    I made this for my work lunches this week! I used zucchini and yellow squash. It turned or so pretty and so yummy!

    I love this. I made a similar one before but didn't know about drying the zuchinni out. Will do on the next round. Kinda sad all the years I missed when my mom grew them. They were huge the grocery stores are a rip off Lol. Time to get planting. Thank you.

    I've made zucchini lasagna before and it was really good, but yours looks so much better!! Think I gotta drain my zucchini better haha, awesome tip for adding the salt, never thought of that :)

      LifeWithCass Yes! I only know because of my first failure attempts lol!! My first round was SO watery! It tasted delicious but did not look pretty haha. I learned as I went and now I think I've got it down after a few rounds :) Enjoy!

    So I just made this because I was given a HUGE zucchini from a coworker. I found an almond milk ricotta and a no dairy mozzarella. And then, I had pecarino romano, which is a main cheese for another RUclipsr I watch because it's lower in fat, and LAYERED THAT BABY UP. Haha. I gots ta have mah cheese. I also added in a layer of mushrooms. It's in the oven right now. I'm nervous! I'll let ya know how it goes! Thanks Alyssia!

    Ha! Perfect timing! Literally, yesterday when my mom made homemade lasagna for Easter, we were talking about making zucchini lasagna someday soon, and I thought to myself, "I feel like that's a recipe Alyssia would totally do!", and hey! You did! More motivation to make it! :D

    I'm going to try to convince my mom to make this! ( or maybe one night ill do a kitchen takeover (instead of a 2 ingredient takeover hehe)) The only problem is I don't think my brother or dad would be ok with this! 😔

    Enthusiastic! Gah I hate turkey. Beef or bison even ground lamb rather than turkey, but that's just me. Looks like a pretty good lasagna. I had the zucchini added to mine before was very good.

    Who puts beans in lasagna! You could use crumbled tempeh sautee'd with onions. Or chopped up artichokes might be nice.

      I haven't tried it personally so I can't say for sure, but the texture and shape of eggplant makes me think it could work! I definitely encourage you to try it out! :)

      +Mind Over Munch you can definitely make it with eggplant, it tastes even better. And I never use ricotta, just a little bit of cheese (don't like cheese) or bechamel. It is very important to grill the eggplant first.

      Sounds yummy. I was thinking I'd add a layer of grilled eggplant for extra flavour. My sister adds a layer of eggplant to her regular lasagna and it adds so much flavour especially because it soaks up all the fat from the cheese and meat

    I’m allergic to wheat and I find a lot of gluten free lasagna noodles don’t hold together well. So I think this is going to be perfect. I’m also up to my eyebrows in squash because I planted the rest of a pack of very old seeds that had gotten wet several times... I thought maybe one or two would come up... I have 5 pots with 2 plants each.

    I've been looking for a nice vegetarian zucchini lasagna recipe for a while and this one looks great. Thank you so much! I have a quick question: could I make the zucchini lasagna strips and bake them a day ahead? would they store well in the fridge or do they freeze well for that matter? I usually meal prep a large batch of pasta 'filling' and divide and freeze so I can quickly make pasta for dinner so I was wondering if I could prep the zucchini ahead of time. Thank you once again! You're absolutely my favourite youtuber

      Glad you like the recipe! I haven't personally tried baking the zucchini strips ahead of time, so I can't say for sure how they would turn out! I imagine storing in the fridge or freezer might make the strips soggy again, so you might just have to bake them all over again... But like I said, I'm not sure! You'd have to experiment! I do think you could slice the zucchini into strips and refrigerate to keep for 3-4 days, then prep and bake them when you want to make the lasagna! Hope this helps :)

    Assembled this tonight (for Easter dinner tomorrow) and used veggie crumbles instead of turkey and added some fresh white mushrooms to the sauce mix, used fat free ricotta instead of lowfat and nutritional yeast instead of parmesan. If I divide an entire pyrex dish into 8, each serving is only 180 or so calories, which is absolutely amazing. Thanks for the inspiration, can't wait to toss this in the oven tomorrow and serve it!

