap, yogurt, so many things. She is an amazing person with so much to give. I need to try her sauerkraut/Kimchi next!

    Great video my sons and I put up 12 quarts of concord jelly a month ago and had a great time.And I just made 5 gallons of apple wine they helped with that too.And I have a lot of apples left over. I think we are going to use this recipe and whip up some apple butter.My father and I did this when I was a boy and now I am teaching my boys.But I didn't have a recipe for apple butter now thanks to you I do. Just thought I would let you know you are helping to carry on a family tradition thank you!!

    I need a recipe that doesn't need expensive tools like roasters and special blenders. I have a 1940s kitchen and budget. I'm happy the other folks watching made theirs.

      You can make apple butter in a pot on the stove. You just have to baby sit it. Cannot leave it overnight. You can also use a crock pot/slow cooker. All you need is a potato masher to break it down. Takes more time but gives a similar result. Honestly I am sure you could have figured that out without leaving a snarky comment. I don't apologize for the equipment I have. I made due for many years without a lot of things. Now I am blessed to have better equipment. You don't really need a recipe to make apple butter you really just need time and apples. Have a great day.

    Thank you for this. I've made cinnamon apples in the past, but never apple butter. Since my hubby loves it so much, I will be trying this recipe. I will be making it on a smaller scale though and using my slow cooker. I always keep those spices in my cupboard, so I have most of the ingredients. Can't wait to try it!

    Meaning not to add any additional water at that point. You will only have to let it cook longer. I added water at the beginning as not to burn the apples during the beginning part of the process. You could leave out the water, but you run the risk of burning your fruit. If you have never made this and have never done any canning, please refer to the Ball Blue Book of canning before undertaking any food processing.

    Your Apple butter looks like the kind I ate as a kid. You can't buy Apple butter in the store that is seasoned properly. I'm so excited to try this. I have my grandma's Nesco it works, it weighs a ton, has a material cord, smaller pans that can go inside, racks, etc. I love it! Thanks for sharing this Noreen you are fabulous!

    Yumyumyumyumyum! How gorgeous. I still have a jar of apple rings I made a couple years ago. They are fun to make, delicious, and make a great garnish on a Holiday plate. Re: pectin, quinces are full of it! If you ever work with those, definitely boil down the skins n cores for their pectin content. Thanks for this great vid!

    Hi thanks for your comment. I don't have written instructions. I have been doing this for 20 years when I learned how to do it by trial and error. I think it is great that you are starting to embark on a prepared lifestyle. If you simply follow along with the video you should be fine. The reason there is no written instruction is because apple butter is made based on the amount of fruit you use. It is just more of a formula/ratio thing. Just give it a try until it is right for you.

    I had some once the cook put in a few bags of cinnamon 'red hots' candies, it was so nice. this looks so good. I have 9 Nesco roaster ovens from the old 4 qt to the 18 qt. Nothing like NESCO!! I love them. I find them on craigslist so cheap and even used they will last for many years.

    We've always used roasters to make apple butter. After the apples are cooked I don't use the lid any longer so the water evaporates faster.

    Thank you for sharing. This is very similar to my grandmothers recipe. She recommended using cinnamon and sugar in hers and it was delicious.

    I'm 75 years old. I can remember my mother making applebutter when I was much, much, younger. She cooked it outside, in a large copper pot, over a fire. I can remember her adding a very small bottle of "Cinnamon Oil" to it, along with the ground cinnamon. Even to this day, I still add a couple of drops to store bought.

    I am making this apple butter today, just picked up the apples can not wait. but I also had a hard time getting the apple pie spice, I ordered some from spice barn, and while waiting for it to come I found it at menards, I would have never looked for it there.

    - I put my apple cores in about 2 cups of water - boiled - and added 1 cup of the liquid to the apples - --- this year (2017) I was lucky enough to get fresh apples from a Tennessee orchard - and are they HUGE and sweet --- didn't have to add any sugar for the apple sauce - but for the apple butter with the spices I only had to add 1 1/2 cups of sugar . . total delish -- I have found that Ms Noreen's recipe is the best and easiest by far to follow

    Did I misunderstand you? I thought in the beginning you said add 2 cups of water and towards the end you said that you didn't add any water at all.

      yeah I am also confused, because at the beginning i heard that 2 cups of water were added then it was said no water was added....

      I did not add any additional water. That was miscommunicated. The water is going to cook out anyway but in the beginning you don't want the mixture to burn. So add the water in the beginning, but don't add any more water once it is beginning to thicken or you are going to have to allow it to cook back out.

    I have used cider before. I just didn't have any on hand this time. If I have it on hand, I use it. I don't notice a difference one way or the other with the cider or without.

