For those of you that Don't Have Molasses or dark brown sugar (but do have some experience making a caramel) if you make a caramel using: light brown sugar + some pure maple syrup + some espresso- you will have a wonderful molasses substitute complete with the bitter notes, for those of us with an incomplete pantry XD

I think if you find a passion or a hobby you enjoy doing, that will make you happy! Even just reading a book, because you can jump into other worlds while you reading great stories! I remember feeling the same. When you read them you visualize, like beeing in the mid ages, or on a ball, or on a train adventure, or sailing, or being a pirate with Francis Drake, or anything you find interesting to read. It is amazing for imagination and creativity. Watching a movie is different to read a great story. I wish you to find great friends and to find your passion you enjoy doing and I am sure you will find happiness. Take care! :)
I have spent MOST of my 37 years unhappy but I have to say I have realized happiness is a choice. External factors don’t make happiness. Money doesn’t make happiness. Other people don’t make happiness. You make you happy. You wake up and decide to be happy and don’t let anything outside of you take that away.
I LOVE the smell of molasses. My grandmother used to make homemade buttermilk biscuits, top them with butter and then she'd drizzle sorghum molasses over them. We had them along with eggs, croquettes, savory grits and fruit on Sunday mornings... takes me down memory lane.
The part of Canada that I come from has a Ginger Snap cookie that was incredibly flat like almost a cracker......they were amazing and enjoyable dipping in my hot cup of English tea. Oh my mouth is watering.
Tried your recipe. As I do not have a scale, and as I was intimidated by how you said not to compress the flour, I sifted it directly into the measuring cup. Everything else went well until I tried to make the dough. It was entirely too wet and sticky, so I added flour, and more flour, and again more flour so that I could hope to form balls as you did. I must have added somewhat more that a cup of flour before I seemed to have a remotely workable mass, although still very sticky. They became easy enough to manage once I rolled them in sugar. I had no sanding sugar. The end result were huge 13+ centimeters across, soft, cake like things that looked like models for the planet Mars, and the taste, HEAVENLY! They are not what I would ever call a ginger snap, more like ginger bread, but softer. Oh, and I used margarine instead of butter, if that makes a difference. Not very sweet at all, but absolutely amazing. I'm keeping this recipe. Oh, and you asked who likes molasses. I have never been fond of the taste, and my kids hate it, but when I was growing up, my mother put it on our pancakes because syrup was too expensive. This is the first time I have tasted it since childhood. It brings back memories.
Usually I imagine gingersnaps to be super crisp which I'm not a fan of, but this recipe looks delicious: crisp on the outside and soft in the inside! Will have to try it.

Thank you for saying that brown sugar is just molasses-covered sugar. A lot of people thinks that it's something different and "healthier" than regular sugar, not knowing that it's the same thing, just with a different flavor

Me, my wife and four kids absolutely love these cookies and you too John. Us personally, we find the salt is a little bit too much and find that the baking soda provides just the right amount. Every time my kids hear a video of yours while I'm cruising RUclips, they come run up to me and ask what we are going to cook.

But the other night I had a dream where I was on the Great British Bake Off and it was time for the technical to make a pie, but my dough just kept on melting but you were there and won the whole thing because you were the only one good enough to make pie dough lol

Gingersnaps are one of my favorite cookies I've never really found a recipe not that I've looked very hard for them you always seem to find the recipes for all sorts of things and I know that it will work out I'm glad to see that there's something that I enjoy that I hopefully can make from scratch
Black strap molasses in milk is wonderful ! Just dip the back of the spoon in molasses and the milk is cold and you have a lot of vitamins and minerals that does the body good. It really is tasty.

I have wondered this too! I recently discovered a kind of Swedish Ginger snap named Pepparkakor. There is a video uploaded by the youtube channel Geoff Cooper where the cookies looked pretty snappy. I am planning on giving it a try along with Preppy Kitchen's version!
