    #cookingwithrexy #homefries #castironskillet
    Feeds 4/6 - cooking time can vary! Should take from start to finish about 1 hour
    *The potatoes will take the longest - should be nicely browned and fork tender.
    Ingredients & measurements:
    You will need a Cast Iron (for the best flavor) OR I’ve made this in my Dutch Oven - works just as good! 😋
    2 packages of Smoked Sausage Links (any favorite brand - I use, Kielbasas)
    1 large yellow Onion or two medium (sliced thick)
    About 6/7 large Rustic Potatoes (cleaned & diced) (you can peel the skin or use with skin - your preference)
    2+ TBSP of Butter (I use salted)
    Olive Oil
    Salt & Pepper to taste (I use fresh ground black pepper and pink Himalayan salt, you can use Kosher)
    1 TBSP Garlic Powder (or more per taste)
    1 TBSP Oregano
    1 TBSP Parsley
    1/2 TSP Crushed Red Pepper Flakes (or more per taste)
    2 TBSP Paprika (You can use smoked, I use regular)
    Thank you for watching and Enjoy!! 🥰

    Mom would cook this several times a month; when she was diagnosed with Sundowners I was chief cook and bottle washer. Of course, she forgot she used to cook it, I told her I learned from the best cook and pointed at her 😌 I miss my Mom; shes been gone 14 years

      @@judiezell4306 patients tend to get anxiety attacks right around sundown; I can’t tell you how many times I caught Mom trying to get out of bed, saying she had to go home where she grew up, I’d tell her I’ll take when it’s daytime. We’d go through this maybe five times a night. Doctors say Sundowners is the beginning of Alzheimer’s; I’m just glad she isn’t suffering anymore.

    I am 59 years old in Finland and we have done also this dish even when i was a kid. And i have made it many, many times. Usually this is made here in Finland from leftover potatos from yesterday.
    If you add egg and some meat, like bacon it is called here in Finland, " Pyttipannu ". Freely translated " Leftover-pan ".

      In Germany and Austria a similar dish is known as "Tiroler Groestl". Originally it has been prepared from leftover potatoes ,meat or sausage and onions. It is traditionally served with fried egg and some sort of salad. Quite often herbs and spices like parsley, chives or caraway seeds are used for seasoning (salt and pepper [of course], too).

    OUTSTANDING!!
    When I've done it, I've added slices of sweet red/green peppers, minced garlic, oregano, with less paprika but do add just a touch of cinnamon or allspice.
    At times I have wrapped it up in aluminum foil and baked it in the over at about 350° so that all the flavors can blend in very well. Best part of all, since I live alone, there's always plenty of leftovers for tomorrow. And it tastes even better the next day!
    It's a meal fit for a King!

She would take 8 or so eggs and beat them as if to scramble them and pour it over the top after everything was browned and my oh my, it was gone in seconds. The skillet would be so heavy I remember her carrying it over to the table using both hands. I sure miss my Mom and I sure do miss my childhood. I was very lucky. Thank you for posting this. Great recipe! Just to make sure that the potatoes are fully cooked and ready with the rest of the ingredients, I usually par boil the potatoes for about 5-6 minutes before adding to the pan.Take care!😀👍🏼

      Yaaa I was wondering the same thing. No mention of potato's being pre-cooked. She missed a few steps there.
      But otherwise looks like a good stick to your ribs meal. Looks good to reheat too!! 😀😳

      @sfopaladin2661 lmao I didn’t “miss” anything. The potatoes were NOT pre-cooked!!! Thanks for watching, I do appreciate that. @Alcapone… Hi.. thank you for watching. I appreciate the food love. Ok so, NO the potatoes were NOT pre-cooked. I mentioned that in the beginning and the end saying, it would take longer to cook the potatoes due to them being raw. I hope you like the recipe. Again, thank you for watching. ♥️

    Looks good! I do mine almost the same but with a twist and it may take a little longer but it's worth it. I twice cook my potatoes. I dice them and then boil them for about 8 minutes or until soft but yet, firm. Then I dry them off and brown them. They come out crispy but softer, almost like mashed potatoes on the inside. I also use a couple cloves of fresh garlic and a little bell pepper and some stewed tomatoes (without the juice.) Give it a try sometime, you'll love it!

      You can get the same effect by cooking the potatoes covered over a lower heat for longer in the same pan, then once they are the desired 'softness', take off the cover, add a little more oil, then turn up the heat to brown/crisp them.

    • @graebeard6882
      @graebeard6882 11 месяцев назад +5

      The other option is to nuke the potatoes for a few minutes while the sausage and onion are being prepped. Just until they're about half cooked.

  • @Kingfisher1215
    @Kingfisher1215 11 месяцев назад +8

    Par boil the potatoes before you fry them. About five minutes is all it takes. Or, you can throw them into the microwave for 5-7 minutes, let them cool and then fry them. Trust me on this, cook the potatoes some ahead of time, cuts the frying time and results in a better dish.

    • @BEDavisBrown
      @BEDavisBrown 10 месяцев назад

      Will they crisp after par boiling?

    • @Kingfisher1215
      @Kingfisher1215 10 месяцев назад

      @@BEDavisBrown of course. You can’t really overcook potatoes, but you can undercook them. Par boiling prevents the latter without having to burn the outside of the potato.

      We had one of those in my family. It was supposedly from the late 1800s. Then a young member of the family was trying to do a good thing and clean up after a dinner one night.. and proceeded to scrub it clean with hot soap and water and a brillo pad. Yeah, sad day.

    Loving your sausage & tater mix. I have been doing this type of a mix for a long time. I sometimes use my cast iron skillet just like yours as the taste of the cast iron cooking is just fantastic. Most of the time I just use my table top non-stick coated flat top griddle. I don't get that same taste I get when using the cast iron skillet. I usually do the same as you with onions, but also add the tri-colored peppers & mushrooms. This mix is such a big hit when I take along to pot luck dinners & gathers.
