If you enjoy chocolate and you want to change it up a bit/guild the lily....add in a few semi-sweet chocolate chips/mini chocolate chips...you hit one of those and it plays off the ginger and it's amazing. Milk chocolate chips work well too. I do this at Christmas.

I made your delicious cookies yesterday, but I didn't have enough butter & I was out of eggs, (no, I have no hens and I really wasn't planning ahead!), so I used 1 1/2 c coconut oil/solid for the butter, and 1/2 c unsweetened applesauce with 1 tsp baking powder for the 2 eggs. They are soooooo delicious!!! I took over 3 dozen to the senior's home my mom is in; you would have thought I was handing out $10 bills! The old timers were so taken with them - they had their hands out for seconds and thirds - that molasses & ginger triggered, I think, a lot of memories today. So, thanks for the recipe, thanks for the memories!
How wonderful!! And that was excellent substitutions! If you are ever out of eggs and need a binder..you can grind up flax seed..mix one tablespoon of ground flax seed with a 1/4 cup warm water and allow to sit 5 minutes until thick..works as good as eggs! I am glad the enjoyed them at the home! How SWEEET of you!

always makes me think of my granny. she called them molasses crinkles. and formed them into more oblong shapes. often would dip into coloured sprinkles. I learned to add more molasses than her recipe called for --- great cheat to get softer cookies. yum! love the idea of freezing the dough balls ready for cooking.... would make me a most popular momma!

Excellent video. We don't eat many sweets, but we do like those type cookies, and like using the fork, but also use a square pattern potato masher which when used gently makes a pretty pattern. Also we use the small cookie scoops which allows me to drop the scoop in the sugar so little hands can sugar the dough and put on the cookie sheet. Love making cookies with our wee ones. Well horse-feathers! I just made a batch of peanut butter cookies and would have much rather had these! My recipe is almost identical. By the way, have you ever made potato chip cookies? My all time favorite :D So does your recipie turn out the super crunch, lightly crunchy or soft kind of cookies? and if I add more molasses wood that make them softer? And they came out great. I used flax egg cause I was our of eggs, half a cup of lard(cause thats all I had) and the rest margarine cause I did not have butter. Brown sugar instead of white cause I was out of white sugar. I still used the same amount of molasses and I eyeballed for pumpkin spice since I didn't have any and was out of nutmeg so put in cinnamon, cloves and allspice. And I only have whole wheat in the house so thats what I used lol. In the end it was a little far from your original recipe but it was still delicious and just what we needed!

I don't care for molasses and am trying to find a "good" substitute. I know the molasses is what colors the brown sugar, but I don't know if you can substitute the BS which doesn't have the STRONG taste of the molasses. I would replace ALL the sugar and molasses with Brown sugar and up the water from two tables spoons to a half cup. Let me know how that turns out for you!

Jennifer Smith Once the cookie balls are firm enough in the freeze not to mash down..I then bag them up in baggies in one dozen per bag...when I want to bake some..I pull out a bag..pop the dozen cookie balls on a cookie sheet..let them thaw enough to press and "Bobs your uncle!" you got ready to bake cookies!

I make these every year too . I love them ! I dip the cookies in water and then sugar and when they bake they have the "crinkles" on top . Yum !

lol I know it can get confusing..I did a scone video..and I explained that it was like biscuits only with BUTTER and sugar in the mix!
You add sugar to your scone mix? We don't over here, the sweetness comes from the jam and cream that you put on them lol, so so good. - Michelle

the softness or crunchieness depends on how long you bake them! Give them a few minutes less if you want the softer!

For every teaspoon of powdered Ginger you would add a tablespoon of graded fresh ginger

You Can tire it..just add a 1/2 teaspoon of salt with the lard.

Jennifer Smith Once the cookie balls are firm enough in the freeze not to mash down..I then bag them up in baggies in one dozen per bag...when I want to bake some..I pull out a bag..pop the dozen cookie balls on a cookie sheet..let them thaw enough to press and "Bobs your uncle!" you got ready to bake cookies!
