I like both. For chilli crab, I prefer a loaf of bread and tear pieces of it dipping them into the sauce. Getting the meat out of the crab is just a distraction! The red roe found in the crab shell (if available) is the reward!

Singaporean here, we have many different ways to eat crabs,
Ginger and spring onions (姜葱), Black pepper, Cereal, Chilli, Salted egg, Steamed with huadiao wine etc. The different ways we cook them largely depends on the quality of the crab as well. If it's really fresh (like the ones in the video), my family would prefer to steam it to showcase its original flavors! But my all time favorite since I was a kid was always been the cereal style 😊

Steamed crab is the traditional home-cooked crabs for Chinese families in Singapore. I used to buy 7 crabs for $10 from Giant and we steamed them. Nowadays, we just order (usually 3 different types) from sea-food restaurant and they are home-delivered.

I'm a Singaporean viewer here and so glad you and your parents got to try both flavours! Indeed chilli crab flavour is the one known to tourists but locals will tell you that we love our black pepper crab as much or if not, more! 13:30 you said that right - the marriage of the sweet juicy meat flavour and the aromatic black pepper is just perfection!

Singaporean here, definitely prefer the Black Pepper crab over Chilli crab. Plus, I'll always eat the crab with rice so the black pepper definitely suits better. You should try "Shell-out" where they'll serve u most of the seafood with rice and u can choose ur own sauce. It's a unique experience coz they serve it on a table cover rather than a huge plate. Usually try a combo of black pepper and salted egg yolk.

As for the crabs, you are right black pepper beats chilli crab hands down except when you need to dunk your bread or mantou into sauce then chilli crab sauce is the best. In Singapore, a third variant of crab has emerged as the top choice which is Salted Egg Crab.
So Singapore top four crab dishes are :
    1. Salted Egg Crab

Sometimes I just order the Chilli Crab to go, cook some pasta, mix it in, adjust for sweetness/saltiness/acidity and voila - Chilli Crab pasta! Not the cheapest pasta dish but it is to die for! 😋

I’m from Singapore. Indeed we don’t eat these often but usually I’ll order both! There are actually other flavours that are pretty common in Singapore such as white pepper crab, salted egg crab and crab bee hoon ( rice vermicelli). The last one is really awesome as the rice vermicelli soaked up all the goodness of the crab flavour and gravy.

That looks amazing. If you want to continue the crab theme, try Cantonese style stir-fried crab with ginger and shallots (aka spring onions) on a noodle base. No big flavour hits like pepper or chilli, but it really brings out the flavour of the crab

This is similar to Thai style which uses vermicelli. We have this in Singapore too.

      On menus in Singapore, I can think of 3 roughly similar crab dishes to the one you mentioned for “bringing” out the flavour;
      薑蔥螃蟹/蔥薑螃蟹 (exactly the same)
      清蒸螃蟹 (Steamed Crab)
螃蟹米粉 (Crab Beehoon or Vermicelli, mostly served in a claypot)

@@BlondieinChina Another more popular Cantonese household way to cook it is to steam it. Same ingredient. Even less kick from the spice, the flavor comes mainly from the crab.

Definitely BLACK PEPPER CRAB! I came here in Singapore from Shanghai three weeks ago to visit my friend, and we are both crazy about mud crabs. Everytime we go to a restaurant, we order both black pepper and chilli flavors. We do enjoy both flavors, but the black pepper crab is the heaven.

Singaporean here, I personally prefer black pepper crab!! But damn the fried mantou with chilli crab sauce combo is to die for.
Also, as to why the chilli crab is not that spicy - it's because the chilli crab sauce is actually tomato based (which is why it is sweet as well)
(P.S. slightly off topic, but if you ever have a chance to, try dipping the fried mantou in condensed milk :D)

Oh we love both these dishes so much. We tried different versions of chilli crabs when we were in Singapore. I personally like the one a little less "tomatoey". We are so jealous that you can have Singapore chilli crab. Cheers from San Diego.

Singaporean here. As you mum says Chili Crabs are more of a crowd pleaser, but it isn't a difficult dish to make, you can easily google the recipe and make the dish back home. But Pepper crab requires more skill and balance in the Spices. Its hard to find good Pepper Crabs, but Chili crabs generally all taste the same. What locals like about the Chili Crabs is as what you described, the Sause with the Mantou combo, We love it so much so that in weddings now there is a option to choose a dish where guest are just served Mantou in Chili crab sauce.

I'm Malaysian. As much as Chilli Crab being a good seafood meal, we normally have variations and accept Black Pepper and Kam Heong as staples or alternatives. Chilli Crab is no doubt the best choice to eat as it's much easier to go with any other dish.

As a Singaporean, we love our spiciness. Like you had mentioned that the chilli crab is more sweet than spicy, we prefer the black pepper crab. Chilli crab have more history, the black pepper crab is more of a new invention recent decade. Actually there's no need to compare. Just order both and enjoy the best of both worlds.

      That is absolutely correct.
And salted egg crab came way later but is a very strong contender for being the favourite.
