There is actually a way to turn it off though, can’t quite remember how to get into that menu but I remember it was the same place you can activate the Lane assist. It’s in one of the speedo screen menus

The Adaptive cruise control automatic braking thing is probably because you have a different ride height than standard. They need to be calibrated.
The ECU tuner can absolutely push up that limiter in park/neutral. Not sure who's software you are running, but it's quite simple for them to sort.
Correct I have a tvs ecu and tcu tune I don’t have a rev limiter

Harry turn you esc off if you want no limiter my golf has a soft limiter and turn esc off it revs right round
If you turn traction control off it should rev up higher in park or neutral. My 7R does the same

Press and hold traction control button till it turns it fully off and the limiter will go mine does same
