Thanks friends for hanging out with us while we cook up a storm! I am so impressed with my Mom's cake she decorated for my sister! I hope you are having a wonderful day :)
The salt is to cut the bitterness.
Add a hamhock to any dried beans from the garden. That smokey flavor is amazing!
Same. I have never soaked them. Idk. I just know you need a ton to get a bit lol
Brownie cutting tip. Use a plastic knife to cut them. It leaves you with nice edges. ❤. Everything looked fantastic. 😊
I appreciate the info on the attachments for the mixer! Mine were in the same condition as your moms. Going now to order on Amazon!
Freezing water in a jumbo foil pan to set salads on!!!!!…..Brilliant. Absolute game changer for summer picnics. Thank you!
Add marbles to the water before freezing, so as the ice melts the upper pan isn't dropping down and pushing the water up the sides, making water go into your food.
Hey Becky!! Baker and cake decorator for over 15 years here. You can definitely decorate fresh cakes. They don’t have to be frozen BUT your icing (cream cheese icing in particular) and your filling are both super soft. The more layers you add to a cake, naturally the more weight will press down on the bottom layers. To help with this, you could add more powdered sugar to your icing to firm it up more. I’d also suggest a much taller icing barrier wall for your filling so the filling can not spill over it as easily. Also, after the bottom three layers, add skewers (I’d personally use a thinker dowel rather than skewers) and then a cake board and then continue with the other three layers of cake. This will help stabilize your cake AND take weight off of the cake layers on the bottom and put it on the skewers and the cake board instead.
If you’d like an easier time smoothing your frosting around your cake, run your scraper under super hot water right before. That hot water will change things tremendously.
All-in-all you and your mom did an amazing job of this cake. Bravo.
Thank you so much for the tips, I will certainly try them!
I agree with all your tips. A cake that tall needs to be constructed correctly to stabalise it to avoid any disappointment.
I love how patient and respectful Becky is with her mom. I have seen mom and daughters who make faces and correct their moms even for small things. Good job Becky and what a beautiful meal.♥️
I noticed that too.... a great relationship.....
She's learned it from her mom. Her mom is very patient with her as well.
your mothers hair is very beautiful!!
Love your cooking show! However, Ham hocks cook at least 2 hours prior to adding the greens. They have to be rinsed numerous times to get rid of all the vinegar taste❤️👌🏽
Watching Becky cook with her mom was such a treat. ❤
Hi! My family owns a bakery so here’s my input 😂. It’s not how soft the cake is, it is how soft and fluffy your frosting is. The frosting looks to be over whipped. Cream cheese frosting should be relatively stiff. Freezing the cake just makes the crumb not as much of an issue when frosting. You’re actually better off refrigerating the cake not freezing it. When frozen it will sweat more than refrigerated. When it sweats the cake layers will start to slip and your cake could fall. So with a cake that has this many layers you’ll want to do a few things, refrigerate it so it is cold (not frozen), make sure your frosting is not over whipped (most important for the frosting you are putting between cake layers it’s usually best to use a stiff frosting for this. If you want a curd type filling you can mix it into the stiff frosting), do not use a cake recipe that is too light and fluffy (pound cake is generally used for cakes this height), do not put too much filling between layers. I would have used about half the curd filling between those layers to avoid slipping since this specific filling is pretty wet. I hope this helps!
Thank you for this information.
I can benefit from this information too. I made a 4 layer triple berry cake. (After watching ‘Is It Cake’ slid sideways rapidly. Luckily I had some straws to hold it up. Good tip on refrigerate over freezing. I didn’t know this. Thank you!
thanks for info! baking truly is a science
Great info. Thank you!
Although not a professional, I’ve been baking and decorating cakes for about 30 years. I’m adding this not to correct the information from the original post, all of which is correct, but to provide additional hints for those that are trying to improve on their cake decoration skills. The large icing bags are more difficult to handle. Also, the warmth of the hands tends to melt the icing so that the texture of the icing halfway through the bag and on is just not right (I do live in FL). Also, when making a barrel cake (this tall style of cake) it would’ve been helpful to use a cardboard round at the halfway point (between layers 3 and 4). Lastly, using ganache to crumb cake would’ve helped. It hardens a lot quicker in the fridge and provides additional structure. And the curd will definitely make it more slippery; thin layers of jam/curd or slippery addings.
