      Why would anyone not cook a full box of pasta? It can serve multiple meals. You can even change up this recipe the next day with spinach, grape tomatoes, your favourite cooked sausage links, and even cooked chicken. Truly a perfect, low cost, fall-winter dish.

      I just asked my mom about the pasta serving. I have 2 brothers so when we were all teenagers, she would use 1.5 boxes for 5 people 🍝

    This is my son's favorite pasta. I made it for him once and now he will request "the good spaghetti" at least once a week and is disappointed when I make pasta with any other sauce. Truly a boy after my own heart.

    YESS!! I have never heard a cooking content creator address the positive impact of eating small fish before! It is so so true though. I have a B.S. in Natural Resources and it is vital to our oceans and fisheries (and also our health) to focus more on eating small fish. They are more a more eco friendly resource and they are much more abundant! Absolutely love you, Carla ❤

    I am from Modena, and I’m always skeptical about American/italian pasta dishes because they are never as an Italian would cook pasta ..except for Carla’s recipes which are always on point and inspiring. I usually add to aglio e olio also fresh peperoncino 😊

    I love using Filipino garlic for this! You basically pickle garlic cloves in rice vinegar for a good two weeks. It gives the garlic a nice acidic bite to it, and bonus: the garlic turns blue if you pickle it long enough and looks beautiful!!

    Yum. I make this a lot (ever since watching the movie ‘Chef’) pretty much exactly the same but I also add some lemon juice when I add the parsley. It is definitely my go-to “alone pasta” when hubby is working late. So easy and so tasty and ALL FOR ME!!!

    I've found if I can't sleep, I'll get some leftover spaghetti and mix garlic with it in a frying pan. A little salt, a lot of butter, some olive oil. Yum. I eat it and then sleep like a baby. Making sure I brush my teeth after eating it. Cause you know...morning breath.

    I like to add a handful of oil cured black olives at the beginning when I add the garlic to the olive oil. Make sure to pit them first.

    So happy you added anchovies. For those who have never tried them or are afraid... when cooked, they have a peppery flavour to them, nothing fishy. ps: if you make your own Caesar dressing and you are not adding anchovies (or paste) you are not making Caesar dressing.

    My made this often when i was growing up especially on weekdays since we usually had red sauce pasta on Sundays after church with the sauce she had cooking on Saturday. She only put oil garlic and tons of black pepper tho She usually used linguine for it. Was one of my favorite dishes fast, simple and delicious

    Carla! I have been a fan of yours for many years. I cook SO many dishes that are yours, or that you taught us. I love you zest for life, family, cooking and enjoy the fruits of your labor. (I.E.     Wow. The dish seems easy to prepare and I know it will be delicious. An Italian friend of mine taught me now to make a version of this meal, which he claimed people in Italy prepare and love. We prepared it in a small office next to the University library, so that we didn't have to drive home to make dinner. Your version of this scrumptious dish is a meal I have to prepare for the family. Thanks for the cooking tips.

    Growing up I would make a version of this often and my fam would call it garlic pasta. I would use dried chives and mince the garlic. When I was feeling really naughty I'd do half stick of butter instead of olive oil hubba hubba oh and Stella fontinella...that black wheel iykyk

    Parsley is incredible and such an underutilized herb. Fresh, snappy and fun component with anchovies. I am not sure whether I enjoy the recipe evolution or the lovely Marge🤔 Both! Definitely both.

    My mother told me that when we moved into our new house, my grandfather would come over to help, she would make his favorite Agli Oil pasta, I never understood why, since she never made it for us? However now I do know why he loved it. I have prepared cacio peppe, and carbonara for my family, now it’s this dish I’ll introduce them to. Caio Carla

    My sister put our kind of ghost pepper in there 🤣 we love spicy food so i think chili flakes wont do much, it's literally fresh evil-looking chili and she added quite a lot of it! And how funny is it that i just know you're not supposed to add cheese to this but when i first tasted this dish my first reaction was 'did someone put cheese in it?' for how savory it gets. Like howwwwwwww. This dish is magic really.

    one thing to add, if you don't have or can't get anchovies, just get some fish sauce -- normally in the asian area with soy sauce, etc. it is literally liquified anchovies and will add that umami flavor.

    You have to bear in mind that a portion of pasta in Italy is based on how much is generally served as a primo. It's usually a much smaller portion and not reflective of a dish of pasta as a main course.
