Zucchini Lasagna: Low Carb, Healthy & Gluten Free

    Ingredients
    • 4-6 medium zucchini, sliced
    • 1 lb 93% lean ground beef or ground turkey
    • 1/2 white onion, diced
    • 1 cup mushrooms, chopped (optional)
    • 3 cloves garlic, diced
    • 28 oz can diced tomatoes, well drained
    • 15 oz jar spaghetti sauce
    • 1/3 cup red wine (optional)
    • 3 eggs
    • 16 oz package frozen chopped spinach, thawed and drained well (optional)
    • 15 oz fat free collage cheese
    • 3 cups mozzarella, shredded
    • 2 Tbsps olive oil
    • 1 Tbsp Italian seasoning
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp red pepper flakes
    • 1/2 tsp salt
    • 1/2 tsp black pepper
    Directions
    1. Preheat oven to 375°.
    2. Slice zucchini 1/4" thick and lightly salt. Place zucchini in baking dish and bake for 20 minutes. Pat dry with paper towel. (It will take about 20 min to prepare meat sauce and cheese.)
    3. Meanwhile, preheat large pan on high. Add beef, onion, mushrooms and garlic. Cook until brown, about 5 minutes.
    4. Drain diced tomatoes well. Add to pan with spaghetti sauce, red wine and spices. Reduce heat to medium and simmer 10 minutes, uncovered to evaporate some liquid.
    5. In a large bowl combine eggs, spinach, cottage cheese and 2 cups mozzarella. Mix well.
    6. Drizzle olive oil and add a light covering of sauce into bottom of baking dish. Cover bottom with overlapping zucchini slices. Spoon a thin layer of cheese mixture over zucchini, then a thin layer of sauce mixture on top of cheese. Repeat three layers until baking dish is full. Top layer should be sauce mixture. (Freeze now if not serving immediately. Wrap in foil, lasts up to 2 months.)
    7. Cover with tin foil and bake for 45 minutes.
    8. Remove foil and spread remaining 1 cup mozzarella to top and bake additional 15 minutes. Let stand 10 minutes before serving.
