I’m strangely obsessed with this show, and slightly in awe of the fact that Brad makes things I initially think “oh no way” about and by the end of the video I’m like “oh man, that looks so good”
lax is just salmon lol. Gravad lax direct translation is buried/grave-ed salmon (like in a cemetery). I like to get one with a lot of fat, it tastes good. We always do dill, microplaned lemon peel, crushed white peppercorns, salt (without iodine, otherwise it will oxidise) and sugar (about 4tbs of each for a kilo of salmon). If you're feeling feisty add some ascorbic acid (iow vitamin C) which preserves the colour and keeps the fat together. I also sometimes add MSG for *flavour*. Just put it in a plastic bag on a plate and throw it in the fridge. Try to flip it at least once a day. Drain the fluid when you feel like it. Its done after about 1-3 days, depending on when you are going to use it and how you want it. If you want you can wash the salt off slice up and serve. If you want to spice up the presentation add some chopped pickled beets on top before slicing and remove after a while. It gives it a lovely red "hat". This is a staple food every Christmas, Easter and Midsommar. Also pair with Hovmästarsås, a sweet dill mustard sauce thing. Its very good.
I made this last week, with just sugar, salt, pepper, tumeric and dried dill, plus a few drops of liquid smoke. I just wanted to see how it would turn out. I did everything else by Brad's instruction - weighed it down, put it in the fridge for 4 days, etc. It turned out AMAZING. I saw another video where the guy cured it for just 24 hours, and then dried it in the fridge, uncovered, for another 24 hours. And the texture seemed more firm. So I may try that drying step next time and see what happens. But this is a solid recipe that everyone needs to try!! It's awesome! Edit: Just realized that after Brad started slicing, he said an option would be to leave it out in the fridge for another 24 hours before cold-smoking it. Genius. I would recommend that for the firmer texture.