    You could use wonton wrappers instead of lagsana noodles or zucchini. Instead of doing the zucchini prep. You are still eating more calories from the wrappers but less calories than regular thick lagsana presumably.

    hey i have any idea that you might like to add to your 2 ingredient series! All you need is 2 squares of dark chocolate and a tablespoon of peanut butter. Spread the pb on one square and top it off with the other. There you have a healthy reese's peanut butter cup!

    Any way you'd be able to make it vegan? I can think of all the alternatives for this, but I'm unsure what would taste as great!

      +Blake Broadley Well you can of course swap the protein for something like beans, and the only other ingredient(s) would be the cheese. For ricotta you could use cashew or almond cheese, and I'd just omit the cheese on top :)

    My daughter and I made this today and OMG! We honestly like it better than regular lasagna, I am shocked at how good it is. I knew we would like it but wow, it's outstanding! I did add a tiny bit of cheese in between one of the layers inside because we love our cheese but wow! I will never go back to regular noodles again!! Thank you so much!

    Tried this recipe but I don't get how you're meant to stop the zucchini from being very salty? I even rinsed the salt off before I dried them in the oven but it still tasted way too salty from all the salt I put on the zucchini to draw out the water.

      Perhaps too much was added beforehand, You don't need much, just a sprinkle, as much as you'd add to season food. Or perhaps the rest of the dish was too salty?

    For the love of god be sure to rinse the zucchini afterward! I made this today came out like a salt lick had to toss the whole thing :(

      +Marley Frost You are not supposed to wash the zucchini after. The salt is there to draw out the moisture, so washing will add more moisture. If you don't like the salt I'd suggest just baking the zucchini strips to get the moisture out that way. Thanks!

    On an especially experimental evening I tried to make this but didn't think to bake the zucchini like you did to dry it out further. Good tip, I am also going to try the zucchini replacement on the Mexican lasagna as well. It's so hard to find good low carb tortillas!

    Hi - I did this last night and although the taste was great it was veeery wet and soggy. I DID salt the zucchini AND put the zucchini in the oven for 10min or so, BUT what I was wondering is, do you use the middle part of the zucchini, that is all the zucchini (with all the moisture and seeds) or just the outer part where there are no seeds to get it less soggy ?

      +Ásta Guðrún Jóhannsdóttir I use the entire strip as shown in the episode :) zucchini do have very high water content, try baking the, a little longer next time would be my advice!

      Ásta Guðrún Jóhannsdóttir it's probably the spinach if you dried the zucchini. That's why I normally wilt it then squeeze out the water.

    made it tasted amazing problem is mine turned out to be watery although i followed your instructions precisely.. the salt and the baking of the zucchini. HELP?

      Maya Al Dilati dangit! I hate when that happens. I'd recommend letting the zucchini sit in the salt for about 20 minutes if you can- larger zucchini have higher water content than smaller as well. Then make sure you pat them dry between paper towels to really drag out the moisture. Bake them for a few minutes as we did in the video, and then before you cut it, let the lasagna sit for 20-30 minutes- it's always a little more watery right when it comes out of the oven. I hope you can give it another whirl! I'm glad it tasted good :) Thanks for trying it out!!

    You may already have a video on this and I just haven't found it yet, but how do you prepare zoodles? I have tried the salt and drain method (never knew about baking them) and they still turn out kind of watery :(

    I love the tip about using the salt to extract more moisture from the zucchini strips before baking them. It's absolutely brilliant! I may try that same tip when I make eggplant lasagna! :)

      Giovanni Morales yes! Eggplant doesn't have as high water content as zucchini so it can be a good alternative for those who don't want to have to get that extra moisture out :) Thanks so much!

    this is awesome. I made it today and landed my self in the hospital. I cant afford a Kevlar glove and I slice almost my whole finger nail off. so if your like me and don't have the money for a Kevlar glove go really slow or just cut with knife.
