Much appreciated. I'm making castella and and all recipes that I find use square tin. Gonna try the "round".

Hi. Thank you for your question. You can use any type of non stick/grease proof baking paper. There is the brown paper available also in super markets which is the same.

Does oil work for greasing pans or needs to be solid fat?

Do you have to grease the cake pan completely under the parchment and then you aren’t supposed to spray/grease the parchment at all? Totally backwards from what I was always taught.

Just grease the pan. Then use the parchment to cover the base and sides. The greased pan will help the paper adhere to the pan :)

Hi Boun, did you mean the round cake pans in the video? I do not own letter shaped pans, I will often carve the shapes I need into the cake. Pans I source from a range of online cake decorator suppliers such as the Cake Decorating Company, Cake Stuff or Vanilla Valley. I will be doing a video soon of my favourtite cake pan brands and other equipment I swear by, so watch out for that!

How big does the initial piece of greaseproof paper need to be though?

Hi, so you just cut a square / sheet just to the size of one side of your tin to the other. Hope that makes sense?
