I loved seeing the Ava in its natural habitat! What a lovely couple! Congrats to you both on successfully combing excellent sailing and refit advice with charming, funny, day-in-the-life content.
The cooking lesson was just too much fun !! Hope Ava decides to do more episodes in the kitchen (galley), she is a wonderful tour guide also. The idea that we learn sumptin in each video whether it is boat repairs, maintenance, building dodads, and now cooking on a sailboat. Love you two !!
I'm amazed how this channel evolves so nicely, with Ava contributing more and more. The episodes feel somewhat less scripted and planned - take that as a complement. But it does add to the cozy feeling of watching you two have fun making these videos. So keep up the natural spirit, and have a happy New Year. Cheers.
I joined this journey way back when Mads first acquired this boat and was concerned that after enjoying the lengthy renovation that the actual sailing content may have lost my interest. I neednt have worried. Its you pair that are holding my interest. Thanks Guys and Happy Sailing in 2023.
"Cooking with Ava" is so enjoyable to watch. The "mistakes" keep it very human - not unlike watching my wife cook. "I'm trying something new" is always the start of her kitchen adventures. I'm the technical one (although she has the engineering degree vs my science degree). Together, life is an adventure worth living.
@@FrostyDog9186 - My wife is a good cook. My need for fine dining is relatively low, partly due to being diabetic (thank you Agent Orange). But today she made prime rib. She can do no wrong now!
On a boat we find that cooking often requires a dollop of ingenuity since many specified ingredients are often not available so substitution is required. The ability to go back to the store to buy more is a rare luxury. We carry a lot of dried and powdered items and have had to experiment in how to use them in other's recipes instead of fresh as specified. Not all experiments are successful but we often eat the disasters anyhow.
EXCELLENT EPISODE! Really great choice to keep it very loose, lots of 'mistakes', lots of spontaneous, candid interaction. Very good instincts. Rock on!
Companionway looks great, but, Ava, you're the star of the show! AC: normally the heat exchanger's live below the waterline, I'll be interested in your unit, if it arrives in time. Oh, and the guy in the market spoke wonderful English!
yes, Ava is lovely, and Mads has a unique way of describing things that are very funny. Actually those little cakey things looked yummy and if being a tad overly buttery is the only problem, then the next batch are sure to be perfect!!! Most old fashioned cooks, don't look at cooking as a science. It's just something, which after trial and error improves.
Glad to see that Ava was not disheartened by the bad egg experience. However, what if the bad egg had been the last egg she was cracking into that large bowl? Crack eggs into a smaller receptacle before transferring into a large bowl. That way, if one turns out to be bad it can be thrown out without wasting all the others. Edit: Happy New Year.
We try to flip all of our eggs every day or two, turning them over in their cartons so the yolk doesn't settle. We don't refrigerate them even in the US and have had no major problems with them. We do crack eggs into a separate bowl -especially after they begin to be a little older. USA eggs that have been washed and refrigerated do not last nearly as long if kept this way compared to eggs in other countries where the natural outer coating has not been washed off. If they are allowed to warm to room temperature and air dried so they are not covered in condensation inside their crates for a long time they do much better. We usually will open the crates when we get back to the boat and let them warm up in the sun outside in the cockpit until they warm up to room temp before bringing them in. Watch out for bird predators doing that though, some love to swoop in and make a mess trying to break and eat them.
Great baking, far better than the TV types. After all that intense pastry and egg work at least a week of fog time is necessary, perhaps add some pre chill days for the air con to arrive.
Holy cow! This is probably one of my favorite episodes! Ava, I wish I enjoyed life as much as you do! You are a model for us all! And i am totally stealing that companion way latch idea! Just awesome!
I truly enjoyed the "cooking with Ava" part of the video. You two make enjoyable videos from the DYI projects, cooking/baking to sight seeing. Safe travels and Happy New Year too.
