Dear Miss Leslie - it took only one episode of your The Farming Pastor's Wife for me to become addicted to your beautiful smile AND wonderful family story. I do believe I have viewed more than 20 episodes so far. Since I have Multiple Sclerosis (MS) this pandemic demands even greater diligence about protecting my immune system from germs outside my home. Cooking for one can lead to boredom (just how many ways can you cook a chicken breast anyway?) but I have been able to successfully adapt/prepare/freeze some of your best recipes for my 'eat now enjoy again later' routine as suggested by my occupational therapist (OT). I have had to learn ways to conserve my strength, as do many of us with chronic illness. All that's required is masking tape, a freezer container and a Sharpie pen in order to really enjoy your recipes! As my coffee brews, I can open the freezer and select a a Pastor's Wife entree, pop it in the fridge to thaw, then at suppertime I just steam a veggie or whip up a salad, heat my thawed selection and voila - dinner is served in a matter of minutes, not hours.Believe me, not cooking from scratch every day conserves energy while allowing me to more efficiently maintain my ADLs (activities of daily living)! I am particularly fond of your salmon patties ... yum. On a recent episode you made a strawberry fluff for your Son in Law. It reminded me of my own 'fluff'! With just 4 ingredients and 10 minutes of active time, this dessert will hit the spot. As far as I'm concerned, dinner isn't over until a bit of sweetness passes these lips. I call it Lemon Cloud Pie. one can of sweetened condensed milk (regular or fat free) one 8oz tub of whipped topping (regular or fat free), thawed 1/2 cup chilled 'Nellie & Joe's Key West Lemon Juice' a (purchased) 8 or 9" graham cracker crust OPTIONAL: the zest of one lemon Tuck the crust into the fridge or freezer to keep it chilled while you prepare the filling. With a whisk, thoroughly blend together the can of sweetened condensed milk and the lemon juice. Dump in the thawed container of whipped topping and with a rubber spatula, fold until mixture is combined. Transfer filling to the chilled pie crust, smooth top and then sprinkle with (optional) lemon zest. Cover pie with plastic wrap and then put pie in the freezer until serving time. By the time you have cut the pie it will have softened slightly. If you work fast you can enjoy your slice(s) while the pie is still frozen. Either way, this pie is delish!! NOTE: If you decide to skip using a pie crust, mound filling in individual compote glasses and garnish with lemon zest and/or graham cracker crumbs. I just made them. I have a convection oven also. Have never used it before. I decided to try. I set it for 350 but after I took out my first batch I noticed the oven was preheated to 325. Hum after figuring out that the oven automatically resets 25 degrees lower. I reset it at 375 and it went to 350, halfway through the second tray. By the time I got to the last few I knew what I was doing. They turned out the best. The first tray was a bit underdone but still good. But the last tray was perfect. I’m so glad I tried these. They are delicious. Thanks for the wonderful recipe and helping me learn to use my oven. LOL

You could try buying small piece cut it up sprinkle little sugar on it wrap it in plastic wrap then a freezer bag. Candy ginger good in tea when its cold. It does have a bite. I had get used to it.. if molasses the problem try Karo syrup its not as strong. As molasses. Try the light Karo. Or the dark Karo syrup. Neita James.

Hi I have a large family. My boys love these my girls love them with milk. My 2 oldest boys eat all the time they tall. all food go to thier legs. My girls like making cookies most sat they love helping gma make cookies. I'm.looking for a recipe for buttermilk pound cake used make them . Had stop I started gaining weight. I learned to make it by heart lost the recipe. We love buttermilk pie too.once a week I enjoy seeing them make cookies with me or gma.we careful they don't touch the stove.they getting tired peanutbutter cookies but my boys like snack we home schooling this year. So I have do breakfast lunch and dinner. Have keep changing it up making weekly menus. Not easy . Now weather changing be lot more hot meals, lot crockpot, slowcooker meals. I have subscribed. I took Home Ec in school, it was said when alternating dry ing. and wet to end with dry because the dry binds it together better, but like I said a million years ago. I bought a gallon jug of molasses to use in cooking and making brown sugar, oh, homemade brown sugar is the Bomb, once you make it you'll never go back to store bought. Molasses cookies was a cookie my Great Grandmother always made she made them every Christmas.I am making these as one of my cookies for Easter along with my sugar cookie cut out bunny cookies I make for every Easter. I always frost my bunny cookies with a white frosting then have a small amount of the white frosting in a small bowl tinted with blue food coloring. Then I take a tooth pick put blue frosting on the tip of the tooth pick and add a blue eye on my bunny cookies everyone finds them so cute looking frosted that way. We have another cookie recipe passed down through the family that takes molasses in it and rasins called "Cry Baby Cookies" I will look the recipe up in Mom's recipes and send you the recipe to try I believe you and your family will love them.

So I know this was your 1st time making molasses cookies and I noticed you used the yellow label molasses. I have that and also a green label ("robust") molasses. Thank you so much! I have never used a green label molasses. I with use the "unsulfarated" store bought kind or homemade. Not homemade by me, but by neighbors. I wish I could tell you more but I just don't know much about them.

We have another cookie recipe passed down through the family that takes molasses in it and rasins called "Cry Baby Cookies" I will look the recipe up in Mom's recipes and send you the recipe to try I believe you and your family will love them.

So I know this was your 1st time making molasses cookies and I noticed you used the yellow label molasses. I have that and also a green label ("robust") molasses. Does anyone have an opinion which is preferable?

I have never used a green label molasses. I with use the "unsulfarated" store bought kind or homemade. Not homemade by me, but by neighbors. I wish I could tell you more but I just don't know much about them.
So if I don't have a convection oven you said to bake at 375 degrees, right? For the same amount of time? Thank you for your help!
Are these cookies soft and chewy? My grandmother made soft molasses cookies and most recipes taste dry not soft .

They look really good, and I'll probably try to make some soon, because my daughter loves them... but I was wondering if you have any idea why there is only one egg yolk? I've never seen a full size recipe that calls for so little egg, let alone only yolks!

I love my convection part. Everything seems evenly cooked. no burnt bottoms and undercooked tops or visa versa.
You said you made homemade molasses? Never of such, could you show us how sometime? Hubbies favortie cookie is a Gingersnap but during this last year, molasses was hard to find amongst so much stuff. Craziness
