    I LOVE making jackfruit chicken... it's one of my favorite recipes and I keep fine tuning it and I will tell you this is the BEST ChickUn YET!! These McDonalds chicken McNugget copies are by far the most realistic vegan chicken Ive made and probably you will ever try. They perfectly mimic a chicken nugget in every way from the taste, texture, bite chew and... well everything!
    If you don't believe me you gotta give it a try and see for yourself!

    I love how you used the gluten as a functional ingredient rather than as the main. You've got me thinking that there are tons of other ways that this could be applicable. Also, bravo on the texture there. Incredible.

      Thank you so much!!! I would love to see your take on something like this. The texture comes out wild and I really feel like there is some other possibilities here. I've made similar recipes in the past with jackfruit but I feel like I can start to nail the texture down for a firmer piece of meat using this technique with a little work. Have you messed with methyl cellulose yet? Its pretty nuts

      one of the previous recipes with tofu and tvp and methylcellulose mixed together was great for me, so i’ll probably try that as a substrate for jackfruit actually!

      So I have my old jackfruit chicken recipe which doesn't use gluten as a binder! I've been working on trying to get a firmer jackfruit meat and gluten for sure helps with that, but it still comes out phenomenal without gluten. I used to just used a mix of methycellulose and protein powder.. which works great.

    I had a can of jackfruit a while ago, and I was pleasantly surprised with how meaty the texture was, it’s kind of like a chicken-y fish type thing.
    Stuff like soy sauce, dried mushroom, onion and garlic powder really help give it that savory flavor. Really good stuff!
    Those nuggets look pretty darn convincing, I gotta try these out sometime.

    Great vid. I've been meaning to give Jackfruit a go, think I'll start here.
    By the way, not that my advice matters much, but don't justify your reasons for cooking the way you cook or using the ingredients you choose to use. We live in a very stupid time, where hordes of people think it their duty and obligation to criticize and scold everyone else for doing things which they dislike. Emerson was on to something when he quipped that we "Can not spend our days in explanation".
    If you wanna use methyl cellulose, use methyl cellulose. If you wanna use MSG, use MSG. The point is, you owe no one an explanation for the choices you make. We are all adults, here.

      @@SauceStache Shocking! I think it was good when you pointed out it was in ice cream and other common foods they eat. Lol.
      It's like when people say, "Vegans have to take supplements" when meat-eaters eat supplements all the time. Either in the form of iodized salt, fortified milk or cereals, or the animals themselves are fed tons of supplements. And supplements were made for deficient meat-eaters to begin with. Lol

    Just, WOW!! Honestly I have found jack fruit to be daunting as an ingredient. I saw one... bigger than two bowling balls, with this pine cone like hide - terrifying!!     Pretty successful creation on this yesterday w/ few modifications (air fryer). I was wary of putting the jackfruit into the food processor and risk losing the fibers, but it mainly broke up the larger bits. I am going to research some different batters as I wasn't really *excited* by this one. Acceptable, and good w/ sauce, but it doesn't stand alone w/o direct frying. Jackfruit does remain a slightly disturbing experience after years of not eating chicken. It is a strange conflicting combo of emotions.

    I'll try this, although I never seem to have much luck with jackfruit - Can't seem to get rid of that jackfruit flavour. But these do look awesome!
    Incidentally, have you tried VFC chick'n yet? Their burgers are amazing!

    Methyl cellulose can give that slippery-slime texture if using too much: When this happened to me, it reminded me exactly of konjac, when, again, using too much - which is really easy to do, unfortunately. It’s a great ingredient, but can easily ruin a recipe…Anyway!
    Your address of the criticisms of methyl cellulose, reminded me of konjac , and I’m wondering if it could sub for methylcellulos in this recipe - I’ve used it a lot for a binder in place of various starches and other binders I didn’t or couldn’t use - especially, since the nuggets don’t call for a ton of methyl cellulose.

    Jackfruit is one of the only vegan ‘substitutes’ i’ve cooked with that is actually good, got a can of it at the asian grocery out of curiosity a while ago and made burgers with it

    As Someone who cant eat Gluten would there be anything i could use as a substitute or would Gluten free four and Corn Flour be enough?