    I have one of those roasters, but when I tried cooking chili in it one year for a large crowd it burned to the sides of the roaster. Did you have this problem making the apple butter? I'm worried to leave it overnight and wake up to charcoal apples.

    I did not count the apples or the pears. I used 20 pounds of apples and 5 pounds of pears. A bushel of apples is approximately 50 pounds.

    But can I cook the apples on the stove? That's a great idea for Christmas gifts this year. Money is not there. I've been sick and in the hospital. Disconnecting notices left and right.       +gail jones You can do this in a crock pot, but I don't really recommend doing it on top of the stove because it has a tendency to burn on the bottom and that will make all of it have an acrid taste. You don't have to have a roaster, you can do this in a crock pot or a slow cooker. Thank you for the kind words, they lift me up on a day that has been hard on the internet.     They usually always have these at Wal-mart in my area, but in some places this may be considered a "seasonal" item. Look where they have the crock pots and you may find them there. I know that they run around 30-40 dollars. Hope that helps.

    Lemon juice is not necessary because you want this to turn brown. It is going to anyway because of all the dark spices.

    Just love apple butter but have never made it, I've got the roaster, it's about 20 years old now and I paid about $120.00 back then, but I do love it, I did use it to make ketchup this year, now maybe I should use it for apple butter. Love your videos.

    My poor roaster got all discolored from doing this. I will have to just keep this one for doing apple butter and get another one for Turkey. Great recipe though. We used golden delicious and Roman Beauty apples mixed together and used brown sugar instead of white and only about a cup and 1/2. We used 2 T cinnamon and one tablespoon each of ground cloves, allspice and 1/2 T of ground nutmeg. Our first batch we used more nutmeg and it was bitter so we cut that to half. We precooked the apples in 3 batches in our big stainless pot and then used our squeezo to turn into applesauce. Then cooked in the roaster with the spices till done. Will make great Christmas presents for everyone.

    Hey I use pairs in mine as well & dried cranberries as well as fresh ground ginger but no sweetener. The cranberries thou sweet made it tarter but the ginger added with the pear made it just delicious! You're the only other person I know who uses pears as well! Thanks You're videos are great!

    I love making apple butter. I completely agree that it's a fantastic neighbor gift at Christmas. I thought I might share my tale. I buy applesauce each year during our local store's caselot sale. I keep it on hand for our food storage, but we typically eat my homemade applesauce first. So each fall when I'm doing my applesauce I open a bunch of cans of the store brand applesauce and use it to make apple butter in my big roaster. Then can and buy more applesauce for emergencies. :-)

    I love and trust your channel. My question is would brown sugar not be good in this. Would it crystallize or someting. We love Bown sugar with apples and I just wondered

    it is my mothers favorite. my daughter does not like apple butter at all!!! i like it but will not can it . she wont eat it and i am diabetic. i may buy one just for me. i like pickled okra, she does too. love to see that vid. and thank you for the edwardian farm. love it!!!

    Hi, I am new to this canning process. Why do you need to have the lids in water? Why can't you use a regular lid as opposed to one that is a rim and plate? Why didn't you put a knife in it to take the air out? I always see people do that? Your recipe looks awesome!

    I saw good video on making pectin by boiling crab apples for a couple of hours, and testing the consistency of it with a teaspoon and spreading it out on a plate. Apparently, crab apples are loaded with pectin. Thought I would share! Thanks!

    dont feel bad , ive become addicted to canning lol .. i can almost everything now !! No more wasted soups or broths .. I can it all now lol ! thanks for the video !

    I did, I tried boiling them down for their pectin, however that experiment was not as successful as I had hoped. No worries. I'll try again next time.

    I use a mix of sweet apples--we make it in a 35 gallon copper kettle and only use 5 pounds of brown sugar---we start with 4 cider cooked down then the apples putting the sugar in at the last 30 min....we dont use dry spices either that makes it bitter..

    I made this and it is good. The only thing I will change is instead of 2 tbs of cloves I will add one. But other than that Thank you for sharing.

    There was a restaurant in or near Kankakee IL called Yesteryear in a Frank Lloyd Wright bldg. Instead of serving rolls before the guest's meal, the table got garlic toast with a thin spread of apple butter. It was fabulous!

      Garlic bread with apple butter does not sound like a great thing to me.

    Yummy. Every year I make apple butter, apple pie filling, apple sauce, and apple juice. However with the drought they apples didnt do so good and they are charging 22.00 a bushel of apples. I bought a bushel and they were very tart. My kids ate some and I made a batch of apple pie filling. I made a apple pie last night and i am not happy how it turned out. Hopping next year is better.
