    I just adore you Mary... You taught me how to make bone broth and so much more. I have been doing a lot of pressure canning of meats and soups... Now I think I may try some jam and I don't want to use sugar so this is great for me.

    I DID it!!! I followed this recipe to a "T" and it's the most delicious jam I've ever tasted. The only difference is I used 75% strawberries and 25% raspberries and blackberries. It's addictively delicious. I've been intimidated by the process of canning, but now I feel so empowered. Thank you so much Mary!!!

    Hi Mary, I wish I would've seen your video, before I made those 2 jams 2 weeks ago. I should've known better. I've been wanting do make jam for a long time. Theres a setting in bread machine. I saw 3 videos and said yeah.... piece of cake. I made strawberry 2 boxes and raspberry 1 small box. The recipes were extremely simple, what you did, the basics, wash the fruit and sterilise the jars in hot boiling water. Only 3 ingredients, fruit, sugar and lemon juice. I mashed the raspberries and put sugar, left in fridge few hours, same with strawberry, But here's the mistakes, I should have put the strawberries through the food processor. Also I didnt make it on the stove so I didnt do the freezer plate test. The raspberries came out awesome, but the strawberries were extremely runny. Taste was awesome in both though. My best friends grandsome, loved it, He's finished it all, My best friend used hers on ice cream. Oh well now I have seen your video I can do better. You know me, I try everything and I never give up till its perfect.

      Mary's Nest Not sure what happened.☹️ The liquid part settled to the bottom looks like. And a couple didn’t seal. It taste great but just isn’t quite right. 🤷🏻‍♀️ I used 5 cups mashed strawberries. 3 tbls low sugar pectin from the plastic tub. 4 tbls lemon juice. 3 cups sugar. Stirred in lemon juice and pectin. Brought to rolling boil. Added all sugar. Boiled one minute. 🤷🏻‍♀️ Water bathed 10 minutes. All my other jams and jellies have turned out so I’m not sure what I did wrong.

      C Blake - Oh dear!! I’m not sure either. I am so sorry to hear this. At least I’m happy to hear that it tastes somewhat flavorful. Hmmm...did you clean the rims of the jars really well with a paper towel and some vinegar before you put the canning lids on? Do you think your canning lids were in good condition? Did you make sure that the rings were fingertip tight? It sounds like during the water bath canning process liquid seeped in. Do you think so? We Will diagnosis this together. Love, Mary❤️🤗❤️

    I made this jam today and it was fabulous, delicious and mouth-watering. I had the Ball's low sugar pectin. Didn't understand the Ball's instructions on how much pectin to use. So, my granddaughter and I had to stop everything and run to the store and get sure jel pectin in the pink box. To follow Mary's instructions. Had to go to two stores. But found it at Hen House market so I stocked up.. I only got three jars of jam out of the 5 cups of strawberries . I used 16oz jars that was my X-husband mother's old Ball jars. The rims had rust but the jars were beautiful. I will be making more in these jars.. Now that I know what size jars work for my family. Peach jam is next on my list then orange marmalade..     Hi Mary, I'm watching this from a not so sunny bonnie Scotland, but what a joy. I couldn't sleep last night and when I came across your channel I ended up binge watching seven or eight videos in a row! I subscribed, obviously, and was so taken with the amount of detailed information and clear cut demonstration combined with such a lovely demeanour. You're a delight to watch. I love cooking and especially baking and am once again on a Keto diet so this particular video is much appreciated. When I come off it, I can't wait to have a go at this low sugar version jam. I do have one question though. When you put the jam jars back into the water once they're filled with the jam, are they totally submerged as they were before? Thank you in anticipation and thank you for such superb videos. I feel like I have a new friend and look forward to many more videos. I'm totally hooked.     Great video! Really enjoy your channel, thanks so much for these. Just got my first canner, am new to canning. I want to use weck jars with this recipe. Can I use the same recipe only instead of 6 pint jars use 4 of the slightly larger weck cans, observing the required headspace? Is this the case for any hot water canning recipe? ie. Using different sized jars? Thanks!

    A good substitute for pectin is cornstarch in this case. I don't know if it a professional substitute but it worked for me 😅

    Hi Mary! I was looking for a low sugar strawberry jam recipe and saw yours. I have made the sure jell before but it was fun watching you make yours. I've been making jellies and jams for years. My mother taught me and each time I can or make jelly I am immediately transported back to the time spent with her learning the tricks. I actually grew up sealing jellies and jams with parafin. It was what we had and I have to say I never had more than two or three jars to go bad. However I have since switched to the hot water bath so I was glad to watch your explanation. I do have a question though . When I make my jams I tend to have floating fruit in the jar after it cools. In other words the fruit rises to the top and the jelly is on the bottom. Did I miss anything in the video that talked about this or do you have a suggestion? Thank you!