      I imagine it would be fine, but you would be missing out on the protein it adds, and also, the lack of protein might change the cooked texture a bit. Maybe try chickpea flour or pea flour, or even better, a legume protein isolate. If you decide to use chickpea flour, you can find it at an Indian market. It might be labeled as gram flour. If you have an Indian market nearby, that would be your cheapest, easiest to find option. Let me know if that works out for you!

    I get why gluten is an optimal ingredient here. However, there are so many of us that can’t use it. Do you have a gluten-free substitution for the rest of us?

      YES!! So my old jackfruit chicken recipe that I used for "Nashville hot jackfruit" and "jackfruit chicken and waffles" both come out great and dont use gluten as a binder. I use more methylcelluse and add in protein powder. That comes out really good!

      @@thekell I developed a gluten allergy two years ago aged 37. Believe me, it’s an incredibly inconvenient dietary requirement, on top of being vegan. It’s not a case of just ‘not wanting to use it’. I and many others have a very painful and in the case of celiac, very dangerous autoimmune response upon its consumption. So you’re the one who’s ‘not true’ mate. Be careful where you direct your unreasonable attitude, you may wake up one day out of the blue with an intolerance yourself.

      @@thekell the reason it seems like "gluten intolerance" has exploded recently is because many people with IBS are finding that gluten exacerbates their symptoms. Many people have IBS and have found relief in avoiding gluten so even if they don't have Celiac or a true allergy, they still want to avoid it

    Yo dude. When you take it out the can, rinse it, yes, but then boil it for 10 mins in clean water, then drain. It gets rid of that briney aftertaste. Anything I make using jackfruit tastes better after boiling in clean water

    My main concern regarding methylcellulose isn't what it can be used for... it's never being able to buy it... or that it costs $40 for 50g/2oz. meaning my batch of chicken is far more expensive... Pretty much any time it is in the ingredients, I know I won't be making the recipe.

      oh wow, where are you seeing that price?
      There are 2 versions I commonly buy on amazing
      1 is $1.87 an ounce
      and the other that I used to buy more often (that works better) is about $6 an ounce.
      I have never seen it for $20 an ounce that sounds very very overpriced.

      Oh I still do!! I LOVE Mud water!! I have coffee almost every morning. Some days I drink mud in the morning... but a lot of days I will have a glass of mud water around 4-5pm

      Canned jackfruit almost always comes with the seeds removed, the seeds are also pretty big so they should be removed if they are still there

    Meat eater here who also enjoys meatless meat. I am willing to try these but to purchase gluten baker's yeast [ which I dislike ] as well as a blender which I so mot have is an investment. I can see buying the Jackfruit if I can find but the above mentioned items, ehh.
    Could you please do a simpler version of this recipe for those of " willing to try" people ? Thanks :)

      The problem with simpler isn’t always an equal result.
      This is one of those.
      Gluten, is needed for the structure. Nutritional yeast (not bakers yeast) is needed for flavor, and the blender or food processor is required to develop the texture.
      This is just one of those recipes.
      It would be a shame if you were willing to try and didn’t like it simply because you made an inferior product

    I have to try these. I have been trying to like seitan chick'n recipes, but there is always something about the taste that throws me off. Plus my wife is an omnivore, so she is a tough sell.

Maybe they'll order a large bag of it, make a sign so customers learn what they can do with it and from then on, you'll all be able to get it offline. The world is how we make it.

    The only problem with using jackfruit as a chicken substitute is the low protein content. It's perfectly healthy otherwise, but I worry that someone may mistake it as a viable substitute for meat or other protein rich foods and allow their child to eat it as a large part of their diet. Especially since it can be made into such a passable chicken nugget.

      Thanks for the Input. In this recipe there is added protein. A common chicken nugget has about 2g protein per nugget, this has about 1.5g of protein.
      Protein is a weird talking point when it comes to vegetarian or vegan foods as even though I’ve heard of protein deficiency it’s not very common. There are many studies on this, none of them have shown it being an issue.