Your Dad is a rock star, always adding the extra helping hands (and road trips!) to help the party succeed! Awesome team effort!
I am Southern and have cooked collard greens many times. I have never heard of soaking them in vinegar. You do need to wash them thoroughly as they hold on to sand/dirt like leeks do. Cleaning them is a labor of love.
Same here, I've cooked collards for years and never heard of soaking them.
I've never soaked them. They do cook up very nicely in the Instant Pot also.
Vinegar loosens dirt/grit in collards and also removes bitterness. Your moms cake was adorable. Wishing good health and blessings to your nephew.❤
Baked beans are OK, but I would like to try your home made ones.
I grew up in the South and latter spent years up north, people in the South clean it, people in the North use vinegar. Personally I don't like how it comes out with the vinegar. But it's a matter of preference. I have cooked it both ways, and no the vinegar doesn't help with cleaning. In my experience it's a time of hard work and love. But once again it's preference.
I love how the two of you have an enormous island towork on and you share a corner....😊
It helps in the videography!
Love the Mom videos😊
Soaking collards in salt or vinegar is simply to clean off any bacteria from the garden soil.
Good to know. I thought the vinegar was used to tenderize the greens
@@dgreen58facetsAlso soaking them loosens any soil and kills any pests that may have attached to the leaves. Sometimes greens can be pretty dirty. You fortunately got some great bunches
I absolutely love when you and your mom cook together. She usually has some kind of tip that she’s gonna tell you about.
I love how you and your mom share information with each other. I would love to see your mom's garden again. Your parents house is just beautiful.
Agreed!
Did they show the house? 🤔
All I've ever seen is the kitchen..
@@Heidishereandthere What they did show: kitchen, Livingroom, table all decorated, some of the den off the kitchen, patio, some of their yard and garden and their amazing view from the patio. I love the open concept of it all.
Oh my goodness what a great tip on the foil pans and the ice!!! THANK YOU! 🙏🏼❤️🙏🏼
The view out the dining room window is simply gorgeous , Your dad is precious! You All are Truly Blessed!! ❤️❤️❤️
These are some of my favorite videos of you two together cooking! Hi to your sweet mom!🩷
Beautiful Cake Susan!!! Love seeing you and Becky working together!!! And your Dad to the rescue again!!!
Becky here is a tip for following your recipe. Put the printed recipe in a sheet protector an mark off with a dry erase marker each ingredient and step as you go. Makes its so easy t find your place.
This is a brilliant idea! I’m so easily distracted, I need this too!
Geez, I would have never thought of that! Becky's commenters always have the very best tidbits! :)
So amazing to see mother and daughter working so hard and beautifully together! What a true blessing! Food looks great!
Hi Becki, I am southern and I don’t soak my collards in vinegar. However, I wash them like 3 pr 4 times. I usually cook some type of smoked turkey or smoked meat. once you cook your meat down then you add your greens but don't add more water. Collards can make their own water and cook them on low until they are nice and tender (should be a really dark green collar and not crunchy). I usually add my seasonings, onion, bell pepper (BOTH DICED), a little sugar (just a little, its not to make them sweet but to cut the bitterness), vinegar (MAYBE 3 TEASPOONS, NOT TOO MUCH, helps to make them tender) and 1 or 2 jalapeño peppers. Some people add a little bacon grease (3 or 4 teaspoon) or butter (maybe half a stick). I'm sorry I don't have exact measurements. I free pour.
This is what my mama taught me too.
Got to have some type of seasoning meat(ham, smoked turkey, smoked neck bones, etc) for greens
Yes, it's called pot liquor!
I like to dump some of the first water out depending. Then add chicken bouillon curry to my smoked meat water and collard greens. Season last.
I almost never add water to my collards aa it makes it's own liquid. Fat back, ham or bacon fat, chunked onion, salt and pepper. Serve with hot pepper vinegar. Mmm boy! Corn bread and black eyed peas. Our New Years meal and even better the next day. Am I Southern? Heck yeah. Lol.
