Prepare a 'topping salad' at the beginning of the week and store it in the fridge. Each day, simply assemble a bed of fresh salad greens in a bowl and add a scoop of one of these prepared salads. Voila! the meal is served.
I did this when l was pregnant, made fantastic heathy meals. I used a mix of lite mayo and plain yoghurt for the dressing .
Sounds great. How do you make it?
I had the same idea. Maybe increase the dressing a bit since we'd be adding lettuce greens. 😊
@@vickipetrarca3617 I think she meant that any of the salads in the video could be used as a "topping salad'.
LOVE THIS !
Hi Becky, here's my french grandmere's french salad dressing. Use 1 teaspoon of Dijon mustard, mix in a half teaspoon ground sea salt add a couple of twists of ground black pepper. Next add 1 tablespoon of red wine vinegar, then add 2 tablespoons of the best olive oil. I make this in a jar which I shake until its an emulsion. Bon appetit! Hugs Anne in France x
I was visiting a girl in France with a friend of hers and she took us to a restaurant and we had, as a starter, a lettuce salad on a plate with this white looking dressing. Well it was one of the tastiest dressings ever, sorry lettuce with dressing. It was a white dressing. Do you think this was the the same dressing?
@@gaymccoll9309 A home made dressing that's white is often make using white wine vinegar instead of re wive vinegar and the all the ingredients are whisked with a hand whisk or electric whisk. And a pinch of sugar is added. Also there is a recipe using a little mayonnaise and adding a lot more oil and some water. Or there's also a type of green sauce made using only mustard and oil salt and pepper. Once it's all mixed, add lids of chopped parsley and chopped sorrel, this mostly used for fish. Anne in France 😌😊
Thanks for sharing that!
I am not from france, but I am French Canadian, and we often make homemade dressing with sour cream as well. I dont know if this is an old french recipe that made it's way to Canada many moons ago, but it is common here. It's very good. Sour cream, a little bit of milk, salt and pepper. Some add mustard to it as well. Yummy.
@@Nikki7B Thank you. I am going to try this one and Anne Lordˋs two recipes.
I was in the Farmer's Market with 2 of the recipes printed out so I wouldn't miss any ingredients. A lady behind me wanted to know what I was making by all the fresh veggies and herbs in my farm basket. I gave her the recipes and pulled up Acre Homestead on RUclips! So fun to be able to share "all the things"! 😊
I went through a lot of the comments and I didn't see this so here...tip on Chicken. You can prep it the night or day before by putting it in a crock pot and even using frozen breasts. Frozen takes about 8 hours on low, or 4 hours on high depending on how much you cook. For easy shredding, right in the pot use a hand mixer and take the beater to it. Quick and easy without adding a lot of liquid to the chicken. I just let it cook in it's own juices but you can add seasoning right at the beginning and the flavor really gets into the chicken. It's pretty much the same as poaching but I find it easier when I need to do a lot of chicken or don't want to heat the house up in the summer by using the stove.
Hi Becky. There is a lot of flavour that can be found in the cilantro stalks. If you just cut off the very ends, the stalks can be cut finely to add to your salads. Alternatively bag and freeze them until you have enough to chop into cilantro lime rice - or put them into processor with garlic and butter to top garlic bread. Another use is to process with lemon zest, seasoning, chilli flakes and butter to make a log of flavoured butter to top grilled chicken.
Hi, great ideas. Thx
Fantastic!! Thank You So Much! 👍🏼❤️🙏🏼
I didn’t drink pickle juice as a kid, but I keep a jar of leftover pickle juice in the fridge to drink when I get restless legs at night! Works great 😊
I do love how you encourage people to use what they like and have available rather than strictly sticking to a recipe
Seems to be a shortage of common sense
I kept thinking adding bow tie pasta to the Italian grinder and the chicken BLT salad would be so good!! Great salad recipe ideas!
As a kid, I asked my grandma for a jar of dill pickles instead of a chocolate easter bunny in my basket one year. She did not disappoint! And you better believe I drank the juice. Best Easter memory ever.
