It was a sad day when Taco Bell got rid of their Enchirito.. but this is a good homemade version. We’ve done a similar thing at our home. Whenever I got the Enchirito at Taco Bell, I would have them add sour cream on top. Really took it to the next level for me haha. black olive slices or jalapeños work well with it too. I used to love the Bell Burgers back in the day too! They're super easy to make at home as long as you have Taco Bell Mild Sauce...which you can buy in bottles at Walmart or from Amazon Fresh.

I remember the olives too! My mom always let me get extra olives, including on the inside of it. ❤️ I also miss their mexi-melts. My mom got those all the time and got me hooked on them. 😊

OMG, like you we are encharito fans and Taco Bell just recently had the encharito back for a couple of weeks. Never thought to look for a copy cat recipe but my husband found yours while looking at videos. Yummy! We had them for our Christmas dinner and they did not disappoint!! Thank You!!
The modern Taco Bell menu sucks compared to the older one. If you’re old enough to remember, they used to have a taco burger, the bellbeefer, also the chili cheese burritos were awesome.
I discovered enchiritos kind of late in relationship to how long Taco Bell has been around. I absolutely hate ordering anything so I tend to get stuff that’s easy and common but one day discovered enchiritos and that’s what I’m talking about. I think it’s downfall was that they put under “specialty “ instead of being front and center taco or burrito item. It was love at first bite. ❤️

I'll tell you something that's even better than your canned enchilada sauce and it is foil pouches of Frontera brand enchilada sauce. They have mole too. Also Taco bell sells small containers of "red sauce" on the side for cheap and it mimics the old style enchirito sauce.
I LOVE enchiritos, but when I used to get them in the seventies they were made with corn tortillas. I have always liked corn tortillas better then flour tortillas. I will try this with corn tortillas and see how it stands up. Thanks for the recipe!
looks good, here in Indiana when they originally came out they were Enchirito's no refried beans 3 black olive halves , they were delicious lately they added beans here too, as for me, that ruined them but the sauce was still delicious
I have been making mock taco bell enchiritos for a few years now (my Grandma looooves them) and I must say one thing to help you achieve that authentic taco bell flavor that we all have come to love. And that one thing is... "Taco Bell" brand mild sauce. You can get it in the bottle form @ walfart or be like me and walk into your local Taco Bell and just fill your pockets full of mild sauce packets. I sometimes just ask them for a taco bell bag and go fill that up with sauce packets. You need a lot so go crazy! It's all about the sauce baby!!!

Like your version, too; however, one suggestion: I'll smear the beans on the tortilla first, then continue with the grd beef, etc (seems it will be easier and not mess the grd beef addition). For me, it'll be with blk olives and sour cream, too. Am def going to be putting these together. Ummm, will have to locate the TB Refried Beans, too; they're the best!! Thanks for sharing!! You can always ask them @ Taco Bell to make an enchirito for you special. Tell them you want a "wet" burrito. Depends on the people working at the time, some won't even try and some are like ok cool.
Lucky for you but the Taco Bells in my area stopped making special orders. They also eliminated Green Chile salsa WTF? Seems to me Taco Bell is turning into "Taco Johns" which is a Midwest Tex-Mex chain that is primarily focused on drowning everything in Cheddar Cheese, which is what Taco Bell is doing now.
If you want to go back to the 70's put a little more cheese and 3 sliced black olives across the top. I miss the the refried beans and Spanish Rice in the side order cups.

I put my flour tortillas on the burner for a minute like you did, loaded them with the meat, some Swiss cheese, refried beans and lots of cilantro! I worked there from 1988-1994 (with a hiatus or three) and by time I got there it was a flour tortilla. They had two kinds of flour tortilla, one for soft tacos and one for Pizza shells and Enchiritos. The one for Enchiritos was super-thin and very round (die-cut). They would turn to goo if left in the steamer cabinet too long
They finally brought back the enchirito and t's terrible. Mine was about 1.5 inches thick -gross, and wrapped in a huge flour tortilla. I'm disgusted with taco bell. Plus the new version $$$$ compared to original one not costing much more than a taco.
I live in LA and the day I went to Taco Bell and found out that enchiritos were discontinued, I went into mourning! The kind of hard-core depression one might experience all dressed in black during a Downton Abbey funeral! Heck, I'm still in mourning but I'm willing to give this a solid try! One needs to recognize and appreciate a hard-core Taco Bell fan!

It WAS the old style sauce. Enchiritos were made with the red sauce that is in the bean burritos and burrito supremes

That’s how I make the sauce is a 50 / 50 red Chile sauce and Taco Bell mild sauce
Oh and to make it even simpler I also go by Taco Bell and order meat bean and cheese burrito as my start point
