I made these today, 1/1/23. These were the juiciest best pork chops I've ever made. The seasoning was perfect. The rosemary salt I love using. I had just enough left to do 4 chops. This dude CAN cook! I really like the tempering step. I’ve pan-fried thick chops like this and they end up dried out before the center is cooked through. No more!
Make sure you get well marbled chops and baste the hell out of them with the browned butter and then let them rest for 5-10 minutes. Shouldn't get dried out.

OK, OK...I know this video was made THREE years ago but!...I made this last week and it was FANTASTIC!....chops were great but the SAUCE, wholly cr*p on a cracker...a winner to be sure. And, the true measure is; my wonderful wife who is not really a fan of gravy/sauce (can you imagine that?) not only loved it, but she also grabbed a couple slice of bread to sop it up as well!!...too funny. I'm 48 and just now learning the joys of cooking for my wife. Did these chops and his roasted taters with a bacon wrapped asparagus and it was amazing. I missed on the sauce though. Could not get it to reduce. We'll try again. =D Thanks for the videos, I watch them even if I'm not interested in the food as you're so entertaining. =D
If you have time for a dry brine, i’d highly suggest that for chops. Makes a big difference especially if your chops aren’t the thickness of these. It’s easy to do before work. Also, let that pork REST 7-10 minutes after cooking BEFORE slicing into it. Super important to let the juices redistribute. Greets video. I’m going to try the sauce.

This is the best pork chop recipe I have eaten. Your Rosemary Salt is outstanding and bone-in pork chops are the best. Same with a bone-in Ribeye. I love chewing on the bone. As one Chef to another thank you for your videos, Sonny. I used some dry Sherry as well as freshly squeezed tangerine juice and the Balsamic vinegar when making the sauce.

It's very simple dude. Take your very clean pan or what ever it is, coat these parts or part in a good oil, very thinly, ( shiny but not to wet) warm up your oven to flat out, jam it in there for about an hour. Shut the even off after this time and let it cool down in the oven until cool. You will have done the job, honestly, it's not hard at all

I just made this for dinner but my grocer didnt have bone in pork chops so i just bought some smaller ones eith decent marbling. Served it alongside carrots sauteed with butter, salt pepper and brown sugar, cross cut potatoes tossed with peanut oil, salt and pepper and roasted in the oven. This was sooooooo good.

Tried the rosemary salt first time last night. GREAT! But I put too much on my steak. Always easy to add salt but impossible to remove it.