Ok. I say this every time you cook with your mom. She is so cute !
Love you both together!!
I made boxed lunches with homemade bread and homemade chicken salad for 50 people. It’s a lot of work but there is nothing better thank hanging out with special people making yummy food for the people love ❤️ it’s definitely a labor of love❣️
That cake turned out gorgeous! Nicely done ladies. 👩🍳👩🍳
It's always a blessing to see Becky cooking with her beautiful mom. Such a sweet mother you have. Everything looks so yummy, blessings❤❤👍
The cake was BEAUTIFUL! Loved reading all the different takes in the comments on how to cook collard greens. Love your mom and dad. You have the best parents. Thanks for sharing them with us!
My husband is allergic to pork, so pretty much all southern style collard greens are out of the picture. HOWEVER, I googled ground beef collard greens and found Kenyan style collard greens. It's amazing! We love it so much, I started growing cherry tomatoes so i could make it fresh! It has onion, garlic, ground beef, jalapeño, tumeric, ginger, cinnamon, coriander, cumin, collards, cherry tomatoes, and lemon juice. AMAZING!
Have you tried smoked turkey collard greens?
U can use smoked turkey
We don't usually like turkey, but I can try! Thanks!
Try smoked turkey wings or necks. Perfect substitute, it's the smokey flavor and meat.
A smoked Turkey leg instead of ham works well.
The reason the cake filling was oozing was because you had twice as much weight (6 layers instead of 3) than you normally do along with a soft filling. It wasn’t so much that it wasn’t frozen. When I make tall cakes, I use a cardboard cake round in the middle with boba straw supports underneath. They act as pillars and help support the top weight.
Came to say this as well
I am a pastry chef and I was going to suggest this as well. Putting a cardboard round in the center that is resting on the support straws rather than the bottom cake layers will offset the weight issues. Also I would encourage you to try using a Swiss meringue buttercream. Even though it’s more work, it’s a better consistency for icing.
Susan heat the cake knife up in boiling water before you cut your Brownies, that should stop the drag marks/crumbs. Blessings to you and your family. ❤️ 🙏🇮🇪
Or just have a damp piece of paper towel ready to clean the knife between cutting.
I cut mine crossways instead of length ways....comes out cleaner and easier to do...
That's so smart... I'll have to try that next time
Wow! Lots of creative solutions to try. ❤
I just got a chance to watch this. I love these videos! Thank you! I always thought you had to drain the water you soaked beans in. Did I miss that?
I think you both deserve an award for mother and sister of the century!
This brought back memories of cooking for my daughter’s wedding. By myself in a hotel in Myrtle Beach
I brought my whole kitchen with me
Thank Goodness I don’t ever have to do that again!
Hello 👋 my oldest daughter and I have been enjoying watching you and your Wonderful mother lately, you are so blessed to have a mama like you do and she’s blessed to have a daughter like you❤ much love from My FullHouse 🌺
I love seeing you get to cook with your mom. I lost mine when she was 58. It really brings me joy to see family cooking together. Blessings to you all!
It is to help with bug removal…sometimes small bugs or worms will be munching on the leaves. Grew up on a NC farm. I normally check leaf by leaf & then wash through 2-4 washing.
Congrats on the new family member! And welcome back to your mom Susan!!! The dynamic you to share together when cooking for family events was truly missed . Don't get me wrong Becky has it going on! Love you guys. God bless ❤
Your mom did an incredible job on the cake. I was worried for her for a while, but she pulled it off. Great job Susan. You ladies are so talented.❤️❤️
I agree! I love the way you stayed focused, problem solved on-the-fly and got it all sorted. In the end it was absolutely beautiful. Well done!
Hi, Susan and Becky. First, please accept my sympathies and condolences on your loss. I know how sad and difficult these times are for both of you. If you won't adopt me, can I borrow Mark?
Thank you❤️ and yes, you are officially adopted!
I love ALL of the videos you do with your sweet MAMA!💕 It’s so obvious what a beautiful relationship the two of you have.
