Renee, you nailed it!! They look so very similar to Arizmendi’s fabulous cornmeal scones with dried cherries. And the “crunch” was perfect. They will freeze beautifully, too. My mom used to make a filled cookie, with mincemeat from a jar, The cookie top and bottom was a delicious sugar cookie. The dough was not too thick no to thin. It would be great to have that recipe! She only made them at Christmas time, a very special treat.
My grandmother used to make the cookies you are talking about. I haven’t thought of them in years!! What a blast from the past. I am definitely going to make these!! Thank you so much for reminding me about them.
In the UK, these wouldn’t be scones… they look more like Rock Cakes, but we wouldn’t put cornmeal in the mixture. Absolutely agree with grating very cold butter though, that works well. We call that sort of coarse brown sugar Demerara sugar, by the way.

Hi, Renee! I’m sitting here this evening, Wednesday, October 23, 2024, catching my breath as the scooped dough for these so-called cherry cornmeal “scones”. (yes, I realize they are not a traditional scone; but, it’s just how Arizmendi’s has always referred to them, so I do too!) The most difficult part for me was the butter. You have to realize that I am 75 years old and I have been dealing with arthritis pretty much all over my body at this point! To top that off, I currently have three trigger fingers on my hands and carpal tunnel in the thumb on my right hand. And yes, of course, I’m right handed!🤦🏻♀️ I used to love to bake, but because of all of these aging symptoms I’m dealing with, it’s sort of become a thing of the past. Other than the butter, however, these were a breeze to make, and I can’t wait to bite into one! My next endeavor is going to be to make the butter extract that you demonstrated in one of your videos. I even bought the vodka for it, and neither my husband, nor I drink! I guess I’m gonna have to find a lot of recipes that call for vodka! That one will definitely be a challenge for my hands, especially the squeezing of the liquid out of the butter. But, I’ll make sure to do that on a night. My husband is not playing cards and he can do the squeezing for me! After I get that extract made, I’m going to make the cookies that you made with the butter extract. They look so good! I cannot thank you enough, Renee, for putting these videos together. I look at these types of videos for cooking and baking all the time. And while everything looks wonderful and I’m sure I’m gonna do this and I’m sure I’m gonna do that, in most cases I don’t do anything. But you have really inspired me. You just have a way about you. It’s fun, you don’t do anything outrageous with any unusual types of ingredients where I have to go hunting them before I can actually do any preparation, and you are very clear with your instructions. As I said in my first message to you, your kitchen looks so lovely, warm, and inviting. I can just picture us sitting in that kitchen, having a “cuppa” and chatting about foods we love! I will be sure to let you know how the “scones” taste! 🙋🏻♀️🌸

Watching from the USA. A friend used to make a sugar cookie type dough and filled it with a raisin filling. Literally a pocket filled with raisins. The cookies were about 4-5" in diameter. So good! Everyone raved over these cookies with their chewy raisin filling. I'd love it if you could make these. Please and thank you!
WOW!!!!!!!!!! You are AMAZING!!!!!!!!!! I would love a Vlasic Pickle Recipe and a warm (NOT HOT) hot sauce recipe. I know the hot sauce might be a huge issue, but I think hot sauce has gone crazy lately-something like the heat of a banana pepper. Crying is not what I want at my dinner table. Hugs from Texas

It always amazes me that cooks refuse to use a larger bowl than they need. It always looks like the bowl they use is the only one they own.
