    DirtFarmerJay compares 3 methods for ripening avocados - choose for yourself what approach you want to use!
    This is the second episode on ripening avocados that we’ve offered, and we’ve received plenty of questions, comments, and viewpoints on how to get an avocado ready to use in the shortest possible time.
    To provide an honest test, we bought 4 avocados of all similar sizes, colors, and hardness. They were all very green and ultra-firm - not ready to use at all!
    We washed and labeled all of the fruits, and set one aside to provide a baseline. This avocado was simply placed on the counter in our kitchen, where the room temperature was about 68°F/20°C. The other three each had different methods used to attempt the hastening of ripening and all at the same room temp.
    One was simply wrapped in plastic food wrap. Why? We’ve been asked many times if this is a viable approach, so we put it to the test. The result? It did NOTHING to help to soften the fruit, in fact, it appeared to impede it! The fruit that was simply left on the counter ripened faster than it did.
    Another avocado was placed in a small brown paper bag, along with an apple, and the bag was rolled shut tightly. This method worked well, with the fruit beginning to noticeably soften at the 12-hour mark. When 24 hours had elapsed, the avocado was ready to go!
    The last avocado was submerged fully in a tub of white flour. This method worked equally well as the paper bag and apple treatment. Like the paper bag approach, noticeable softening occurred at 12 hours, with full readiness being reached at 24 hours.
    As an aside, we’ve been asked many times if this harms the flour. Nope. Assuming you’ve washed the fruit (as well as your hands!), there is no sanitary issue. And, the ethylene gas the avocado produces is a natural gaseous plant hormone that is plentiful in our environment and does not harm the flour - or you.
    So, depending on your preference and what supplies you have on hand, either the submerged flour or paper bag/apple approach works very well. So, the next time you want to enjoy a dish with avocado and you can only find unripened fruit, you can be eating a great dish the next day.
    Oh, what about the one wrapped in plastic wrap? It was ready to use in about 72 hours. And the one that we did nothing at all? At 48 hours on the counter, it was ready to enjoy.

    I have a question, and my husband is not available at this moment to answer this question. He is from Haiti and he grew avocados in his yard. Often times, when we buy avocados, and we let them ripen, they don't really ripen. He says those were picked too soon. If you pick them too soon, there's a point at which if you picked in that soon they will not ever ripen. I would like to know how to tell that. I would like to know how to steer clear of avocados that are not going to ripen ever.

    Recently my local supermarket has been providing me with some weird avocados in my food orders that just never seem to ripen at all. So many have gone in the bin, they were like green rocks! So I had two out of five this time that weren't ripening and just happen to have a bowl of apples, so did the apple and brown bag thing... yayhay... it worked!!😁 🙌 I'd heard you could ripen avocados with bananas, but didn't realise apples worked too. Thanks for the tip!!👏

      I live on an avocado orchard. When I pick avocados from the tree, they can take two to three weeks to ripen if just left in a basket.

    I use a paper bag by itself and it works every single time. My grandfather had 400 acres of avocado groves in South Florida before hurricane Andrew hit and was working for the agriculture department . He always said to ripen them in paper bags. Overnight or for 2 days. It works. It amazes me how complicated everyone makes everything.

    Wonderful. Just cut an avocado too soon. Have put it back together and put in a bag in the refrigerator. Will see if I can save it.

    I used to work in produce, and I always make sure the stem is still in place when I buy avocados. It's like a cork in the avocado skin. If it's missing, the flesh of the avocado has already been exposed to outside air. Thanks for the video Jay

      Good tip. I live on an avocado orchard and we always leave a bit of stem on. Should you get one that hasn't ripened and the stem fell off, a dab of glue in the stem hole works well. If you ripen them in a day as described in this video, then the missing stem isn't such a big deal.

      stewart bruce, thanks for the kind words. The gas comes from the ripening fruit, not the medium the fruit is placed in. I haven't tried beach sand, but it probably would have the same effect. Give it a try and let me know how it goes, ok? Best, DFJ

      @DirtFarmerJay I have no quantified results, but viewing the video and the other ideas (Rice, sea sand etc.) I realised a principle. The gas being expelled by the avo in a contained, yet not constricting environment (Brown bag, flour rice, sea sand) where the Avo can surround itself with enough molecules of the gas, triggers the ripening process. I am going to bet that adding a banana or apple would at best add to the total gas production by using the oxygen contained in the container quicker. It needs oxygen to metabolize, hence why wrapping it in cling film (I am from South Africa - Saran Wrap?) will slow down the process. Bananas are strange fellows, you can wrap the picking end of a hand and wrap it in cling film to avoid them ripening. I wonder if there is a controlled scientific study around where gasses are expelled and what their function is.?