It's so beautiful to see mom and daughter making memories in the kitchen. You'll cherish those memories forever. Memories I wish I had growing up.❤
I am also a southern woman who has eaten and prepared my share of collard greens and have never heard of the vinegar soaking method. It might be new school but I am sure old school is better, lol!!!
In my family soaking things in a vinegar solution is a traditional step in cleaning produce/meat. It can be very common in other black families and southern cooking.
I always soak my collards before I cook them.
I wash my chicken with vinegar and salt or lime juice is good too
Hay Becky, Becky Here. Your Mom is amazing. When my mom was fighting cancer.she decided to learn how to make and decorate cakes. .she took classes at JCPenney's. Lol thats why back. But she nail it . Brithday cakes wedding cakes. For family and friends or our existing families. I love the two of you together. Make my have happy memories of days i well miss forever
I just adore you Becky and your mom. You two make a great team. It’s a beautiful time when cooking with mom. Enjoy the family and the special occasions you are celebrating. God bless
I like to mix the lemon curd with frosting to fill middle layers. It tastes amazing and makes for a beautiful slice of cake.
I just LOVE when you & your Mom get together and prepare all these dishes. It’s such a blessing to you both to have each other to do this with. And your sweet father always doing his part. Y’all are truly blessed. Thanks for sharing ❤
Your mom has the best smile! Nice to see teamwork in the kitchen including your dad!
Mom's are so great, Susan is the best, lot's of knowledge about things you only get from experience. She's a sweetheart too, Becky you hit the jackpot when it comes to family❤
I really appreciate all your mom’s tips and wisdom. Thanks Becky and Susan
For brownies...immediately after coming out of the oven - use a plastic disposable knife and slice them to size. They look perfect and the brownie doesn't stick to the plastic knife. I have been doing this for years and it has never failed me.
I love, love watching you and your beautiful Mother cook together. You ladies are so beautiful and a blessing to us. When I watch your videos,it makes me feel confident that I can do anything. God bless you, May God's peace and blessings be upon you and your family 🙏🏼❤
Your mother did a fantastic job on that cake!! It was Beautiful!! 😍 Many blessings to your sister and the new addition to your family, Thank you again for sharing.💞
That cake was stunning Susan, Becky I love ❤️ when you cook with your mom can’t wait till the next party 🥳. Thank you both for taking us with you on this journey bless you all ❤
Awesome cooking session. Always a pleasure watching you and your mom work together on an event prep. 🤗 Nice catching a glimpse of your dad also. 😆 Thanks for the shares, Becky. Everything looked delicious and the cake was perfectly beautiful. 🥳 Prayer hugs to you all. 💖🙌🏼🙏🏻🌷
I love videos when you cook with your mother, she's absolutely adorable. So are you, Becky.
Always fun to watch you and your mom cook together. I LOVE how the cake turned out! Just BEAUTIFUL!!!
Hi mom and Becky so good to see you all in kitchen
Fantastic- so fun watching the progression of the cake! You two are the epitome of “never give up”!
You and your Mom are so talented! Your Dad is a great help! What a glorious meal for a huge crowd! Lovely. Blessings
Your mom is super talented!! Love watching you guys cook together
You have a lovely family❤
What a blessing to be able to work side by side with your mom in the kitchen. . . (I really miss my mama, who lives many states away😢). . .
I really enjoyed watching this video. Everything looks so delicious 😋.
Your mom did an awesome job with the cake!🙌 Congrats to your sister and the whole family on the newest addition 👶
What a good dad! Someone doing the dishes is such a gift!!🎉
I'm from the south (eastern part) and have never soaked greens in vinegar so that's something I will have to try. Just triple wash with salt water, de-stem (for the most part) and boil them with ham hocks for extra flavor. Love all your videos! Going to try some recipes this weekend and follow along with your videos.
You two did great. Awesome cooking. Thank you for sharing. Blessings
I just love when you bake/cook with your mom! . How beautiful it is to have your mom with you Becky. Enjoy every moment you have with her. It’s such a blessing.
