I can never convinced myself to visit any Szechuan restaurants and order myself a full blown Szechuan courses like you guys did here. I have a lot of reservation for this cuisine. The color and the extreme amount of peppercorns used turn me off badly. Anyway just want say that your conviction to explore and introduce Chinese food is worth applauding to. I absolutely love Sichuan food, my favourites are boiled fish (I agree with your dad that it is the yummiest fish I have ever had), maps tofu, cold noodles, and eggplant. I first discovered this cuisine watching Anthony Bourdain. I’m in Melbourne and Bourdain raved about Dainty Sichuan where I have had all of the above but they also have an incredible eggplant dish that is crunchy and toffee-like on the outside and soft in the middle. It’s time I went back to Dainty Sichuan I think! I can’t wait to watch more of your content. Thank you!

Sichuan and Hunan have been locking in competition who has the best Chili pepper dishes and claimed they have been Chili-spicy for thousands of years, which is completely false. Wow, look at you, you are totally an expert in the philosophy of sichuan cuisines. I still remember your earlier clips on hot pots. Comparing to then, you have learnt so much about sichuan food.

    • @xingyu1386
      @xingyu1386 4 года назад

      BTW just when i was wondering how you hit Huiguorou, the all time classic, you just said baidu. No wonder your knowledge is so different to the stereotypical western chinese learners. Kung pao chicken isn't so common in sichuan anymore, but i have to give u credit for putting it on your list, after all it's THE dish let people outside sichuan start to know sichuan cruises, and it is a genuine sichuan dish. I am very impressed you put kung pao chicken on your list after you've done your research on how it should be like instead of blindly following the stereotype trend.

    麻婆 in Sichuan dialect means " pockmarked man's wife". There is a pockmarked man, nickname as 王麻子,who has a beautiful wife, people call her 麻婆,which is short way stands for "wife of pockmarked Wang", she knows a special way to cook the tofu, that's how the dish name come from.

Fuiqi feipian (my fav out of the bunch because it's really good if you're eating it with rice!) , shui zhu yu (the boiled fish dish), mapo tofu and sometimes laziji (mala chicken). Guys, give them a try at your nearest Chinese restaurant!

    what a lovely dinner with your lovely parents (and the good food)!!!!
    夫妻肺片is my fav dish too! and coming from the South/Guangdong, I normally just say "饮啖(or喝点吧in普通话)“ instead of "饮杯(喝一杯or even干杯)” simply becoz I need to slow down my consumption of alcohol coz drinking with my crazy frds usually lasts the entire meal (not to mention the entire night, in many cases)...
    And, I love how you are very comfortable talking about Chinese food and culture ~ you really are our 同胞 now :)

      @@BlondieinChina it‘s the one from Chinese Cooking Demystified - I love Chris & Stef. It’s actually a lot easier than a stir fry with raw meat. I’ve made it with pork loin (skin on), which was on special.
      I gave up cooking Chinese a few years ago because cook books were just not good enough. CCD single-handedly got me back to Chinese cooking. They are just the best at explaining a range of techniques and aspects of various Chinese food cultures that have been badly dealt with in most books.
