Must you submerge the tomatoes with the fluid/oil when putting them in the jar or is air okay?
I wonder if u put the jars in water bath and keep it longer? They have salt and oil I think like this u can keep it longer

My oven goes only to 250 degrees. Not sure how 275 is "slow cooking". IMO it should be either shorter in the oven or on lower temp.
What your problem most likely is that she’s talking 275 Fahrenheit(which is 135 celcius = slow cooking) and your oven is in Celsius. Bake them on 135 C and you won’t miss. Tomatoes are very sugary, you don’t want to burn them, It’s easy