🤗
Your flowers are so cute in the cubby shelf near the fridge😊❤
I saw that too! They're so pretty! 😊
I was thinking the same thing. Now I just need a cubby! 😊
I saw those little beauties as well. So pretty! I was thinking lavender??
Becky, I have watched many famous cooks and chefs here in Britain on TV, but I have to say no one inspires me to cook more than you. Keep up the good work sweetheart, from Lesley in Scotland xx
I bet that made her day! ❤
My cousin makes that's corn and avocado one and adds a lot of lime juice. It's so amazing in the summer!
I used to hate cilantro. After using it in your recipes a few times, I’ve come to love it. I planted 4 plants in my green stalk. I have never had a garden before.
I don't know where you are, but cilantro likes cool weather. When it starts getting hot, they will go to seed. Then you can pick the dry seeds off for coriander! And plant some of the seeds in August-September & you will have more plants. ❤
I knew from the first video of yours I watched that your channel would explode because your wholesome, kind and real!!! You provide knowledge and inspiration, I just really appreciate you becky!!!! With Everything that is going on in the world its just really nice to watch someone that makes me feel like I've learned something and gives me the strength to get off my butt and be productive!!! Your just wonderful Becky!!!❤❤❤
Your food makes me drool!!! I also think you have an amazing way of teaching. Really enjoy watching you.

I'd love to take these salads for lunch. How long does the feta "last" ? Would it be better if I added it the morning of?
New here, and I’m so happy to find these.
I’ve looked many times online for a good “chopped salad” recipe because I had one once and loved it! I’m not usually a salad person but I knew at first bite that I could love chopped salads… and here I just found a treasure trove of them!
Each sounds perfectly yummy and delicious yet different from each other! I can stop looking. 😅
That BLT salad would be great in a home-baked baguette.
Or a crescent.
That sounds fabulous! Great idea
My first tought was in a croissant. Yum!
ANYTHING would be great in a home-baked baguette!
You are definitely not weird for eating salads for breakfast! My mom and husband have both caught me eating macaroni salad and cesar salads in place of breakfast.. all of these you made today are wonderful!
Pickle juice is great for charlie horses/muscle cramps. Works great & quickly. We keep a jar in the fridge at all times.
Thanks for this tip. Ive heard if rubbing mustard on .
4h ago i tried to decide which side or salad to make for tomorrow's barbecue, couldn't decide on anything. looked up recipes on becky's website, couldn't find what i was looking for. now a video on salads? ❤❤❤ love it!
Let us know how your BBQ goes and how the salads tasted if you decided to make them! Have fun!
That Thai chicken would be great in a wrap too
The BLT chicken salad would be phenomenal in a lettuce wrap too!❤
OH MY. Anyone of those would go great with fish or a jacket potato. I am writing the ingredients down. These my husband would love. I do a salad with smoked salmon and capers. The creamy caper and chive dressing is to die for. My husband can not tolerate hot food when the weather is hot. From June till end of August all he eats is salads and fruit salads. He is a civil engineer so he's out all day on sites. Thank you for such great content Becky you are phenomenal
That sounds amazing! Is that recipe posted anywhere? My family would go crazy over that...sounds so good for summer!
All recipes are in the description if you click the title of the video 🥰🥰
I think she was asking for her smoked salmon and caper salad recipe. I think 🤔 🧐
I too would love that chive and caper salad dressing recipe! 😍
You are such a treasure to your family & friends. What a wonderful woman you are! I feel comforted just being with you. Wish it were in real life ❤
Thank you for sharing these recipes. I feel the same way about what I eat when the weather starts getting warm.
They all look so wonderful. We have added dry ramen to the Thai slaw and the Italian salad. It's good in both. It adds a crunch even though it softens a little bit because of the dressing.
Hi Becky, I live in Australia and I just so enjoy watching your RUclips videos, you are so aspiring and I admire you and what you and your husband are doing around your homestead. I am in my late 60's and I think you are never to old to learn from others. Oh, and my husband is so jealous of your vegetable gardens.
