- Hey! This Salt and Pepper Beef Jerky recipe is the easiest beef jerky recipe ever!
It's FULL of flavour, is made with simple kitchen ingredients and is so much cheaper than buying it ready made.
**As it contains no nitrites or other chemicals, you'll need to store it in the fridge where it should last up to a week. If you need to keep it longer than that, simply pop in the freezer. Grab a handful when you're off on a hike or in need of a quick protein shot and it'll defrost quickly (although I quite like it straight from the freezer too!)

THE RECIPE
INGREDIENTS:
600g topside or silverside lean beef
2 teaspoons fine salt
1 tablespoon freshly ground black pepper
INSTRUCTIONS:
Pop the piece of beef in the freezer for an hour to firm up which will make it easier to slice.
Sharpen your knife, then slice the meat as thin as you can possibly get it. There will always be bits that are thicker than others so don't fret about it too much.
I always cut against the grain of the muscle fibres as it makes for a less chewy jerky but try it both ways to discover your favourite method.
Either:
Place the slices of beef into a large ziploc bag and sprinkle over the salt and pepper. Seal the bag then massage the meat through the plastic with the aim of getting the seasoning to
touch every single piece of beef.
Or:
Lay out on your dehydrator or oven shelves ensuring that the pieces don't touch or overlap. Sprinkle with the salt and pepper using a small sieve, aiming to get the coverage nice and even.
Dry until the meat is dry but still flexible. Leave to cool then pop in a sealed tub.
You'll probably find that different pieces in different areas of the dehydrator or oven will dry at different rates, just take the 'done' bits out to cool while the rest finishes off.

I'm curious, have you experimented with different seasonings? And what is the average length of storage for this? I am a truck driver in the US and am out an average of 3 weeks at a time. I am looking for a recipe with no soy or other flavorings. I just want a healthy beneficial jerky.

You have much more patience than I have. I freeze until it hardens but is not completely solid. Then I run it through the meat slicer. If anyone gets one make sure it holds thickness adjustment. Mine slides and the pieces get thicker so I have to keep an eye on it. But, thank you for the recipe. I will try it. I will also ask for this cut. Looks delicious.

I'd like to see something that lasts more long term but I suppose this can be kept in the freezer and or vacuumed packed to keep the jerky longer.
I do have similar dryers here but haven't really used them seriously.
To be fair, jerky never lasts long with me around 🤔 That said I am intrigued to find a more shelf stable version.

Pink cure . Just research how much to put in or the cure, no pun intended will be worse than the disease. You have to do your homework with this kind of shit or you will get sick. It ain't hard to do but that being said, you do have to be careful. Ground meat jerky even more so. Little nasty pathogens have a lot more places to latch on to ground meat. Muscle meat jerky all the way for me!
Hi Jane, I make bacon without nitrates just 50/50 salt and demerara sugar and a bit of smoked paprika. Keeps for months in the fridge. Maybe cure the meat then dry it after?

You can buy Turkey Jerky, so it must be possible. I've never tried dehydrating poultry for concerns about food poisoning.
