      Where from?
      I use half & half (lard and veg oil) for deep frying but would prefer proper beef dripping .

    When I worked in a local chippy I used to go in on a morning and salt the fish on both sides. It prevented the fish curling up at the ends while cooking.

    I’m American, but went to England on holiday. The fish and chips were the one thing that I remembered the most. Amazing.

    Cheryl, your recipe videos are so great! Here I am, past my 60th birthday, and I had never thought to add malt vinegar to fish batter! (I blame it on not being raised in Scotland! 😁)

    I recently found out how good corn flour is for coating. Not corn meal, but corn flour. I know now that's what they used on the fish at a favorite restaurant we went to when I was a child.

    Great recipe and looks awesome. Try putting a tablespoon or two of sugar into the water that you soak your chips in. I've found that it gives them a nice crispy outside. And I think it sweats out the starch without adding any sweetness.

    My mom used to make beer battered fish with fish they caught in Florida. It would either be Bass or Perch, it was sooooo good.

    When i was training to be a chef we were always told that batter is better when it is fresh i have found batter that has been left for too long just looses that nice crispy coating due to the beer going flat so i would disagree that leaving it longer is better , also you can use self raising flour instead of mixing plain flour with baking powder thats basically all self raising powder is .... I would also blanch my chips at 130°c first whilst i was getting the rest of the dinner ready then finish them later at 180°c just before they are due to be served

      Just saw a recipe for crispy oven sweet potato fries from Spain. It involves soaking the potatoes for 40 minutes in water after chopping them then dry namana towel then baking them for 40 minutes to an hour. It was crazy how long it took. Easier to buy the frozen ones and fiddle around with technique until they get crispy

      CHERYL!!! These are the best fish and chips I’ve ever eaten and I MADE THEM MYSELF AT HOME IN THE STATES this is INSANE. Anyone wanting traditional Scottish fish and chips this is the one to try. I’m going to need a personal trainer 😂

    Hi there. I love all your recipes. I have served up right many of them. But just to share a few thoughts on potatoes. For chips, red potatoes are waxy and therefore the end result is crispy & crunchy. Brown potatoes are starchy. To get a chip that has a light crunch on the outside and is heavenly soft on the inside using a brown potato. You pointed out the need to rinse some of that starch out, well done, that is the secret.
    *I agree with the commenter who said your chips beat Ramsay's. In the states King Edward potatoes are called Kennebec.

      I am on the East Coast, where it is relatively easy to get. Not as good as in England, although I did find one place that has a huge fillet. But they don't do the Friday night fries like they do in the Midwest

    I've been looking everywhere for a decent batter recipe and this seems perfect. Strangely you're the first person I've seen putting malt vinegar into the batter mix.
    Quick question - if you don't have/want beer for the batter can you just use carbonated water? Or maybe something else?

    we always put a wee bit a bic carb in the batter also i like to par boil my chips i find the middelo more fluffy

    GOOD DAY CHERLE JUST A UPDATE ON YOUR FISH AND CHIPS I HAVE IMPROVED ON THE CHIPS MADE THEM MORE CRIPEY MADE THE BATTER FOR THE FISH MUCH BETTER BATTER DOES NOT FALL OF FISH BUT STAYES INTACT SO MY CISH AND CHIPS WILL BE BETTER THAN ANY ENGLISH FISH AND CHIPS THEY CANT COOK HAVE A NICE DAY

    hiya. going to try yr fish recipe as looks lovely but as for the chip you should do triple cooked chips their amazing.or part cooked yr chips, then the fish then finish the chips so the fish doesnt dry out. love yr channel.x

    If you like your chips soggy/soft like they serve in fish and chip shops then put them in a paper bag to steam for a while. It's the paper they serve them in that makes them soggy.

    Hi. Dying to try this out as, living in Spain, miss my fish n chips! Liked that you used beef dripping as that was what my mum always used to fry with. Just one question, if you wouldn't mind - what fryer are you using? It looks a reasonable size as I have found them some are far too big! Thanks