Take care , Jane 😊❤
Hi Becky, this is Nicole from Washington state, I live in north central of our state and I live along the Columbia River in a town called Bridgeport . It became a town when Chief Joseph damn was built. My neighboring towns are Grand Coulee from the south and Brewster, Paterson, Lake Chelan , and Wenatchee. I live amongst all the cherry and apple orchards. I just wanted to say, yes I grew up drinking dill pickle juice. My grandma would have me drink it when I got the hiccups. It really worked, and hiccups went away.
Becky I would like to thank you, I love to cook and have been cooking for a long time , you take your time and are very informative and have such a passion for food and cooking, it is greatly appreciated. I think for anyone who doesn’t know how to cook and wants to learn or even learn more you definitely are one to watch! Also , team dill pickle , yum
Well said. Agree. I'm 65, and learn from Becky.
I learn so much from “Entertaining with Beth”. She explains WHY things are done, like the mustard helping with emulsifying in this video, never knew that.🙌🏻
I drink pickle juice if I have an upset stomach but I also eat tons of pickles and pickled cucumbers and onions. I love vinegar there is times that I crave it. Love these salads all but the one with avocado I can’t handle the texture or flavor. Love to your family.
I've noticed a few videos now using the basil salt. Not something I would have the need to make/preserve, but it's so nice you're finding ways to incorporate something home grown and persevered into your cooking. USE WHAT YOU HAVE ♥
Yes, Team - pickle juice!
Whoohoo! Just finished in the garden and walked the dog. Relaxing now and Becky’s pretty face pops on! 🎉❤💪🏼
Love poaching the chicken! And the bonus is the stock for another time(still makes very tasty chicken stock even though boneless, skinless)!😊❤
Made the BLT salad. I used a rotisserie chicken from Costco, it worked out to just about 6 cups of shredded chicken/Costco chicken. Because one of the people I was fixing this for, doesn’t tolerate onions well I used about half the amount of green onions/scallions and replaced the red onion with finely diced celery. It was a hit with both the onion and non onion lovers in the group.
Late….. was making bbq spareribs and creamy potatoes. Had cucumber and fresh tomatoes for a veggie, supper was amazing!
Yeah Becky Time😊
Hello from KY love you and your channel and your family ❤️.Becky you are such an inspiration for me.I made 3 diff chicken salads while watching you and saved my roasted drippings for broth in the freezer.Thank you for all the time you put into this channel❤
The cake turned out Beautiful!! Love watching you and your mom cook and bake together.
Yes, And pickle juice is actually good for you especially if you have a tendency to have foot and leg cramps
Becky, Northern California has award winning olive oils, super fresh and yummy. You won't be disappointed
I love to watch your face as you sample your dishes...it makes my mouth water because your face says it is so good!!😊 All of these salads look delicious!! Thanks!!
I think that blt salad on toast would be so delicious
It’s already very warm here in South Carolina and I love salads. These sound delicious ❤
My father-in-law drank a small glass of pickle juice every day. He lived a very full life. I think he knew it was good for the body!
Pickle juice is great for heartburn.
When I had a lot of green beans and tomatoes, red onions, I mixed together with Mao, best foods, salt, pepper, became friends and family favorite. ALOHA
Yummy
That's one of my favorite combinations, too, but I usually make with a vinaigrette. I'm on Team Vinegar with Becky! 😂
Also love cucumber, tomatoes and red onions with sour cream dressing.
Yay! I've got some new salad recipes to try! I appreciate that none of these included pasta.
All look so delicious. I’m happy I’m not the only one who can eat salads for breakfast.
Totally Awesome Salads!!!
👏👏👏👏 Let’s not leave out the beautiful, my favorite purple friends in the background!!! 👍😎😎😎
Aren't they pretty!!!!!!!
I love to watch you cook, you're so real and have great energy!
Becky, I'm almost 70, and I love pickle juice, I have been drinking it for the past 10 years..yum.. all the salads look wonderful, will try them all. Thanks so much for all you do ❤
I love pickle juice and drink it as well. I just started liking green olives and have been using their juices to make a salad dressing.