You have such a beautiful family. Thank you for letting us in your kitchen! Many blessings❤🙏
Hi Becky (and Becky's mom)! Thank you so much for sharing your videos with us. The ones with your mom are extra special to me. My mom was a huge baker and even sold her goodies to earn extra money when I was growing up. I remember baking with her through my adolescent and teen years (often begrudgingly) and I was hoping to have a lot of future baking time together. Unfortunately, my mom has early onset dementia, and she no longer bakes or can remember any of her recipes. Your videos with your mom are so sweet and I watch with tear filled eyes - I feel like I'm baking and spending time with my mom again. THANK YOU! ♥
I like seeing you and your mom interact and cook together. She is so pleasant & her voice is soothing. Becky you learned from her ways.
Sue, my condolences on your loss. I'm sure she is in great hands, wherever she is. God Bless.
Thank you!
Love when you and your mom bake together ❤️
Beautiful cake! Amazing job. I made one years ago that slid right on the floor. Wasn't aware of the dowel trick. I add Kraft Sweet & Spicy Barbecue Sauce 2 my baked beans, ❤ it. Sweet dad, always there 2 lend a hand. God bless
I live in NC and have made greens, collard, mustard, turnip greens all my life. You only need to wash them good and chop/ slice No need to soak them add a ham hock, bacon, or salt pork( Bacon drippings if that’s all you have) . Cover with water add salt and pepper to taste and sprinkle with a tablespoonful or so of sugar. Bring to boil, then simmer until water is reduced by less than half . You will end up with what’s called Pot liquor it’s just a delicious juice that comes from the salty meat, sweet and the bit of sugar earthiness of the greens Goes perfect with a big chunk of cornbread. The cornbread recipe is Whitelily cornmeal mix to half Whitelily self rising flour, one egg and butter milk until you get the consistency you want and of course bake it in a cast-iron.
Sounds exactly how I learned to cook them from my southern Mom! Bacon and bacon drippings are a must!!
I was coming on here to say if it doesn't have bacon fat it isn't southern!! 😂
I cook mine basically the same way. I use chicken stock, ham hocks onions, and crushed red peppers..
Cream cheese frosting is notoriously too soft. Next time use buttercream for the frosting in between the layers and crumb coat. It will hold everything in for you. Then use the cream cheese for the top coat. It looked great at end, nice save. 😅
I love watching you and your Mom work together! I'm always just but all my greens in the sink with cold water a vinegar and then rinse after and they are ready to go
No need to put that much time in to washing them. Lol I'm a custom cake decorator, you can put those cakes in the freezer after they cool to touch for a hour or so, if your on a pinch for time, and they will decorate easier
stunning cake, and all the meals look delicious, well done all xx
I just replaced my attachments too. I love the stainless-steel ones. Becky a helpful hint when squeezing the lemons or even limes, peel the rind off then squeeze, you will get a lot more juice and be much easier to squeeze
Southern here! I’ve never soaked my collards in vinegar! I cook my collards in my pressure cooker, cooks in half the time and infuses the flavors in the greens more!
To add the missing lemon to cakes you could take lemon extract mix with some powdered sugar and a little water drizzle it on top of each layer before frosting.
My condolences to your family Becky.
If you freeze your collards before cooking them it will tenderize them. Add some cabbage to your collard greens when cooking and it will sweetened them some.
You all are such a delightful family! Susan, that cake is just dear! You all did a great job. The food all looks wonderful as always.
When I buy bulk garlic like that I put it in a mason jar w/lid to put in the freezer.
Hi Becky what a beautiful meal you all prepared. Your Mom’s cake was so awesome ! You all did a great job. It’s super when everyone participates helping out ! You are all such a loving family. 🥰🥰
Love seeing you and your mom cooking, baking together!
Cake looks lovely, Susan. Great job you two! Dry beans cook up perfectly (AND quickly) in the Instant pot, and then you can let them simmer in the crockpot after.
For the collards boil the ham hocks in water for a good hour or so, then add the collards. The collards will pick up the flavor so much better.
I agree! A smoked ham hock makes the collards taste So good 😋
Another beautiful video with you and your Mom! Love it!
40 people is insaaaaane, great work Mom and Becky ❤
It is nice too see every one pitches in too help. And too see Becky and her Mom in the kitchen together.
