You're taking me back again today. This used to be my requested birthday cake, with cherries and the sauce that went with it. It uses the leftover juice, and mmm is it good. Pineapple Sauce In saucepan mix 1/2 cup brown sugar and 1 tbsp. cornstarch. Stir in 1 cup of juice. Bring to a boil over medium heat stirring constantly til thickened. Remove from heat, add 2 tablespoons butter and 1/2 tsp lemon juice. Serve warm over cake. Don't know if this is the Betty Crocker version, that's where the cake recipe came from. However, now that page is missing from mom's book. She used her 9" GE electric skillet to cook it. It came out with chewy bits of caramel on the side, my favorite part! The end came when the skillet stopped working about 1989. I took it to work, took it apart to find a loose wire in the handle, I soldered it, put the handle back together, put in on my passenger seat for the ride home. I opened the door and that skillet fell onto the asphalt driveway, the handle smashing into about 50 bits. No more pineapple upside down cake, the iron skillet version paled in comparison. Try the sauce next time, it doesn't disappoint.

I love pineapple upside-down cake, but I also sometimes like to make my upside-down cakes using canned pears instead of the pineapple. It makes a nice change, especially in the fall.
I wouldn’t have thought to make the pudding this way. I usually cream demerara sugar and butter in equal proportions together and spread that on the bottom of a cake tin. (My mother in law used golden syrup). I then pop the pineapple slices and glacé cherries on top, make a cake mixture and put on top and then pop in the oven to cook. When cooked turn out and I usually serve with custard and/or double cream. This cake in all its variations is a great favourite of my husband and daughter.
I've made 2 of these since watching your video. I did use cherries. I always have these ingredients on hand, so why not make a cake. It was my first scratch cake and my first on in a skillet. It goes so well with my morning coffee or some cold milk. Thank you.

Mom cooked it at 350° til a tooth pick comes out clean. Try whatever time is on the box.
