      @@doubleu7658 the standard ratio for fruit and sugar is 1:1 here it is less, so you can't store it as long

      I was actually just reading the recipes on a box of Sure-Jell and the fruit to sugar ratio is almost double - 5c. fruit to 7c. of sugar in most cases. blueberry and strawberry were the only ones that had a 1:1 ratio, which is in itself too much if you ask me! I want to eat jam, not syrup!

    Amy I found your channel while searching for a sour dough starter tutorial video. Now I am hooked; all of your videos are awesome. I love your through and precise instructional manner. You make everything so simple to follow. I will definitely try the strawberry jam while our strawberries are still in season. Oh yes, I started my sour dough today. I like that your method doesn’t waste a lot flour. I am using organic rye and it is a little costly, but I heard that it works really good. I’ll let you know how it goes.

    Have you tried thickening your jams by cooking with apple cores? Apple seeds have pectin and naturally thicken your jams and jellies.

      Ok, I see from the website recipe that it makes ~5 half pint jars.

    • @littlespoonfarm
      @littlespoonfarm  4 года назад

      It's just shy of 5 half pints. The last jar didn't quite come to the 1/4" headspace so I put that one in the fridge instead of canning it!

      This is my first time making jam. I made the strawberry jam from Amy's recipe yesterday. It turned out fantastic. So fantastic, that I made blueberry jam today. I did reduce the sugar to 2 cups for the blueberry jam and I added in 2 shakes of ceylon cinnamon and black pepper to boost the blueberry flavor. It turned out spectacular also. Thanks for the recipe!