    Great video! I grate up a green apple with the skin on and put it in my strawberry jam and that gives me the pectin I need to make it thicker.

      Mary's Nest I’m an new to term traditional foods but I guess I have been around it in one form or another most of my life. I grew up with a big garden and helping my mom and grandma can everything we grew. Fermented foods are something I have never really tackled except for my grandma sauerkraut recipe that she got from her grandmother. I am really enjoying your videos you are a wonderful teacher.

    I had made some strawberry preserve this past fall 2021 and some jars has like some liquid half down and a clump of the berries half on top? Can I redo it to can it again or can I recook it then fridge it to use. A lot of the other pints thickened in the jars not jiggly or moving around.

    Hi Mary. I love your channel and thorough instructions. I just made your homemade acv last and it is lovely. But I have a very important question about this recipe. I prefer using wide mouth Jars and I have a ton of them. I am using 8oz wide mouth Jars for this recipe. Is this really a problem? I hope not because I probably won't hear back from you in time. I am going to try it out and I really don't see why it would be, but let me know if you get a chance. I really appreciate it and all that you do.

    Mary, you are amazing. I always throw those tops away, never thought about making strawberry vinegar with them. I like the idea of mashing the strawberries first. I have not done that and there have been times when it didn't gel like it should. I now see why. I may not have had quite enough strawberry fruit. Now that butter thing is new to me. I like the thought of less foam. Does margarine do the same or do you really mean butter? That jam looks amazing. I've got to try this low sugar version . I had not though about the water bath canner on my cooktop. I'd better check it. I think it does have a concave bottom. This is too funny. I didn't know you had this particular video and I bought strawberries to make jam. When I saw this video, I had to watch it! Thank you for all this great information. I'm going to have to dig out my supplies and see what's what before I get started. I love the look of this electric canner.

      Mary's Nest Hey Mary, I made the jam and oh my goodness. It is good! I will share in a video and give you your props. I’m also going to try the vinegar from the strawberry tops. You’ll have to give me some ideas as to what else I can do with it. Can I make a strawberry vinegarette dressing? And by the way, I made a second batch of jam but pulsed the strawberries a little in the food processor. I got tired of all that mashing and pulsing in small batches chopped them nicely. Then I mashed a little more with a potato masher. I also showed my hubby the gift your hubby got you. Just dropping a few hints. Hahaha! This is a nice series. I will make sure to let my community know about it!

      This and That with Denise Jordan - Hi Denise, you are such a sweetheart! Yes… That water bath canner is a dream. I really love it. I love the homemade vinegar made from strawberry tops. It takes about 30 days for it to turn into vinegar but it’s so worth it. I like to use it for making salad dressing, it’s also great for any type of marinade for chicken. You can also reduce it like you would a balsamic and use it as a drizzle. It’s scrumptious!! Love, Mary❤️😘❤️

    Hello Mary! I just made strawberry blueberry mixed jam. I’m so worried that I might have tightened the lids too much. Is there a way of knowing if I made this mistake? I did see tiny bubbles coming to the top from each jar when I set them back in the pot. Is that a god sign? Thanks so much!

    Thanks Mary for such clear explanation. When you heat the jars, water remains in it before putting the jam. Is that not going to spoil the contents? Wondering if the jars should be sterilized in an oven ?

      I can at least answer your first question. When you remove the jar from the water bath canner, all water is emptied out of it. In other words, there is no water left in the jar to come in contact with the jam at all.

    Hi Mary! I followed this recipe. I’m confused. On your website it says to leave the jars in the water for 5 minutes after processing time has ended but in the video you take the jars out immediately. Is this safe if we take the jars out after our 10 minute processing time?

    Hi Mary! I want to say that your video is one of the best I've found about canning strawberry Jam, SUPER detailed.
    I have a couple of questions though: 1) if Im using smaller jars, like 4oz, or 8oz do I still need to leave just 1/4 inch of space on the top when filling them?? 2) as this is a low sugar Jam, would normal pectin work too? or should I use only pectin for low sugar jams?? 3) Is there any chance that cornstarch could be use to thicken the jam instead of pectin?

