  • One of the best parts about coming home for the holidays is my mom's home cooking. Here is mom making one of my favorite dishes, a popular southern Vietnamese street food in "Momma's Big Kitchen".
    1 pound fatty ground beef
    1/4 cup pork fat trimmings
    (No pork fat? Use 10 oz ground beef + 6 oz ground pork)
    1/2 diced red onion or 1 shallot
    2-3 garlic cloves, minced
    2 Tbsp oyster sauce
    1 Tbsp mushroom seasoning/chicken bouillon
    1 tsp black pepper
    1 Tbsp sugar
    1 Tbsp olive oil
    35-40 large perilla leaves (lá tía tô), grape leaves (lá nho), or wild betel leaves/pipe lolot (lá lốt)
    Variations: You can add a couple Tbsp lemongrass, crushed peanuts, or a tsp of five spice seasoning to the filling
    Makes about 35-40 rolls