      I am going to add another observation - as long as the avo is at ambient temperature (In your case 18ºC, 65ºF) another possible reason is keeping the same temperature. Brown bags, flour, rice, and, flour will retain a constant temperature because of their insulation properties. Cling Wrap adjusts to temperature and also restricts gas flow. Leaving the avo outside does not create a contained enough space to "fuel" the chemical process. You will not expect a refrigerated avo directly into flour or brown bag to ripen in the same time frame, I imagine.

      Unfortunately we don't live in a climate where avocados can be grown (it snows here A LOT) so I can't pick one from a tree. I can only get what the grocery stores have. But thanks for the suggestion. Best, DFJ

    Be a tight wallet guy, I get avocados on sale most of the time & they are soft, or too soft.
    But I have shopped for the when they where all hard, I just left them in the fruit bowl until they where soft.
    First time I ate one at work, I got some looks & some of the other men said that they thought only women eat avocados.
    Hometown people don't know in Central America, people eat avocados & mango the way we eat apples & peaches.

    If you were going to use the paper bag and several avocados, would you need several apples also and would maybe two apples per avocado work better?

    Does it make a difference if the avocado still has that little Branch nub on it. You know the piece that you can pick off of the avocado end

      Never buy them without unless you're going to use them quickly! That allows oxidation to start as soon as its removed

    I tried your advice but my Avocados are still as hard as a rock!.!!! How come they are not ripening. It has been 4 days. You said 24 hours.

      Sorry A.Pang. There are lots of variables. I don't know if you watched the ripening comparison video where we used three different methods. The one that worked more dependably was to put your avocado into a paper bag (like a lunch bag) and add an apple to the bag as well and close the bag up tight. The gas emitted by BOTH the avocado AND the apple seems to do the trick. Best, Dirt Farmer Maggie

    Of the two, I think the flour would be the best... you're not wasting a banana or apple..and..you can use the flour over and over again!

    i had some avocados which never riped since the beginning, after about 2 weeks they got bad and stayed hard all the time. low temperature during shipping is probaly the reason. Did you also experience this? Im gonna try this method and see if these kind of avocados can be safed.

    That is really great info. I've always done the paper bag, but will have to try with an apple in there. Curious if a banana would have the same effect. Now I'm going to wrap them in plastic wrap if I don't want them to ripen too quickly! Thanks!

      Hi Fran, Yes, bananas emit a lot of ethylene gas too. Our mango experiment is slow going. 2 are still hard as rocks.The one in the flour and the one in the bag with an apple are slowly ripening. Thanks! DF Maggie (Auntie Maggie to you!)

    Question. I bought some avocados from Amazon Fresh. But when I received them they were hard as a rock. I put all 4 avocados in a large brown grocery bag with 3 bananas and after 24 hours all it did was brown up my bananas and the avocados were left hard as a rock.
    I really want to make something but I'm waiting on these darn avocados. I'm afraid my lemons or eggs are going to expire before these new avocados are soft enough to cut let alone est. I was going to try the flour trick, but we are low on flour and I didn't have enough to even cover 1 avocado.
    What do you think I'm doing wrong? Do you think the issue is that I hand more avocados than bananas in the bag?

    If you go to the market & can't rip avocados. The produce manger doesn't know what he's doing every produce back room has a dry room for ripping he's not ordering properly he's going truck to self. WRONG

    Great video thanks for putting it out. Have you ever tried the paper bag but with no apple, just the avocado itself ? As far as I know the avocado emits ethylene on its own so was wondering if that would be enough

    Hello, My question is in the flour does it have to be in a large plastic bucket or can it just be in something air tight maybe a jar or smaller container ?

    Still says nothing if the fruit is hard&green. If the dry matter of the first avocado is 19 it will ripe lot slower then when the other avocado has a dry mass of 27😉

    Great video! It got mixed up when it was described wrong #2 avocado was the apple and bag and #4 was the flour. In the demo of slicing it the numbers got switched but it is obvious the man's a pro @ removing those pits and really helpful info

    he heee maybe put them into a micro wave for 30 sec I cut the round the middle the short round. Give it a squeeze pop out the seed. then squeeze to togather skin to skin to get all the meat out. Some time just going around squeeze them, the meat will pop out

    Never squeeze an avocado like that to check you bruise it. Squeeze on either end and leave that stem in until ready to use.