Please share them with anyone else who is looking for a step-by-step water bath canning tutorial. I love to teach! As to your questions, 1) yes, no matter what size jar you use, you want to leave 1/4 inch head space when water bath canning jam. 2) As to pectin, yes, pectin made specifically for low sugar jams is best - in order to get the "gel" that you will normally expect with jam. As to cornstarch - yes, you can use that in place of pectin - however, the final consistency will be slightly different but you may not really notice it unless you were doing a side-by-side comparison. HOWEVER...WARNING...Cornstarch burns VERY easily so you must be diligent when it comes to stirring jam. You can't stop stirring it - or it may burn. However, all of that said...did you know that you can make jam without pectin? It is easier with some fruits than others but it is possible. It requires bringing the jam up to a certain temperature. It is time consuming but can create a nice final product that is packaged pectin free. However (lots of howevers! LOL!!) sometimes it will be slightly more "loose" than jams made with packaged pectin but it works like a dream when making naturally high pectin jams using apples and citrus.       Low sugar doesnt have the same shelf life and the full sugar so instead of 4 yrs you will want to use within a year 1/2.. Once it has been opened you'll want to eat it within a few weeks.

    Mary Darling have you heard of quince? It is a POWERHOUSE of nutrients and especially vitamin C and zinc. I remember it from my childhood when my mom made it, and i just found it at my local grocery store, I made the syrup just using sliced quince and honey, after a whole day I had a delicious syrup I can use in my tea

My mother was very fond of it and she always focused on good nutrition - and "eeking" out the most nutrition of every food she grew and cooked. We enjoyed lots of quince preserves! As a child Gooseberries were my favorite, because when they ripened they were very sweet and had a unique flavor, they are very anti-inflammatory, even more than turmeric, I wish I could find some seeds and grow them all

    Hi Mary, you will get tired of my questions about serve, but could this be done with swerve? I would be all over this recipe if not on keto, but with my health continuously improving I need to keep kind of counting my carbs and restricting my sugars. I made some keto blueberry pies ( tart size ) for my husband last week with a little swerve, Philadelphia cream cheese and for the dough I used fathead dough... most people could not tell the difference, it was a success. I froze them per portion and once in a while we can enjoy desert. He was/is a diabetic but now in the last few months it is mostly controlled by the way he eats. By the end of the summer he should be off all of his diabetes medication. We are doing good. I watch all of your videos and I try to adapt them to my diet, hence all my endless questions about stevia and swerve. Everything you do looks so good and all your broths have been life savers to me. Thank you so much, may the Lord keep blessing you and yours.

Just make sure you use the pectin in the pink box (or other brand) that’s made for low sugar/no sugar jams. You are SO sweet as to the things you say to me. You are so kind and generous.     What if after we remove the ring, put in our pantry shelf, we decide to gift a jar because we have so many. Can we at that point add the ring? Only because we know they are going to open it like maybe that day🤷‍♀️ and then they just continue to use the lid and ring as it came?

    I tried this tonight and everything seems to have gone fine except my jam seems to have separated. The fruit is all on top and the jelly is on the bottom. I'm not sure what happened other than I wasn't paying attention and I used 12oz jars instead of 8 oz jars? I only got 3 1/2 jars. I heard 2 pings before my husband came in to admire my work and started picking them up and turning them upside down to see the bottom! He's not allowed in my kitchen anymore! Any ideas on the separation Mary?

      Hi Lisa, that’s a great question. I have heard people doing that however I have never tried it so I am not sure if it will work. And I’m not sure if it’s recommended by the national center for home food preservation so you may want to be careful.     How long is the shelf life? And how long can these be kept in the refrigerator with the canning lids, etc.?

      Hi Shellen, Thanks so much for visiting. That's a great question. The Ball Company says that the "shelf life" (un-refrigerated) of their lids is 18 months.     And those glass-top stoves break/blow up. Used to work for a home warranty plan. Luckily, no one was in the kitchen. It blew chunks of glass. The family had no idea what happened.....they said. I was boiling pasta in a dutch oven on an electric coil stove. I was standing there heard a pop and a hiss and when I picked up my pot, it had a tiny hole in it and the coil looked funny and wouldn't work after that. Never knew. Too much trust in appliances being your best bud.

    Why do you have to use regular Mouth Jars instead of wide mouth? Could you use frozen strawberries in place of the fresh ones?

      Hi Tammy, the reason that I’m using regular mouth jars is because that is what was specified in the canning recipe. As to frozen strawberries, or other frozen fruit, yes you can definitely use those to make jam. Love, Mary❤️🤗❤️

    Can we swap out the strawberries for blackberries and raspberries (using the same amounts) for the strawberry recipe? Also - can the fruit be frozen for the jam instead of fresh? I froze a lot of these berries (as well as strawberries). I didn't add anything to the fruit before I froze them, so they're just fruit. I've made this recipe and am already planning to do another batch this weekend. Would like to also make some from the frozen fruit I have on hand. THANKS. Don't you all just think we're just a big, wonderful family? I do! (P.S. You're never too old to start...I just started watching and doing these videos for my family...and I'll be 69 in January! Told the Good Lord I'd like about 20 years or more just so I can catch up on everything I'd like to try).