🙋🏼♀️ Another dill pickle fan and I always save the pickle juice and drink it. It's really helpful for leg cramps, too!
Becky, your videos are so entertaining! I love how your dogs are waiting for something to drop.
I grew up sneaking whole dill pickles from the refrigerator! I love them!! Thanks for these wonderful salad recipes...
Here it is 10pm. on a cold winters night in southern Australia,…..
and I’m making myself an inspired salad!
Thanks for cranking up my salivary glands!
🙏🏾💕🎶🦋🐸
Yes to the Pickle Juice as a Kid. And still in My 60's I drink it. Yum Yum. Thanks for Sharing.
I so love salads 🥗 and I watched this video all the way through. 😊 thank you for sharing this beautiful recipes Becky
Excited to take these to the beach with me next month...
I love the sunlight that comes into your home. ☀️
All those salads look FANTASTIC!! I can hardly wait to make each one of them!! Thank You!!
Heck yeah, cold pickle juice is awesome
🎉Becky time
These salads all look sooo amazingly delicous!!! Thanks Becky! You are a fantastic home chef!
Thank you for all the sharing you are doing, from gardening, canning, raising seeds, meal prepping. I have found them so very useful. I also love your energy level and love watching you go. I have tried some of your canning recipes and they worked out beautifully. Cannot wait to try some of these salads. God bless!
Salad 1 looks so fresh and delicious. I live by Temecula California. Now known for many vineyards. But now it also has olives. And a olive oil company with many very tasty olive oils. Small batches and a tasting room that rivals the wine tasting rooms. Especially since I'm not a wine drinker.
I'm near Canyon Lake, I lived in Temecula from 89 to 98. What is the olive oil company called? I would love to go there!!
⚠Hope you got the sticker off your red pepper eventually 🧐❓.
I saw that and thought about all the times I've done it. 😂😂❤
I can’t wait to try all of these salads! One looks better than the other. I also love salads when it starts getting warm!! Thank you for sharing!
Thank You Becky. After a hard day at work you are part of my distressing. You help me refocus on what's important.
Blessings!
Hi Becky. Hi friends! I want to do more salads, but I'm not a fan of any type of lettuce or kale, so these sound yummy. I don't mind occasionally but not everyday.
Broccoli salad is awesome if your not a big fan of lettuce or Kale
Yay, Becky's on. Its my favorite time to relax and watch my favorite cook🤗
Love and Blessings to you Becky! Just a heads up for everyone, there is a cucumber recall 17 states “so far”
God Bless!
🙏🏼❤️🙏🏼❤️🙏🏼
Becky, we love your show. I noticed today while doing your salads, you were slicing avocados. Be very careful your dogs don’t swallow the pit. They are toxic and will kill them. If you throw them to the chickens, be sure the dogs don’t get into the coop. $5,000 later our daughter’s dogs life was saved from swallowing one avocado.
Holy crap thanks!!! Glad I didn't discover alvacados until after my biddy was gone..... glad to know this!!!!! For future pups safety
In my country we are getting into the soup season 😂 its finally getting colder here, but salads are great for any day imo ❤
So far I have made the grinder salad and the BLT. So good! Keeping them in the recipe rotation.
Omg. These are so perfect. I’m making them ALLLLL. full of flavor, easy to make, great meal prep. Checks all the boxes. Chefs kiss Becky awesome for this time of year 👌👏🏼
I get to be lucky number 53 today...whoot whoot... Hugs from Esquimalt
Ohhhh, I loved pickle juice as a kid & now. Everyone thought I was nuts! 😂
My daughter like her dad they would drink it out the jar. Yes we had ours
@@nanfaircloth I'm 61 and still do!
Becky I always look forward to your videos and can’t wait to try all of these delicious salads. Thank you so much for sharing. 😊
Your breakfast croissants made me fall in love with Dijon mustard!!! Thank you!!! These look amazing!
