how to bake the PERFECT French macaron

  • ✧ hi everyone! ✧ enjoy my tutorial on how to bake the perfect French macaron! this pastry is super close to my heart as I’ve been perfecting my craft since 7th grade (I’m now in my third year of college!). over the years, I gradually accumulated wisdom on the crucial steps needed to achieve the perfect French macaron.     ingredients:
    92 g Almond flour
    84 g Powdered sugar
    70 g Egg whites
    70 g Sugar
    directions:
    1. take 3 eggs out and leave for 2-3 hours to become room temperature. while waiting for eggs to become room temperature, set up your equipment: get out a kitchen scale, small bowl, medium-small bowl, medium-large bowl, hand mixer or stand mixer, whisk, spatula, medium-large piping bag with round tip in place, and two pans lined with parchment paper.
    2. measure almond flour and powdered sugar into medium-small bowl. whisk together until a fine sand texture is achieved.
    3. measure cane sugar into small bowl, put aside.
    4. measure room temperature egg whites into medium-large bowl. using a hand mixer or stand mixer, begin beating egg whites on low. when the egg whites reach a foamy texture, gradually pour cane sugar in three batches. increase speed to medium and continue to beat egg whites. when peaks are glossy-white but still loose, add gel food coloring of choice. increase speed to high and beat egg whites until delicate stiff peaks form. do not over beat.
    5. using a spatula, fold almond flour/powdered sugar mixture into meringue in three batches. perform figure-8 test to check batter consistency - should flow slowly like lava and glossy batter should gradually melt into itself.
    6. fill piping bag with batter. pipe 1-inch rounds onto baking ban. tap the pan on a clothed surface to release air bubbles.
    7. let shells dry for 30-45 minutes. it helps to turn on the AC or a fan to help shells form a matte casing.
    8. preheat oven to 300 F for 10 minutes. place the macarons in the middle shelf one pan at a time, immediately lower temperature to 285 F, and bake for 14-15 minutes.
    9. let shells cool on the pan before piping.

      In the recipe photos it looks bright pink/purple, but for me it’s a deep indigo when I make it. I follow the recipe directly, so I’m not sure how the author got such a bright pink! Happy baking!💜
