I've heard leaving them in a paper bag like lunch bag, closed but out on a counter out of the fridge helps it ripen along nicely. We always called it an avocado pit. Nice video-I liked the cutting it slow as they can be tender and squish easily. I wonder if you can use a restaurant style hard-boiled egg slicer? Be well, go with God.

To release the pit from the knife I've always just tapped the knife, pit down, against the rim of my trash can. Pops right off.