FYI, including the stems of the cilantro is not only frugal it adds a bit of crunch. No need to toss them. Also, no need to peel onions or shallots when making stock or broth. Lots of nutrients in skins. I too love shallots as a base for broth or stock. Just a hint more sweet!
The view of that big bunch of fresh vegetables by your cutting board is pretty & inspiring. It’s a good personification of your channel! Homemade, home grown and fresh.
LOVE these! Trying each one over the holiday weekend!
You’re amazing Becky! You inspire me to want to be in my kitchen and prep and cook for my family (after retirement), so cooking is new to me since I’ve been head of household for five decades. I enjoyed watching you make all of your salads, and they look fantastic and easy to make. My very favorite meal that you made was your Mediterranean meal for some guests that were visiting you and you serve them baklava, and the most delicious Mediterranean meal I have ever seen anyone make. Thank you for inspiring me to wanna eat healthier and to enjoy my garden. Lastly, I also loved your soap making and lip gloss making content. You are so creative and enjoyable to watch. Thank you for putting so much joy in my life and in the lives of your viewers.
Since you buy corn on the cob in bulk from a local farmer, l saw this & thought of you. They took the cobs & made a corn jelly. They said it was absolutely delicious. Maybe try it for us. Yum. God bless you all and many prayers 🙏🏻
I made some a few years ago. It's delicious and sweet.
Fresh corn polenta…labor intensive, but soooo good!
I hope you were able to discover that label on the red pepper before you diced it up :).
I saw it too. I was saying take the sticker off before you loose it in the salad .
The stickers on vegetables are eatable. They use paper made from vegetable oil. It will not hurt you. It's not very pleasing to the eye, though.
I was thinking the same thing!
@@TracyShead-Stamey They may be where ou're from, but not where I am. Get rid of the stickers!
@user-gw8wy4ij6z I am in West Virginia, one of the poorest states, so if they are here, they are everywhere.
The salads all look delectable. Thank you!
Loved all of these summer salad recipes!!! I’m also a cilantro and vinegar lovin’ gal! Thanks so much for always providing such great recipes and gardening tips! So enjoy you channel Becky! ❤
Roasted red pepper in your bean salad instead of cherry tomatoes.❤😋
Oooh, perfecto!
Provolone would be good also. This looks like chopped anti pasta. That is popular in my area.
The grinder bean salad is delicious! Can't wait to try the others. Thank you!
These all look soooo good. This is how we eat in the summer as well.
Hi Becky! What brand of olive oil do you use? I looked in the description but didn't see a link. Thanks!❤
At the park with the kids and noticed Becky’s video have to watch
I appreciate your linking the recipes you used (from other websites), but they do not incorporate your adjustments. I will need to mark up my prints to include your variations in order to get the results as I watched on the video.
I love watching you react to a taste test! I drink pickle juice now for my leg cramps at night. I too drank the pickle juice as a child. Later in life, my doctor told me to do a whiskey pickle back every evening to reduce the cramps. It works!! I will be making all of these salads for the upcoming monthly menu. I love prepping for meals. Lets you enjoy time with you family instead of being in the kitchen all the time. Oh my goodness... that last salad looks so scrumptious. Thanks so much for the recipes Becky!
Absolutely loved this video. I totally love these types of salads more of these please ❤❤❤❤
I absolutely L❤VE CILANTRO. ❤
It tastes like soap to me and many people
@@carolmasmas6309 I have heard that. OMG, it must depend on taste buds because I really like it. Although, I haven’t tasted soap 🤷🏻♀️🤔😊
Tastes like soap to so many people but i loooove it 😊
Blech!! Cilantro tastes like soap to about 5_7 % of us who apparently lack an enzyme to break it down. Luckily for me my husband thought it tasted like soap as well.
I have found for me that it is an acquired taste. I never had it until I was an adult and originally thought it tasted like soap, but now I love it!
Becky, We have not seen your CHICKENS in a long time. Miss them while you are gardening. Love your videos!!!!!!!
I shared these with my daughters- in-law. They looks so great.
Thank you Becky they all look scrumptious!
