    Oh man this is perfect! Last year I was taking quart size baggies to my neighbors every other week saying please eat these because I had too many. This is going to be a game changer this year thank you so much! I have learned so much from this channel

    I have an outdoor hanging dehydrator wind and sun in the desert southwest. It seems to take longer but works. Love your channel ❤❤❤❤

    I just finished using a jar of dehydrated 7 year old tomatoes that were vaccum sealed. And they were FANTASTIC . they kinda got pushed to the back and went unnoticed when I made my last batch of 🍅 powder. Although I have to tell you it's great to know if properly sealed and properly dehydrated that I could not tell a difference between one I did last year and when I did seven years ago
    I use these in so many things.

      That is awesome! The year recommendation is for best results as tomatoes generally just don't last as long as other dehydrated foods, but many times, folks can stretch that time a lot.

    I planted Principe Borghese tomatoes last year because they're supposed to hold their flavor better than most varieties when dehydrated. I found that to be true and am planting them again this year.

    Last summer was my first garden! I had sooooooooo many cherry and grape tomatoes and this is exactly what I did with the extras. Boy, did we have extras!
    Same plan this year…after
    Giving away a bunch of starts I still have 10 cherry tomato starts to plant!

    One of my favs is cherry tomatoes. With that said beginner's should know the drying time guidelines are loose, very, very loose. I bought 2-- 3 lb. bags of cherry tomatoes, all colors. They were fat. I knew I had some major drying time ahead of me. I washed and sliced in half. Skin down. I started the batch at 6 a.m. on 165°. Then lowered the temp. at 8 a.m. to 125°. I checked them throughout the day and they were soft. At midnight they were soft. I dropped the temp to 110° and let them go all night. In the morning, the small yellow ones were dry, the others not. I upped the temp back up to 125° and they still had a few hours to go! So that's what almost 24 hours. I go by touch mostly. It's better to be a little overdried then underdried. I learned from this channel to refrigerate them!

    Darcy, I just want to say how much I appreciate your videos and how much I've learned from watching them. I purchased a Magic Mill last March, to replace a round, one temp dehydrator. I finally got the nerve to open the box over this weekend and I'm finally using it. I'm happy it was in good working condition (not damaged) because it's already like over 6 months since I received it. I've so far, dehydrated mushrooms, jalapenos, frozen mango 'bites' and lemon slices. Right now I have grape tomatoes 'cooking' and I'm so excited to know you can make 'sun dried' tomatoes (my favorite). Thank you for all your marvelous videos, I feel like I can conquer this!       Ha. That's funny. I can relate. I was a bit anxious too before unboxing my Excalibur, nine tray. Tell me about your lemon drying. I have a dwarf, improved Meyer lemon tree in my front yard and this will be the first yield that I can dehydrate! So excited. You probably clean well and slice thin? What do you do with the lemons? Can you eat the peel?

      I've done some with salt, garlic and basil. And I've mixed in other dried herbs as well. Like rosemary, etc. Love changing it up for different flavors. Great gifts too!

    I had so many cherry tomatoes last year. I dried them, powdered them and gave away so many. Of course I did eat a bunch too. :) I hope I have the same problem this year.

    I did this in fall at the time I was sick with diverticulitis no seeds. But in March I had part of my colon removed and I will get to eat tomatoes with seeds in them looking forward to putting my dehydrated cherry tomatoes dry and crunchy in my salad.

    I have a total chef dehydrator that doesn’t have a temperature control on it. And because I used my food mill, I have more of a pulpy mix of seeds, skins and some purée mixed together.

      Just keep an eye and rotate it as you need so that no one tray burns being too close to the heat source.

    there is a Sheet of material that overlays your dehydrator that is just as slick as a whistle. Almost nothing sticks so the removal of product is fast and should it get stained is very quick to just soak for a bit and wash......i use it extensively and have 6 dryers running in the summer

    Thanks for the info! We have lots of cherry tomatoes coming from the garden. I’ll have to try this. Have you tried it without using the plastic trays? I’m not a huge fan of plastic.

      no because they will stick to the stainless steel. You can try something alternative to parchment/baking paper.

      Yes it will but thaw them first. They may not hold the same shape since thawing breaks down the cells some, but it will work.

    If you find that your tomatoes are not longer hard/crunchy after a few days sitting in your jar what do you do? Put them back in the dehydrator? I have had dried zucchini soften up after sitting in the jar on my self. They weren't wet or anything, just soft and not crunchy anymore. Can you also try regular size tomatoes, do you slice them? Any advice would be helpful. Thank you.

      Yes, you can. If they were still warm going in, if you didn't condition, if the jar was too large for what was there, etc., those are all reasons why things can soften over time. Just throw them back in!
      And yes, larger tomatoes I slice.

    Quick question - I dried some chili red peppers and then later covered them with avocado oil, actually intending to make a hot rub for sore muscles, but then I tried a little of the oil in some beans, and loved it. So, I've been cooking with a tsp of it occasionally in beans. Now the question, should I keep that in the fridge? I haven't been, and now am worried about having used it recently. Thoughts or advice? Thanks.