Knowing you Mads, this is most likely not an issue, but I noticed that the top edge (all edges??) of the removable companionway step unit was "raw??" (well unpainted) plywood. Somehow I am certain that it is sealed against all of the pressure possible times a factor of at least three, but giving a a coat of nice white epoxy may make is look more SPIFFY. ENJOYING IT ALL!!
I loved this episode. probably one of my favorites. I laughed so hard with you two doing the pasteis de nata. I love the fact you both laugh at yourselves, and enjoy the process, great to see !
I just love the way you guy's turned the channel from not only DIY, (which I follow from the very early beginning) into something that goos hand in hand with every day life. I'm sure, it must have been a rather discomforting idea stepping out of your comfort zone and in away creating something new to the DIY show. Keep up the good work, and to you Eva, please do not change and keep making a mess
Ava, I clean before baking too. 😂 Pastry dough is so finicky. Looks like it turned out great! Mads, I like your attention to redundancy. Ava keeps you fed and you keep her safe. What a team!
I just love this channel, Mads has a unique disposition that draws me rite in and the relationship between the two of them is so genuine, it's really hard to watch an episode without feeling happy for them. I wish I had Mads carpentry and PC skills, everything he touches turns out so beautiful, I would love to buy that boat if they ever stop sailing, it just gets nicer with every episode. I love this content !
Yes it would a brilliant boat to buy. It is probably the most high tech boat on the seas right now, for its size. I fyou were to buy it, you would require a 10 day systems's course just to take advantage of it's technology!
That was a fun episode to watch. Thanks for the laughd and please keep it light. Just love the way that Ava is so honest about her fascination with things like cobbles that European folk take for granted everyday. Very refreshing to hear the view from a fresh pair of eyes. Wishing fair winds for Canaries passage soon. Love, peace and a Happy New Year.
I love how DIY fun has morphed into fun. All part of the sailing channel narrative. I look forward to more of your story. I agree that cracking an egg into a ramekin before adding to a mixing bowl is the way to go.
Ok that was fun, from the "that didn't work" to the "little to much butter" it looks like y'all had a fun time and it looks like a good dessert as well.
@21:33 OMG! my wife & I both jumped when we saw your wrist across the front the saw. Not worth it. Loved the episode, the feeling of getting things finished is awesome! The cooking segment is pretty hilarious too. Keep it up!
Mads & Ava - thank you both very much for your videos. I look so forward to watching them each week and you never disappoint. Happy New Year 2023 to you both and fair winds as you continue your adventures.

Love the Mads and Ava cooking show! You both play off each other so nicely. 🙂 Hopefully, you get a good weather window soon. Looking forward to watching your passage westward. Best of luck!
Awesome fun guys! The cobblestones were amazing! Cooking and carpentry are similar, messes and mistakes will be made, as long as the result is good is what matters. The pastry and the companionway steps came out great!
Excellent episode guys! Both of you are really coming out of your 'shells' in the latest videos. Love the little bits of madness! Happy New Year to you both & fair winds for this years ventures!
After. 5+ years of interrsting and educational content, Ava's content is refreshing. Each week, I look forward to your Sunday's RUclips videos. Keep it up, thanks, and Happy New Year. Cheers.
Your episodes are only getting better and better. Your exacting nature and (loving) teasing of off exact is simply THE CUTEST! From building to cooking and FLIR backing combined is so enjoyable tp watch. Fair winds and full sails. Sending positivity to you.
Your best episode yet!!!! :-) :-) I just LOVE Eva's (Ava's?) completely natural ease in front of the camera. The mistakes and laughter between you is also very endearing. I have been watching you for years, and am enjoying your channel more and more with your growing content delivery!!!

Hi , have a great new year and the cooking was like a West , tart with some thickening to give it strength . Yes it is harder than one thinks making those custard tarts as our home kitchen has seen the fall out after giving it a go , really glad our local LIDIL,s are cooking them now . Your always fun to watch and enjoy your selves . All the best on your adventures .😀👍👍👍👍
