Beef stroganoff

- Ingredients
- 600g beef fillet, sliced thin (rump will also work well)
- 1 brown onion, sliced thin lengthways
- 200g button mushrooms, sliced
- 2 tbsp grapeseed oil
- 50g butter
- 2 tbsp flour
- 400ml beef stock
- 2 tbsp Worcestershire sauce
- 1 tbsp dijon mustard
- 3 tbsp sour cream
- Salt and pepper to taste
- Egg noodles to serve
Method
1. In a large frying pan, heat the oil and seal your beef in batches until they have good colour.
2. Once all the beef is sealed off, remove from the frypan and set aside.
3. Add the onions to the pan and sauté until they have some colour and start to soften.
4. Add the mushrooms and cook for 3-4 minutes.
5. Next, add the flour and stir well. Once all the flour is stirred through, pour in the beef stock and mix until you don't have any lumps.
6. Cook for 10 minutes or until the sauce is nice and thick.
7. At the Worcestershire sauce, mustard and sour cream and mix well.
8. Add the beef back to the pan and stir through.
9. Serve with buttered egg noodles and enjoy!
I thought I hated beef stroganoff... turns out my mom used to make it with ground beef and canned mushrooms soup.... I feel green at the memory. She did her best on a limited food insecure income. I'll have to make this one for her. I'm sure she'd love it.
Moms can take so little and make it work, somehow... Seasoned with love ❤️!!
My Midwestern grandma attempted Spaghetti: Macaroni & cheese covered in tomato soup. I doubt she ever had Parmigiano-Reggiano, ever. Farmhouse cooking & she did make many things oh sooooo delicious 😋 And a hand made quilt to snuggle in too!

Eh, not everyone likes cold noodle dishes. Especially in his part of the world, they are not very widely known or eaten. Sure, they are good, but there is kind of a hurdle in getting people to want to try an ice cold, spicy noodle dish lol. I've had it with ice cubes chipped up, the cubes were made of beef broth. Definitely not something everyone is interested in

Beef Stroganoff is creamy, smooth and velvety, just this side of heaven. Definitely worth a revisit. I do enjoy your staccato knife rhythm slicing the onion and mushrooms, a veritable symphony 🎶 If there was a way for me to contact Babe, I would use that back channel. I'd love a "kitchen tips with Andy (+jingle, of course)" on when to use different types of onions. I'm honestly never sure when to use what. Thaaaanks! :)
It looks great! Mine was mostly made with hamburger or the cheapest cuts of beef I could find cubed up, fried and then put together with a mix of cream of mushroom soup, sour cream, Worcestershire, and dry onion soup. Heat until all blended, serve over egg noodles.
Didn't bother adding salt because there was so much sodium in it already- that's one reason I stopped making it, alongside my then-wife not being a huge fan.
Please, do a Bibim naengmyeon. I don’t know why but I really, really long for that.😊

Well, could I ask for a veal parm?
Could we see all the different styles of so-called American parmesan or parmigiana, etc., sandwich (or plate), chicken, veal, eggplant, shrimp, whatever else is out there? Some places will charge you for veal (which used to be cheap) but substitute pork. It's not what you paid for it, but it's not necessarily a bad sandwich.

Two ingredients that made a huge difference to my cooking once I started using them more. The anchovies in the Worcestershire sauce is the magic
why do all these youtubers waste good wagyu in dishes that completely hide the buttery flavor of wagyu. You coulda gone with any decent grocery store beef filet for that, its covered in cream and tons of mushroom oomami. Stop it with the wagyu, YTers.

Definitely a classic favorite in my kitchen.
I am a chef as well but instead of Dijon and Worcestershire substitute 1 can of tomato paste. The difference is amazing. I also change up the mushrooms sometimes and do shiitake or portobello.
Iam a chef as well and I have had many disputes with chef's that say tomato paste should be in Stroganoff. Traditionally NO, Russians don't use Worcestershire sauce, but they do use mustard and they put in chopped dill pickles and chopped parsley.