Definitely need bacon grease for Southern Collard Greens to sauté your onions. The instant pot does a great job with them! A little sausage, bacon or ham thrown in is delicious! Hot pepper vinegar! Yum!
Becky, you are so blessed your mon is so sweet. I just love her.
You have a wonderful Mom and Dad!
I have made greens for 36 years. I don't know if they are southern or a twist of it. I just know this is how my godmom taught me. Here's a few tips from my family to your's. With each leaf, you scrub the front and back really good for bugs, dirt or any other unwanted thing/substance. Stems were for animals, composting or discarding. The groundhogs here love them. I cook my greens with smoked hamhocks and salt pork that is cut into pieces. Although she cooked greens 6 to 9 hours, I make mine in my 22 quart roaster overnight. It cooks the crunch away and they are really tender. Also, we always make cornbread with greens. They soak up some of the juice which makes them extra delicious. I make them a few times a year, but especially on Thanksgiving. 😊 Greens are a family favorite.
Dear Becky. The vinegar ensures that the bacteria still on the vegetables get killed. So much fun to see you both cooking. Your mom is so sweet. You and your famelie are so blessed.♥
I love her mom too and what a blessing their family is and her Dad seems like a wonderful man as well.
You can put several collard leaves together and cut like you do basil. I add alittle smoke flavoring to the greens if you don't use smoked ham hock/or turkey necks or leg.
I've been cooking greens for over 40 years and never used vinegar. If you clean them well and it takes some patience to clean them thoroughly, and cook then long enough you kill any bacteria left on them after cleaning. Collard green are bitter anyway so putting them in vinegar makes no sense to me.
Some vinegar does help with the bitterness of greens. We always make cornbread to go with them. And rutabagas are great with them also!
@@conniefortner8750I was taught to counteract the natural bitterness of collard greens to add a little sugar.
Any time you are in the kitchen with your Mom, I know it will be a video I will love. Thanks for bringing us along for your big cooking adventures.
OMGOODNESS THAT CAKE!!!! I LOVE WATCHING YOU TWO.
I’ve discovered that you get nice, clean, brownie edges with none of the beautiful crusty top disturbed when you let them cool completely in the pan. Then I use my largest, sharpest knife or a pizza cutter to slice them without that typical up and down, sawing motion. You’ll find they come out perfectly.
Hi Becky I am a cake decorator. If you ever make a cake over four layers go ahead and dial and board after the 3rd or 4th layer this will hold the weight and keep it from squishing out your cake filling. Also cream cheese frosting is really soft and not great for cakes that have a filling. There is a good for cream cheese buttercream recipe that uses vinegar and it's really good. You can find it on RUclips. When you do a dam to hold the filling in it needs to be stiff consistancy and you need to do 2 rings 1 on top of the other. Then go along the inside of the damn with a small offset spatula dragging it from the top to the bottom ring to make a solid wall. I hope this makes sense and helps if you ever make another talk cake. These are usually called double barrel cakes. It was very pretty!
Dowel not dial
I say it all the time I love to watch you and your mom cook together! Love your mom’s cakes!
I love watching you and your mom cook.
Just love watching you and your Momma! Blessings to your sister & husband. And HAPPY BIRTHDAY TO YOUR NIECE!🎉🍰🥰
Vinegar makes the collards a bit tangy and brighter.
YOUR FOLKS ARE SO BLESSED and SUCH A BLESSING. 😊
Hey, Becky and Susan! Love seeing your two playing in the kitchen together.
Lil hint for cutting brownies. You can certainly use the parchment paper method and lift the brownies out for ease of cutting. But if you use a plastic knife the brownies won’t stick to it. Learned it from my mom who learned it from one of the camping buddies. ❤
Everything looks so delicious.!
Happy birthday to the birthday girl and congratulations to the new mom and dad and their new bundle of blessing.!🎉❤🎉❤
put your spent lemon peels in a small pot and let them boil on the stove while your working this will make your kitchen smell even more wonderful
I started putting them in a bag in the freezer. Lemon and lime then putting a couple of them in the dishwasher when I run a load. Helps with degreasing dishes.
Beautiful job Susan! All the food looks delicious! Becky, you and your mom always rock these big events!
