I made this today, didn’t use base gravy but water instead and wasn’t sure about mix powder, instead I used curry powder and it came out amazing!! Thanks for sharing your recipe

I've made this recipe about a dozen times for myself already and when I get it right, it tastes just like a restaurant. It's so delicious. I still mess it up from time to time. My question is, what's up with adding the gravy little by little throughout? Cant I just add plenty to start with and not have to keep adding? Also, do you cut your gravy with chicken stock? I don't particularly care for the taste of the gravy itself, but I find when I cut it with about half chicken broth, it comes out much better. Thanks for the recipe! This is one of my favorite dishes and it's such a joy to be able to cook it at home.
Pleased that you have had success. Adding the base gravy in small amounts maintains the temperature and allows the sauce to reduce and caramelise for superior flavour. If you add it all once you’ll lose the heat. By all means add chicken stock if that’s to your taste. The most important ingredient in the base gravy is the onions 🧅. Never thought I would like this one because of the way it looks. It's now one of my favourites!! A pinch of garam right at the end:) Ohhh and I picked up this cilantro chutney just for fun and use it when my cilantro has gone slimey in the fridge. Just cut the lemon out. The good thing about paneer saag is you can absolutely load it with green chillies and it will be difficult to anticipate as in peoples heads red = spicy, not green

Try serrano peppers, jalapeños are not that spicy, and if u fry them in oil before adding the food ur frying, they give a special flavor like in fried beans.

Yes they are. Palak is specifically Spinach, whereas Saag generally means leaves, which can include spinach, mustard greens, fenugreek, coriander, etc.

+Simrock Kaur not recommended but you could just use water. Don't be scared of making base gravy. It takes a few hours but you can make a large batch. I have a new video coming this week to expand on my existing base gravy video.

This looks really good. Could you please use a wooden spoon or spatula next time. That metal spoon scraping sound makes this video almost unbearable to watch.
What is base gravy? What is mix powder? Why do you substitute mint sauce(recipe?)OR lemon juice for those two don't substitute each other? why do you scrape your metal pan with metal utelsils, for half of that pan is now in your food? Back to culinary school to you!

I saw in a different recipe that they used both thai chilli and jalapeno to increase the spiciness
Also try scotch bonnets!

I make my base gravy in a pressure cooker which significantly speeds up the time it takes to cook it

Tofu is a good substitute. But Indian cottage cheese (aka paneer) is preferred.