      @Betty Newman , I realize that you didn't ask me this question, but I happened upon it when I watched this video. I would refrigerate your particular chili oil. Even if it semi-solidifies, it is easy to scoop out a bit at a time. Of course, when you first make the chili oil, I would let it sit out for at least a week or two just to let the flavor gel . . . so to speak.

      Simmer them, yes.

      Take dried tomatoes ' Simmer in water vinegar mixture let them dry to leather touch then cover with extra virgin olive oil and garlic and oregano to taste' let sit for 2 or 3 wks then enjoy .

    You said you can keep them in the fridge for 2 days after adding oil.. Does that mean they need to be in the oil for 2 days before using or they are only good in the fridge for 2 days with the oil? Thanks for your video!

      I meant you can store up to 4 days in the fridge (not just 2). But you'll want to simmer them in oil to rehydrate them to be soft - they may still be hard. You can use them right away - or you can store them for that long.

      According to the safety standards from the National Center for Home Food Preservation - you've got about 4-5 days in the fridge.

      Not by the standards which I follow, no. It's not something we can replicate at home.

      No - desiccant packs aren't meant to finish off a dehydrating job. They are to prevent further issues with moisture in storage. You should properly dry and condition before you put anything away for storage.

      No - you don't use moisture absorbers to finish the job - they are insurance against future moisture.

      I love drying organic beets. After cooked, they slice so easily. I cut into small cubes. I save the "beet water" and use it as stock for chicken and dried veggies over sushi rice. I throw small handfuls of my jarred dried vegetables -- celery, peppers, cherry tomatoes, carrots, powdered kale etc. -- into the chicken with dry sherry, butter and avacado oil. It tastes like a restaurant worthy dish! And so easy.

    They're only good for 2 or 3 days in the fridge or it takes 2 to 3 days before they're ready to eat after adding the oil?

      They are good for up to 4 days in oil in the fridge. You'll still need to simmer them in oil on the stovetop to get the full affect.

    I have all my dehydated tomatoes in jars with olive oil and they seem just fine. I have several jars, I can't store them all in the fridge. Do you really think this is a serious problem? My tomatoes are very dehydrated, so much so they are still hard when I eat them from the jar..

    OMG only planted 6 plants something got in my garden and I ended up with 5 and there are so many I can’t keep up with them a lot have split open and are unusable, I’m gonna have so many cherry tomato volunteer plants next year it’s not funny… I’ll be pulling them out because who knows what got cross pollinated with what… I also planted cherry large fruiting ones can’t remember how many plants of those… but so so many LOL, I have a low temp round dehydrator and my Excalibur is packed away for right now

      Cherry tomatoes in the store are outrageously expensive. Like $3.69 for a small container. I buy when they are 2 for $5. These days everything is stupid expensive. You are blessed to have a garden.

    Uh, Oh. I've heard that so many people had placed peeled garlic cloves in 1/2 pint jar, covered it with raw honey, then covered the jar to sit. Each day, I shake this to cover the garlic even though I put in enough honey to cover - it keeps rotating the garlic when they float to the top. Now it has been 6 months, and I've been eating a garlic every few days. They are very good but I'm wondering if I have a chance for botulism. I just read that honey was an acid which I had to read over several times to believe. I tested my honey and the test strips showed between 4 and 5 PH. Surprised me. But does that mean this is a good thing to do? I've done the same with Mullein in honey then after several months strained the flowers out to use the honey as cough syrup. Am I playing with fire/botulism?

      Honey is not the same thing as oil :) OIl is the issue - honey is not.

      🤣 One year I was blaming the birds for getting my cherry tomatoes then I saw the dog picking the ripe tomatoes off the vines. Fast forward 15 years and another dog watched me pick green beans that I gave him as a snack. A few hours later half the bean plants had been pulled out of the ground and all the beans were gone.

    I did mine in the oven, but once I stored them in the fridge the oil kind of hardened and changed colour …. Is it the wrong type of olive oil?

    I know somebody who roasts garlic a lot of it and then puts it in the jar with all the oil a big jar and she keeps it in her fridge and cooks with it everyday and adds more oil when she needs it so that it's basically an anaerobic environment. I'm not sure how safe that is??

      It's not recommended by the safest food handling. It's recommended for no more than 4 days, and if she's not emptying and cleaning, she's just extending that life in the oil. It's not something I would do.

    What have I done wrong. I dried my tomatoes. I took a small amount, put it in a small glass jar with olive oil. They are as hard as a brick? It has been 2 days. Please help

    Anaerobic environments are defiantly a red flag for botulism. That’s why I am not a fan of low temp infused oils.

    I only dehydrate my own home grown produce.

      Then you're blessed to be able to have a garden that you can grow that much produce in. Not everyone has that ability but still want to be able to store shelf-stable foods in their pantry for emergencies or year-round use.

      I do mine because I have excess and to use out of season. If I want growing the produce, I wouldn't waste my time. 🤷‍♂️
