Normally I measure my flour by mass not volume, so I usually ignore the “cups” quantity, but 525g is over 4 cups, not 3, so I’m worried about which amount to use. For now I’m going to use 360g on the assumption that I can add more flour if the dough comes out too runny.

(Also, having now made a video in my kitchen, I have even more respect for how gorgeous your videos are. The kitchen is a very challenging environment!)

I'll also vouch for this recipe. Turned out perfectly. Some people mentioned and mine came out right with the weight of the flour ( not the cups volume). I would always go for accurate weight measurements anyway. Also you might have to adjust the time depending on how chewy or crisp you want youre. We did ours decently thick and 10min was good for that.

My 3 year old helped make this. After it came out of the oven, he took a bite and said very meaningfully (for the first time), "this is the greatest cookie ever!" Thank you for that experience. Btw we reduced the sugar and it still tasted good

I just made your recipe today for the first time and wow! My daughter absolutely loved them, no one believed me when I said they were vegan lol. My daughter was even singing "Christmas cookies, gingerbread men" while she ate them.
I've always failed at making cookies before but these looked so delicious that I had to give them a go. I couldn't find molasses so I used golden syrup instead. They came out perfectly and tasted incredible. All my family loved them. I'll be baking these regularly from now on.

LOVE your show! A quick tip: if you roll and cut the cookies directly in the papered pan, you can skip the hassle and distortion of transferring the cookies by spatula. The only tricky bit is, you'll need a rolling pin that fits in the pan.😊
I love that you said roll with a rolling pin or a jar! 👏🏽💝 This brought back childhood memories of rolling with old spaghetti sauce jars because they were large, smooth and round 🥰🥹 The old man cooking joke made me giggle 😄
I’ve found it to be really helpful if you turn the baking tray upside down and roll it on there then peel the excess dough off of the shaped cookies and directly bake it there. Saves the hassle of having to scoop the cookies up and worry about it sticking

Thank you for this amazing recipe, I’ve been craving a vegan gingerbread cookie! I just make them and they are delish!!! I subbed the flour for Arrowhead Mills organic All purpose and gluten free flour (mostly brown rice and millet flour), little cacao, coconut sugar, and added a pinch more dry ginger along with some fresh grated ginger, since I LOVE ginger!!!

These are the BEST!!!!!!!!!!!!!!!! Use quality ingredients and don’t skip the ground ginger or grandma’s molasses. I used earth balance butter. Other vegan ones will also work well.

@jpe1 I used 3 precise cups. My scale needs new batteries. After refrigeration, the dough was perfect with the flour that you used to dust and roll.