      Here's another trick to try rina kolver. Put the avodaco into a brown paper bag along with an apple. Close the bag up tight. The gas emitted from the apple AND the avocado should ripen the avocado in a dayt or two. Best, DFJ

      Joseph, several times, until the apple begins to become soft. After that, you are at risk of having the apple rot. I hope that helps! Best, DFJ

      Thanks for watching and commenting Laura Daniels. No, the gas expelled by the avocado is completely harmless. If you want it to ripen even faster, put it inside a paper bag along with a ripe apple. Then you have two fruits emitting the gas needed for ripening. Best to you, DFJ

      It's unlikely as once oxygen hits the cut surface of the avocado, oxidizing begins immediately and the flesh browns. Of course, you could try a bit of citric acid or "Fruit Fresh®" to counter that. Do some experimenting and let me know what you find out!

      @@DirtFarmerJay I left it first night only in ceran wrap inside a paper bag. Then next day realized banana might help better as suggested so slightly opened up the ceran n kept with 2 small bananas inside d bag for 1 more night.
      It did soften ie ripen on the outer part but inside was still not proper. Didn't want to wait more so made a mayonnaise from it from 1 of d RUclips recipes n it actually was v v tasty 😝 - cut pieces avacado plus 2 cloves garlic, salt pepper n some mixed herb powder plus little lemon juice n finally 2 tbsp olive oil. Mix in grinder n that's it.😉

    Love those avocados! I don't keep ground flour around (as I mill it at home and use it right away for highest nutrition), but the apple and avo in the paper bag trick will now keep me from being scared to buy the avocados when the only choice is hard...!

      @@DirtFarmerJay Yes, except for the one hard avocado I had left and put in a bag with an apple last night did NOT get soft. I am convinced that avocados that NEVER get soft do exist (because I have come across quite a few over the years as a great lover of avocados). I don't know why some never soften. Maybe they were pulled from the tree when they were way too young. Overall, I try not to buy avocados unless they are at least beginning to soften and once they do I hurry them into the fridge. But now in times with only hard ones available to me (like last week), I'll at least have a chance to ripen the ones that WILL ripen! I just don't like to skip the avocados in many seasons of my life, and this is one of them, haha!

    For a really great flavor, ditch the white salt and switch to red salt...well, we call it red salt. Morton's season all salt. It's really fine ground. Johnny Salt is too coarse and chunky. We have tried several different brands and Mortan's is our favorite. Thanks for the video. I've learned now to wrap the avocados if I don't want them to ripen right away. I usually buy 4 or 5 at a time and I will wrap 2 of them now.

    Thanks for the flour tip. It worked great for me. Mine were less ripe than your other video, but worked like a charm and they came out perfect. I just used a smallish tupperware with a screw-on lid. Thank you and keep up the great work.

    The most re-occurring kitchen injury entering an Emergency Room (other than burns) is a person who tried to cut a HARD avocado with a sharp knife resulting in a severe laceration to the hand or wrist. If an avocado RESISTS being cut leave it alone to ripen.

    Great job, although I would like to see a subsequent experiment with the following subjects:
    1- avocado alone in a paper bag
    2- 2 (or more) avocados in a paper bag (w/o anything else) - this is presently what I have on my own shelf in the works ..
    3- the microwave method for "ripening" them ..

      Great suggestions. Also, try putting an apple in the bag with the avocado, closed up tight. Both will emit ethylene gas that fosters ripening.

      I don't think you'll get the desired results because the heat won't reach the interior of the avocado, and you'll end up with the outer portions soft, but likely slimy. You can give it a shot and report back, but I don't think you'll get what you want. Best, DFJ

      @@rodneybooth4069 I take a blood thinner so if I cut my hand it is quite messy. I place a small folded towel under the avocado half and remove the pit as shown in the video.

      @@DirtFarmerJay I used the paper bag method, but I didnt have an apple or a banana. It worked for 5 out of the 8 avocados in the bag. So I left the 3 inside the bag that didin't get ripe the first night. I know they all would've been ready at the same time had, I had some fruit in the house.

    I have tried the flour method but it have never worked out for me. I would rather just wrap it up with cotton fabric and wait for it to ripen. And l like to have it with Stevia Sweethener or add in a curry . Still works out great

      Don’t worry about your age, I I wash everything usually, but I watch the video for my mom who is wanting to make burgers with avocado, sautéed mushrooms, sour cream, tomato, lettuce, and an extremely seasoned meat patty with Colby Jack cheese.

    I'm going to do everyone a favor and say that this method does not work, I did this experiment, bought six unripened avocados, placed them inside of flour, on days 1 through 5, there was very little ripening, it's now day 7 and 5 avocados are trash and only 1 is edible, do yourselves a favor and store them individually in paper bags and let them ripen naturally

      @@DirtFarmerJay If the theory is that flour seals the surface, then cling film should also work. Isnt it more likely that the flour is releasing a gas which is causing the ripening? In that case it may depend on the type/brand of flour you are using? Also the more flour there is in the tub then the more gas there is.
