Perfect Macarons Recipe for Beginners [ASMR]

  • Love Macarons but you're always frustrated to make them, this macarons recipe will point out everything you need to bake perfect macaron shells even if you're a beginner.
    ▶️Ingredients:
    64g egg white
    60g sugar
    75g almond flour
    68g powdered sugar
    ▪️Important tips:
    -to get the smooth and shine macaron shells, you should sift the almond flour at least 2 time (not included the time you combine it with powdered sugar), or more if you like.
    -throw away those big chunky almond flour.
    -swiss meringue method is the easiest way to make a perfect meringue for macarons.
    -because the egg white and sugar is warm so it takes just a couple minute to get stiff peak, be careful and don't over whip the meringue.
    -use the spatula to fold the dry ingredients into the meringue until the batter falls into ribbons.
    -to dry the macarons in the oven:
    .after piping all the macarons, preheat the oven to 120 C (248F)
    .when the oven is ready (248 F) turn if off and quickly put the macarons in.
    .then turn the oven to 248 F again, set the timer for 2-3 min(it's about the time for the oven to reach to 248 F again), remember the the oven door is slightly opened.
    .after 2-3 min, close the oven door and set the temperature to 284 F bake for 13min (or 15min if your macarons size is bigger then mine)
    .after 13min, take them out and allow them to cool down completely in order to remove from the baking mat easily. (if you remove macarons from the mat when they are still warm, the bottom of macarons will be stick to the mat)
    -the baking mat is really important to make macarons, I highly recommend using baking mat or teflon sheet to bake your macarons evenly. This is the baking mat that I use: amzn.to/31tLYR6
