Big fan over here, Carla - these were exceptional! I did everything per the recipe, but I live in New Zealand where it’s currently spring - so for the veggies, I used romaine, peas, and asparagus (instead of the radicchio). Thanks so much for your amazing meal ideas ❤️
Carla, yet another perfect recipe made just for me! I can't to try it , as you did just now with radicchio=onions; your recipe reminded me of my favourite way of braising Belgian endive: simply cut away the dry, dirty root stock and slice each endive longitudinally into two pieces, then place each endive, face down in a substial amount of unsweetened butter & just enough cooking oil to prevent scorching, even caramelizing too much. cook for 20-25 minutes in a covered frying, on low to medium heat. Only need to salt/pepper & some fresh sweet herb like dill or tarragon. Splendid dish with all the sweet/bitter/umami qualities you describe for radicchio! .. =

I am a truck driver you see and I need a simple meal that I can make throw into the pot and would feed me. It has to be tasty and delicious because I usually don't eat leftovers. I can't stand over it and watch it because I'm driving most of the day hours of the day. But I'm tired of eating out of truck stops so can you please help me I have a small refrigerator in my truck.

“…for a throuple,” should replace “…in bed in a Winnebago,” as a tag. “The acidity of the mustard paired with the fattiness of the pork made for the perfect bite…for a throuple.” That fatty pork will get you into trouble every time.
Hmm obviously thin cut where you live and where I live are two different things. Those are normal pork chops. Giving them a smack is still going to end up with a better quality of filet than the outrageously skinny "thin chops" that turn into leather instantly. You might want to keep that in mind when you are creating recipes and scripts. Lots of us poor people are sold thin chops that are literally sliced to half an inch including bone, and seize up immediately. No offense Carla, but let's keep the low income folks in mind because we're watching you to make things that taste good because we efin deserve it even though we're poor. Because what I see here is two chops that will cost at least $12 for the package.
