INGREDIENTS:
🔹Macaron Shells
▢3 large (100 g) egg whites - room temperature
▢1½ cups (140 g) almond flour
▢1 cup (120 g) powdered sugar - also known as icing/confectioners sugar
▢¼ tsp salt
▢½ cup (100 g) white granulated sugar
▢½ tsp vanilla extract/essence
▢few drops gel food colour - optional - do not use liquid colors
🔹Buttercream Filling
▢¾ cup (170 g) unsalted butter - room temperature
▢1½ cups (187 g) powdered sugar
▢1 tsp vanilla extract/essence
▢¼ cup (60 g) whipping/heavy cream - room temperature

I have even lost count of my unsuccessful attempts for making almond macaroons, but today using this recipe, I have finally managed to make them. I must say, I didn't have enough almond flour, so I risked added abit of cake flour to get the correct quantity, they have come out great. Thank you so much MK for this recipe. Love from Zambia.

Hehe thanks so much :D I must admit I do love baking :) for this recipe I would recommend sticking with the almond flour as I haven't tried another substitute and due to it's gluten free nature, it means you have a softer cookies. Using all purpose flour may result in a drier and tougher cookie, though there are some recipes out there that are specifically designed for using regular flour :)

Can we add cacao powder (or any chocolatey ingredients) instead of food coloring to have chocolate macarons? 😋
Heya! :D For chocolate macarons, you could substitute some of the almond flour with cocoa powder, but then you may need to adjust the sugar slightly to counteract the bitterness of the cocoa. Haven't got a recipe yet myself but hope to share one in the future :D

Heya! Have never tried eggless macarons myself but I have used aquafaba for Swiss meringue and it's worked amazingly! Maybe I'll experiment with aquafaba for macarons one day :D

Hi there! :) You could use a sandwich bag and cut off the end. It's a bit harder to handle especially without a piping tip so you may not get super round macarons, but they'll still turn out great :)

Just had to subscribe 🙂 What can you suggest... I followed your step by step to the T and after an hour and 15 mins they still didn't have shell on the top prior to baking noooo. I live in Scotland so humidity is not a problem. What I did do was put my oven at a very low temperature and kept the door open with them in just for a couple of minutes and this worked. Not that I want to do this on my next attempt. Is there any advice you could give xxx

Heya! Almond flour is essentially super fine blanched ground almonds :D so yes you can totally use that! Just make sure it's very fine and blanched is best for macarons :)

I was thinking that I won't be daring enough to try macarons but I just might. If you take requests, I'm wondering if you can make a coconut pie. I had it once and never could find it anywhere around where I stay. It's chewy crusty base and coconuty chewy filling. I tried making it but it just doesn't come out the same. I've been cocosad ever since

So if it overmixed there is no solution it can't be saved?
Unfortunately not! 😭 Well not to my knowledge anyway. Always best to mix slowly and keep checking to prevent overmixing :)

Hey, I could really use someone's input here. I really enjoy making macarons, but I have someone with a severe nut allergy so I can't use almond flour. Does it HAVE to be almond flour? What is special about almond flour that makes it key to successful macarons?
Mia Maples did a macaron recipe without almonds, and hers turned out cute! Just search up "Mia Maples Macaron."
I mixed the batter for 15 minutes but it didn't come to the right consistency nor did it get over mixed

Thanks so much! I don't have an eggless recipe yet but my first thought would be to use aquafaba which has worked well for me for an eggless Swiss meringue :) just not sure of the exact quantities as I haven't tried it myself, but I would first try with the same weight of aquafaba as the egg whites and see if that works :)

Heya! :) The most likely problem for no feet is under or over whipped meringue, or not allowing enough time for the macarons to dry and develop a skin (and sometimes letting them dry tooooo long and compromising the stability of the meringue). Hope that helps :)

I follow the steps very carefully but it Didn't came out good😭. Before baking even the consistency was Perfect.. Even after 1 hour there was no skin on top it was sticking after baking it was all cracky 🥲... Can someone tell me what was wrong?
