Potato And Pea Salad | Barry's BBQ

    PREP: 10 minutes
    COOK: 15 minutes
    SERVES: 4
    INGREDIENTS:
    4 Désirée potatoes, peeled and cut into 2cm cubes
    60ml olive oil
    1 lemon, zest and juice
    150g fresh peas
    2 sticks celery, sliced
    1 tbsp chopped fresh parsley, finely chopped
    STEP 1: COOK THE POTATOES
    Parboil the potatoes for about 10 minutes in a large pan. Then add in the peas.
    STEP 2: MAKE THE DRESSING
    Combine the olive oil and the juice and zest from half of the lemon in a bowl. Season with salt and pepper.
    STEP 3: SERVE
    Mix together the potatoes, peas, celery and dressing in a large bowl and serve with a sprinkle of parsley.

      Barry have you ever cooked Hawaiian food? Yesterday I cooked my first Kalua Pork. It came out "SMOKIN" (no pun intended)!!! It's a lengthy process (about 6 to 7 hours), but worth it in the end. If you want, I can give you my recipe which was for the most part gleaned from two different websites. My wife, being a Pacific Islander, added her own touch as well.

    Barry, I cook on a weber grill all the time. They're awesome. I recommend you try roasting a pork leg joint on it. It's really easy, just takes a few hours. Set up the grill for indirect cooking and put a drip tray next to the coal bed. Put the grill on and place the pork joint over the drip tray and put the lid on. After about 45 minutes turn the meat for even cooking and baste (sp?) with a mixture of cloudy apple juice and a little white vinegar. Add some wood like hickory, mesquite or a fruit wood like apple or cherry for a light outer smoke and cook it (basting occasionally) until it reaches 70c internal and take it off for a gorgeous slice roast or cook it longer until it's falling off the bone for pulled pork. So easy and so tasty. Moistest pork you will ever have.

    Interesting to see you have presented it as a salad. In indian cuisine this is a very popular vegetarian dish called 'Aloo-matar' means potatoes n peas. Ofcourse we season it well with spices n herbs and add soft cheese at times.
    But i like this variation as well, its simple n easy :)

    Hi Barry. .this was the simplest thing ever..lol I liked it being on the healthier side, but would add probably few dollops of mayo. .like it little creamy not over! !
    Also if im not mistaken isn't that weber (bbq grill)??
